Steps:

  • Pop the egg yolk into a bowl and slowly whisk in the oil a little bit at a time, ensuring the oil is completely dispersed before adding more.
  • After a few minutes the mixture will get fairly thick; add a little bit of cider vinegar at a time and mix to thin the mixture as desired and prevent curdling.
  • - If your mixture starts curdling despite the vinegar simply fetch a new bowl, pop another egg yolk in it and gradually add your mixture to the new bowl -
  • Continue to steadily add oil and constantly mix.
  • Throw in the dill, mustard, honey and garlic salt and mix.
  • Enjoy!

1 cup cider vinegar
3/4 cup sugar
1/4 cup water
2 teaspoons salt
1-1/2 teaspoons dill weed
2 large eggs, lightly beaten

Steps:

  • In the top of a double boiler, combine mustard, vinegar, sugar, water, salt and dill. Cover and let stand at room temperature for 4 hours. Bring water in bottom of double boiler to a boil. Add eggs to mustard mixture. Cook and stir until thickened, about 10 minutes. Cool. Store in refrigerator.

whole dill sprigs (to garnish)
2 tablespoons lemon juice (to taste)
1/2 teaspoon finely grated lemon zest
