6 bone-in chicken breasts (if large, I cut them in half) or 1 whole chicken, cut into 8 pieces
3/4 cup honey
1/4 cup soy sauce
1/4 cup olive oil
1 tablespoon garlic powder
1 teaspoon black pepper

Steps:

  • In a small bowl, mix together honey, soy sauce, olive oil, garlic powder and pepper. Stir. Refrigerate for one hour or the day before for easy preparation for busy parents!
  • Preheat oven to 375 degrees F. Lightly grease a 9 x 13-inch pan with non-stick cooking spray or cover with foil.
  • Rinse chicken, pat dry and place in prepared pan.
  • Pour marinade over chicken.
  • Bake, uncovered, at 375 degrees for 1 hour until slightly browned.
  • Pour extra liquids from pan in gravy bowl to serve along side.

3 tablespoons canola oil
3 tablespoons honey mustard
4 teaspoons honey
2 large cloves garlic, minced
1 tablespoon paprika
2 teaspoons chopped fresh chives
1 ½ teaspoons dried basil
2 teaspoons adobo seasoning
1 teaspoon onion powder
½ teaspoon meat tenderizer
2 chicken leg quarters with skin

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine oil, honey mustard, and honey in a bowl until well combined. Stir in garlic, paprika, chives, basil, adobo seasoning, onion powder, and meat tenderizer. Stir until fully blended.
  • Coat the bottom of a glass baking dish with 2 to 3 tablespoons of mustard sauce mixture. Place chicken legs on top and cover with the rest of the sauce mixture. Cover dish with aluminum foil.
  • Bake in the preheated oven until chicken is no longer pink at the bone and the juices run clear, 60 to 75 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

8 chicken drumsticks (I use skinless)
1 packet French onion soup mix (dry)
4 tablespoons honey
4 potatoes, cut into large pieces
2 carrots, cut into 1 inch pieces
1/2-3/4 cup water

Steps:

  • In a casserole dish combine the soup mix and water.
  • Mix together well.
  • Add the chicken pieces and turn to coat in the sauce.
  • Arrange the vegetables in the dish and wet them all over with the sauce also.
  • Drizzle the honey all over the dish.
  • Bake, covered in a 160°C (320°F) oven for 1 1/2 hours.
  • After the first hour of cooking remove the lid, stir and cook for the final half hour without the lid on.
  • I like to serve this with steamed broccoli or peas.

1/4 cup olive oil
3 garlic cloves, minced
1 tablespoon minced fresh herb (rosemary, sage and lemon savory was what I used, go for your favorites)
1 tablespoon honey
1/2 lemon, juice and zest
10 chicken legs, 3-4 pounds washed and towel dried
1 1/2 cups italian style panko breadcrumbs, if using plain do season with salt pepper and dried Italian herbs

Steps:

  • Preheat oven to 350 degress.
  • Infused oil:.
  • in a pot simmer oil over with garlic and herbs for 5 minutes.
  • Add honey, lemon juice and zest to melt and blend in simmer 5 more minutes.Cool 5 minutes.
  • Chicken:.
  • Place panko crumbs in a bowl.
  • Lower the skin on legs.
  • Dip the legs into the cooled oil right into the pan putting some herbs and garlic under the skin. Bringing the skin up over the infused oil. Then roll to coat the skin.
  • Roll into the crumbs to coat.
  • Place Skin side down on a rack that has been lightly coated with a non stick spray placed on a large sheet pan.
  • Be sure to leave room so the heat can get to all sides.
  • Bake for 60 minutes.

4 chicken legs
1/3 cup soy sauce
2 tablespoons lemon juice
1/4 cup liquid honey
2 tablespoons hot water
1/2 teaspoon ground ginger
2 -3 garlic cloves, minced

Steps:

  • Preheat oven to 350F
  • Put chicken legs, skin side up, on a foil covered baking sheet. In a bowl, stir together remaining ingredients. Pour half of this sauce into another bowl and set aside to use as a dipping sauce.
  • Brush some of the remaining mixture onto each chicken leg. Bake for 40 minutes or until a thermometer inserted into the drumsticks reads 170F (77C). Brush the chicken legs with sauce every 10 minutes during baking.
  • Warm the saved sauce in the microwave for 30-40 seconds on high. Serve as a dipping sauce for the chicken. Serve chicken legs with a salad and rice or potatoes.
  • TIP: 8 bone-in chicken thighs can be used instead of 4 chicken legs.
