ENDIVE BITES WITH GORGONZOLA AND HONEY



Endive Bites with Gorgonzola and Honey image

2 tablespoons pine nuts
4 ounces gorgonzola cheese
1 tablespoon heavy cream
20 medium endive leaves
1 to 2 tablespoons local honey
2 tablespoons pomegranate seeds
20 small mint leaves

Steps:

  • Preheat the oven to 350 degrees F. Spread the pine nuts on a small baking sheet and toast in the oven until very lightly browned and fragrant, 6 to 10 minutes. (Check the nuts frequently because they can quickly go from perfectly toasted to burnt!) Remove from the oven and let cool completely.
  • Combine the gorgonzola and heavy cream in a small bowl and use a fork or small whisk to whip the mixture together until smooth. Smear a scant teaspoon of the gorgonzola mixture on the end of each endive leaf, then lightly drizzle with some of the honey. Sprinkle with the toasted pine nuts and pomegranate seeds and garnish with the mint leaves.

1 package (8 oz) cream cheese, softened
3 tablespoons half-and-half
1/4 teaspoon freshly ground pepper
1/2 cup chopped walnuts, toasted*
1 tablespoon chopped fresh parsley
French bread slices
Apple and pear slices

Steps:

  • Reserve 1 tablespoon of the Gorgonzola cheese for garnish. In food processor, place cream cheese, remaining Gorgonzola cheese, half-and-half and pepper. Cover and process just until blended.
  • Reserve 1 tablespoon of the walnuts for garnish. Stir remaining walnuts into cheese mixture. Spoon into shallow serving bowl. Sprinkle with reserved Gorgonzola cheese, walnuts and the parsley. Serve with bread slices and apple slices.

1 cup gorgonzola, crumbled
1 (8 ounce) package cream cheese, softened
3 tablespoons milk
1/4 teaspoon fresh ground black pepper
1/2 cup chopped walnuts, toasted
1 tablespoon fresh parsley, roughly chopped

Steps:

  • Reserve 1 tablespoon of the Gorgonzola and 1 tablespoon of the walnuts for garnish.
  • In food processor, place the rest of the ingredients except the parsley.
  • Cover and process just until blended.
  • *If you don't have a food processor, you can mix with an electric mixer on medium speed in a glass bowl.
  • Stir remaining walnuts into cheese mixture.
  • Spoon into shallow serving bowl.
  • Sprinkle with reserved Gorgonzola, walnuts, and the parsley.

This elegant appetizer is deceptively easy to make! Using prepared puff pastry dough saves a lot of time and energy for these tasty little bites, which will become a go-to recipe for parties.

nonstick cooking spray
1 sheet frozen puff pastry, thawed
1 (8 ounce) wheel Brie cheese
2 tablespoons honey
¼ cup chopped walnuts

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray cups of two 12-cup mini muffin pans with nonstick cooking spray.
  • Roll out puff pastry sheet on a large, lightly floured cutting board into a horizontal rectangle. Use a pizza slicer to cut the pastry into 4 rows horizontally and 6 rows vertically so that you have 24 (2 1/2-inch) squares. Press dough squares into each mini muffin cup and prick with the tines of a fork. Cut Brie cheese into 24 cubes. Add a cube of Brie to each pastry cup.
  • Drizzle honey over the cheese, being careful to keep the honey inside the dough cup. Top with chopped walnuts.
  • Bake in the preheated oven until the pastry is puffed up and the corners are golden brown, 14 to 16 minutes.
  • Cool in the pans on a wire rack for 3 minutes before transferring the bites to a serving dish.
