PUMPKIN MAPLE PECAN GRANOLA
Steps:
- Preheat oven to 340 degrees F (171 C).
- Mix the oats, nuts, seeds, spices, sugar, and salt together in a large bowl.
- In a small saucepan over medium-low heat, warm the coconut oil, maple syrup, and pumpkin puree and whisk. Pour over the dry ingredients and quickly mix with a wooden spoon.
- Spread the mixture evenly onto two baking sheets (or bake in two batches // adjust if altering batch size) and bake for 23-33 minutes, stirring a bit near the halfway point. If you prefer chunkier granola, don't stir as it breaks up the clusters. Instead, just rotate the pans at the halfway point to ensure even cooking.
- Once the granola is golden brown (usually about 25 minutes), remove from oven and let cool completely. It will crisp up as it cools.
- Transfer to an airtight container. Should keep for a couple weeks. Enjoy with almond milk, dairy-free yogurt, or on top of oats!

PUMPKIN SEED GRANOLA
Pumpkin seed granola is crunchy, tasty, and loaded with good-for-you ingredients, including pumpkin seeds and oatmeal. Plus, this pumpkin seed granola takes the fall flavors to the next level by including pumpkin puree.

- Preheat the oven to 325 degrees F. Line a baking sheet with parchment paper and set aside.
- In a large bowl, mix pumpkin pepitas, oats, pumpkin puree, maple syrup, butter, cinnamon, nutmeg, ginger, and salt. Stir well to combine.
- Spread the granola mixture evenly on the prepared baking sheet.
- Bake in the oven, stirring every 10-15 minutes for a total of 30-45 minutes or until desired crispness has been achieved. Be careful not to burn the granola.
- Optional: Once the granola is done baking, toss in the dried cranberries and mix to combine

HONEY MAPLE GRANOLA WITH PUMPKIN SEEDS
Steps:
- Preheat oven to 265°F, and line two half-sheet pans with parchment.
- In a large mixing bowl, combine the olive oil, maple syrup, light brown sugar, agave, and honey. Add the oats, seeds (or nuts), and salt, and mix until thoroughly combined. The mixture should be moist and lightly sticky, with no liquid pooling in the bottom.
- Pour the oat mixture onto the sheet pans and spread in evenly.
- Bake for around two hours, stirring every 30 minutes or so, until it becomes a nice toasted brown color. Let cool on the sheet pans.
- Add the dried fruit. Stir well, and store at room temperature in an airtight container.
HONEY MAPLE GRANOLA
This is my favorite granola recipe adapted from the joy of baking website. It's not too sweet, and tastes great with a variety of nuts and dried fruit. Makes a great gift!

Steps:
- Preheat oven to 300 degrees.
- Line a baking sheet with parchment paper.
- Combine rolled oats, coconut, nuts, cinnamon, and salt.
- In a separate bowl stir together oil, maple syrup and honey.
- Pour liquid mixture over the dry ingredients and stir together.
- Spread onto the prepared baking sheet and bake for approx 20-25 minutes (stirring occasionally).
- The longer you bake it the crunchier the granola will be. It may still be sticky when it comes out of the oven, but it will become crisp and dry as it cools.
- Place baking sheet on a wire cooling rack.
- Once cooled, mix in the dried fruit and store in an airtight container or plastic bag in the refrigerator.
- It will keep for several weeks.
