GLAZED CHINESE LONG BEANS

1/2 pound Chinese long beans
2 tablespoons butter
2 tablespoons sliced scallion
1 tablespoon freshly minced ginger
1 tablespoon minced garlic
Pinch red pepper flakes
1/2 cup chicken stock
1 tablespoon honey
1 tablespoon sesame oil
Salt and freshly cracked black pepper
2 tablespoons sesame seeds, optional

Steps:

  • In a large pot of boiling water, blanch long beans for 2 minutes until slightly tender. Allow to cool.
  • In a large skillet over medium-high heat, add butter. Add scallions, ginger and garlic. Mix together. Add red pepper flakes and long beans. Allow to cook for a few minutes. Stir in chicken stock, honey and sesame oil. Season with salt and pepper, to taste, and add sesame seeds, if desired. Mix together.

These beans become creamy as they bake slowly in a sweet and sour broth flavored with honey and vinegar. You can make the dish with regular white beans, which will require soaking, or with large lima beans, which will not.

Number Of Ingredients 11

1 pound dried large lima beans or white beans, soaked if necessary for six hours or overnight in 2 quarts of water and drained (limas require no soaking)
1/4 cup extra virgin olive oil
1 large onion, preferably a sweet red onion, finely chopped
1 28-ounce can chopped tomatoes
1 bay leaf
3 tablespoons honey, such as clover or acacia
2 tablespoons tomato paste
1/4 cup red wine vinegar or sherry vinegar
Salt
freshly ground black pepper to taste
1/2 cup, loosely packed, chopped fresh dill

Steps:

  • Combine the drained beans and water to cover by 3 inches in a large, oven-proof casserole or Dutch oven, and bring to a boil. Reduce the heat, cover and simmer 30 minutes.
  • Meanwhile, preheat the oven to 375 degrees. Heat 2 tablespoons of the olive oil in a medium size, heavy skillet over medium heat, and add the onion. Cook, stirring often, until tender and lightly caramelized, 10 to 15 minutes. Remove from the heat.
  • After 30 minutes, drain the beans and return them to the pot. Add the remaining olive oil, the tomatoes and the liquid in the can, bay leaf, honey, and 2 cups water or enough to just cover the beans. Stir in the onion, and bring the mixture to a simmer. Cover and place in the oven. Bake one hour, stirring often and adding water if necessary. Add the tomato paste, vinegar, salt and pepper. Cover and simmer for 30 more minutes, until the beans are tender and the mixture is thick.
  • Stir in the dill, cover and let sit 15 minutes. Taste and adjust seasonings. Serve with thick slices of country bread.

1/2 pound chorizo sausage, diced
1 large Spanish onion, finely diced
1 large carrot, diced
4 cloves garlic, finely chopped
1 pound black beans, soaked, cooked until tender and drained well
1 cup dark rum
1/8 cup honey, or more to taste
1/8 cup molasses, or more to taste
3 tablespoons dark brown sugar
Salt and freshly ground pepper
3 to 5 cups homemade chicken stock or low-sodium canned chicken broth
1/4 cup chopped fresh cilantro leaves, optional

Steps:

  • Preheat oven to 325 degrees F.
  • Cook sausage in a medium saute pan until golden brown and fat has rendered. Remove the sausage with a slotted spoon to a plate lined with paper towels. Add the onion and carrot to the pan and cook until soft. Add the garlic and cook for 1 minute.
  • Place the beans in a large bowl, stir in the cooked onion mixture, rum, honey, molasses, sugar, and cooked chorizo. Season with salt and pepper, to taste. Transfer the mixture to a casserole or baking dish and pour 3 cups of the stock over. Bake the beans, covered, for 20 minutes. Check to see if the mixture is dry and add more stock, if needed. Continue baking an additional 20 minutes. Uncover and bake for 15 minutes, remove from the oven, and fold in the cilantro, if using. Let sit for 10 minutes before serving.

2 cups of shiitake mushrooms and cut in half (stems removed)
1 pound of frozen green beans feel free to use fresh if you have them as well
2 tbsp of olive oil (divided)
3 garlic cloves (minced on a microplane)
1 inch knob of ginger (minced on a microplane)
1 shallot (sliced finely or minced on a microplane)
1 Thai chili (thinly sliced)
2 scallions thinly sliced
1/2 cup soy sauce
juice of one lime
2 tablespoons honey
1 tablespoon toasted sesame oil
1/2 a cup water
white sesame seeds to garnish

Steps:

  • Over high heat, add in 1 tbsp of olive oil and all the mushrooms. Sauté for 5-7 minutes until golden.
  • Reduce heat to medium, add in remaining olive oil and shallots, garlic, ginger and chillies. Place lid on top and allow to sweat for 5 minutes.
  • Add in green beans, soy sauce, lime juice, water and honey. Toss everything together and cover with a lid. Allow to cook for 5 minutes.
  • Remove lid and allow any access water to evaporate.
  • Add in scallions and sesame oil.

1/2 lemon, juiced
2 tablespoons soy sauce
1 tablespoon finely chopped garlic, plus 3 thinly sliced cloves
1 lb green beans, trimmed
3 tablespoons olive oil
2 shallots, sliced thin
1 lemon, sliced into wedges for serving
kosher salt
ground black pepper

Steps:

  • In a bowl whisk to combine honey, lemon juice, soy sauce and 1 tablespoon finely chopped garlic. Set aside.
  • Bring a large pot of salted water to a boil and cook the green beans for 2 minutes, tenderizing them but keeping them crispy. Transfer beans to a bowl filled with ice water, then drain and pat dry.
  • Heat olive oil in a large sauté pan over medium high heat. Stir in the sliced shallots and cook until toasted and golden, about 2-3 minutes. Remove with a slotted spoon and drain on a towel-lined plate.
  • Next, fry the sliced garlic in the same pan until golden and crisp, about 2 minutes. Remove with a slotted spoon and drain on a towel-lined plate.
