- Combine oats, peanut butter, ground flax seed, chocolate chips, honey, chia seeds, and vanilla extract together in a bowl. Cover and chill dough in the refrigerator 30 minutes.
- Remove dough from refrigerator; roll into balls, about 1 inch in diameter.

POWER BALLS
These are gluten-free. You can substitute peanut butter for the almond butter. As an alternative to rolling the dough into balls, you can spread the dough in bottom of a baking dish and cut into bars. I upped the honey from 1/3 to 1/2 cup so they are more cohesive.

- In a food processor, pulse the oats, peanut butter, honey, chocolate chips, cranberries, sunflower seeds and flax seeds until fully combined. Cover and refrigerate for 30 minutes. Line a baking sheet with waxed paper. Form balls from the mixture (about 1 1/2 tablespoons each) and place them on the baking sheet. Refrigerate for 30 minutes before serving.
OATMEAL ENERGY BALLS
I am a vegetarian and love to eat these before I go to the gym. I like to add extra whole peanuts sometimes. Substitute 1/4 cup dark chocolate chips for the raisins if desired. If you want to eat them on the go, wrap them in wax paper and tie with a bread tie. Enjoy!

- Place all of the ingredients in a large mixing bowl: oats, power mix-ins, nut butter, sweetener, vanilla extract, salt, mix-ins, and any other spices you'd like to add. Stir to combine. If the mixture seems too wet, add a bit more oats. If it's too dry, add a bit more nut butter. It should resemble a somewhat sticky dough that holds together when lightly squeezed. Place the bowl in the refrigerator for 30 minutes to set (this will make the balls easier to roll later on).
