HONEY & GINGER GLAZED CHANTENAY CARROTS
Chantenay carrots are extremely versatile and while they're delicious lightly boiled and served with butter and seasoning, there's no need to stop there! They can be eaten just as they are and are particularly popular with children because of their sweet crunchiness and small size. They can be served halved or whole as crudités with other vegetables and a dip. They can also be boiled,steamed,roasted,grilled,stir fried,microwaved etc. I've chosen to roast them in the Halogen oven but this can be done in a conventional oven too. Whichever way you choose to cook them they are a great addition to a Sunday Roast, a picnic or even to replace potatoes in your usual dinner. I served mine on a bed of Spinach and topped with maple glazed Spare Ribs which was delicious and just shows how versatile the little gems are. Steps:
- Prep :- Wash and trim the carrots if you prefer-no need to peel. Grate the ginger and add to the honey. Melt the butter. Add it to a bowl along with the oil and S&P Chop the Parsley
- Par boil the carrots for 5 mns till just soft. Drain and lay them on an oven tray
- Brush the butter mixture over the carrots till they are coated. Drizzle over half the honey & Ginger and Bake for 10-15mns at 175° - toss or shake them halfway through.
- Remove from the oven. Place in a serving dish, drizzle over the remaining honey & ginger, add the chopped Parsley and toss together. Season if needed.
- Serve warm as a side dish with your Sunday Roast.
- Theyre a great replacement for potatoes in a midweek dinner with a Spinach salad and Spare ribs
- Easy swaps:- Honey for Maple syrup Ginger for chilli flakes Butter for Olive oil
- This can be done in a conventional oven for same time. You can omit the par boil and just bake for 20-25 mns till carrots are soft

- In large nonstick skillet over medium-high heat melt butter. Add shallots and ginger; cook until just tender, 2 minutes.
- Stir in carrots; cook 3 minutes. Stir in honey, orange juice, salt and chile pepper. Increase heat to high; bring to boil.
- Reduce heat to medium-low; cover. Simmer, stirring once, 15 minutes.
- Uncover. Increase heat to medium; cook until carrots are glazed and tender, 5 minutes. Transfer to serving dish. Sprinkle with parsley.

HONEY & GINGER GLAZED CARROTS
A delicious glaze over boiled carrots. Makes a simple veggie a little special. The carrots can be steamed or microwaved until cooked. The glaze is prepared separately and poured over the cooked carrots to coat. You can either slice your carrots or use whole baby carrots, If you're not a ginger fan then you can use garlic in place of the ginger. If you have an Italian style dish the garlic can be a good substitute for the ginger called for in this recipe

- Peel and slice carrots. Boil approx 10 minutes until cooked (or cook to your preference). Strain and set aside. Keep the carrots warm.
- Meanwhile -- add the sesame seeds to a hot non-stick frypan. There is no need to add any oil. Toss sesame seeds until toasted. Remove from the heat and set aside.
- Melt the butter in the hot frypan. Add ginger and cook for one minute. Remove from heat.
- Add the honey, sesame seeds and a pinch of salt and pepper. Stir to soften.
- Pour the glaze over the cooked carrots.

- Wash and trim carrots.
- In a medium size saucepan, add carrots, salt and cover with water and bring to boil.
- Reduce heat, cover and cook until carrots are almost tender; about 10 minutes.
- To a large frying pan, add butter, honey and grated ginger and cook for 1 minute, stirring a few times.
- Add cooked carrots and stir well to coat.
- Cover and cook carrots on medium-high heat until carrots are glazed and glossy, about 3 to 4 minutes, stirring occasionally.
- In a small mixing bowl, mix together orange juice, lemon juice and tapioca starch.
- Add to frying pan along with salt and pepper.
- Continue to cook stirring constantly until sauce thickens slightly; about 3 minutes.
- Serve with your dinner.

Steps:
- Line a baking sheet with paper towels.
- In a 12- or 14-inch heavy skillet bring water to boiling, add carrots.
- Return to boiling; reduce heat.
- Cover and simmer about 10 to 12 minutes or until carrots are just tender and drain.
- (I prefer to use my Cuisinart Turbo Convection Steamer ).
- Carefully turn out onto prepared baking sheet.
- (When green tops are left on carrots during cooking, they become very fragile. As the carrots cook, some of the tops may come off.).
- Pat dry with additional paper towels.
- To glaze carrots, in the same heavy skillet combine margarine, honey, ginger, and salt.
- Stir constantly over medium heat until margarine is melted.
- Carefully add carrots.
- Toss gently for 2 to 3 minutes or until carrots are thoroughly coated with glaze and heated through completely.
- To serve, arrange carrots in a shallow bowl or on a platter; drizzle with remaining glaze from pan.

- Separate the garlic into individual cloves. Keep two aside for the glaze, then bash and peel the rest. Peel and slice 100g of the ginger and transfer to a pan along with the bashed garlic cloves, carrots and half the thyme sprigs, cover with cold water and place over a medium heat. Bring to a simmer, then cook for about 12 minutes until just tender.
- Drain the carrots, discarding the flavourings. Refresh the carrots in iced water, before draining again.
- Peel and finely grate the remaining ginger, crush the two reserved garlic cloves and strip the thyme leaves from the rest of the sprigs. Heat the oil and butter in a large frying pan, add the ginger, garlic, thyme, the drained carrots and stock. Cook for 6-8 minutes, stirring occasionally until most of the stock has evaporated and the carrots have heated through. Add the honey and cook over a high heat, stirring, until the carrots begin to caramelise at the edges. Season to taste and toss through the parsley before serving.
