HONEY WALNUT CREAM CHEESE
We came up with this recipe after trying Trader Joe's® honey walnut cream cheese; this was much better since we used the orange blossom honey my mom buys from local farmers' market. She suggest toasting the walnuts. To make a sweeter version, add a tablespoon of granulated sugar while pulsing in the processor. Spread a layer on a slice of your favorite bread and enjoy! Yum!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place walnuts on a baking sheet. Bake until toasted and fragrant, about 10 minutes. Transfer walnuts to a plate to cool. When walnuts are cool, transfer to a resealable plastic bag and crush with a rolling pin.
- Combine cream cheese, honey, and walnuts in a food processor and pulse until creamy.

- Preheat oven to 300 degrees F. Place the butter and honey in a glass baking dish. Heat in the oven until melted, about 2 minutes.
- Add the nuts and the smoked paprika. Toss to coat.
- Roast the nuts until golden, about 30 minutes, stirring every 10 minutes.
- Remove the nuts from the pan and spread them evenly on wax paper or parchment paper. Sprinkle with the salt. Allow to cool and crisp up, about 20 minutes. Store in an airtight container, at room temperature.

HOMEMADE HONEY PEANUT BUTTER
I decided to start making my own peanut butter when I read the ingredient list on a peanut butter jar label. While peanuts are good for you, the unhealthy additives and hydrogenated oils are not. This is all natural with no preservatives and has a much better flavor than store-bought peanut butter. Store in a sealed container in the refrigerator.

- NOTE: If you have unroasted nuts, preheat oven to 350°F (180°C). Spread peanuts onto a baking tray and bake for 10-12 minutes or until you can smell them.
- In a food processor, blend peanuts. Scrape down the sides when necessary.
- When the peanuts have broken down and become crumbly, add in honey and salt while still blending.
- The mixture will turn into a ball and eventually even out.
- Slowly add canola oil while still blending. Add more canola oil if you want a creamier texture.
- Pour into a jar, store in a refrigerator and use within one month.

- Pre-heat oven to 350⁰F. Toss macadamia nuts with 1/2 teaspoon coconut oil to coat, then spread evenly on parchment lined baking sheet. Roast until well coloured, about 10 - 12 minutes. Remove to cool on wire rack.
- Once cool enough to handle, add roasted macadamia nuts to food processor. Pulse 3 - 4 times to break up into smaller pieces then add half of your honey and pulse again 3 - 4 times to begin to breakdown further. Taste. Add salt if needed and the rest of your honey. Now blitz, full speed, as nut butter begins to smooth, about a minute. Check texture, add remaining coconut oil if needed.
