- Preheat oven to 375° F. Layer a large baking sheet with parchment paper and then spray with cooking spray.
- Combine butter and honey in a large skillet and melt over medium heat.
- Remove from heat and toss in chopped sweet potatoes to coat with honey butter mixture. Sprinkle in salt and pepper; stir to combine.
- Place the chopped and coated sweet potatoes in a single layer on top of the parchment paper.
- Sprinkle with cinnamon and bake for 30 minutes at 375° F. Remove from oven and dust parsley over the top prior to serving.
- Melt the butter and honey in a large cast-iron skillet, add the chopped potatoes, season with salt and pepper, and then sprinkle with cinnamon.
- Place the cast-iron skillet on top of the grill grates and cook at 375° F for 30 minutes or until the potatoes are fork-tender. Dust with dried or fresh herbs prior to serving.
- Transfer the prepared melted honey-butter mixture plus sweet potatoes to the center of a large piece of foil. Season well with salt and pepper, sprinkle with cinnamon, and then roll the foil up to ensure the mixture doesn't leak out.
- Place the foil packets on top of the grill grates for 30 minutes at 375° F.
- If you like those pretty grill marks on your veggies, then chop each sweet potato into sliced rounds - keeping them at the same width.
- Brush with olive oil and use tongs to place directly on the grill grates. Cook at 375° F until you achieve the perfect markings and then transfer to your cast-iron skillet with the melted butter and honey. Stir to coat each potato.
- Season well, sprinkle with cinnamon, and complete the cooking process in the skillet on the grill until the potatoes are fork-tender.
CINNAMON ROASTED HOT HONEY SWEET POTATOES

- Preheat the oven to 400 degrees F. Line a rimmed baking sheet with foil.
- Pierce the sweet potatoes all over and heat in the microwave on high, turning them over halfway through, until cooked through, 8 to 12 minutes. (Some potatoes will cook faster than others. After cooking halfway, check the potatoes every 2 minutes; they should feel soft when you squeeze them.) Cut into large chunks and place on the prepared baking sheet.
- Stir together the butter, honey, chile powder, cinnamon and 1/4 teaspoon salt in a small bowl. Pour the mixture over the potatoes and toss to coat. SWEET POTATOES WITH TSIMMES GLAZE
Traditional tsimmes is a stew of sorts that includes sweet potatoes, carrots, one or two kinds of dried fruits, and spices. It's usually served as a side dish at Rosh Hashanah, the Jewish New Year, but it also makes frequent appearances on the Passover Seder table. The word "tsimmes" sometimes means a fuss or commotion, or even a muddle. This version is anything but fussy and definitely not muddled. Here, halved sweet potatoes are simply roasted and served with a scrumptious glaze that includes prunes, orange juice, fresh ginger and a hit of lemon.

- Position a rack on the lower third of the oven and heat oven to 400 degrees. Line a sheet pan with foil.
- Rub the sweet potatoes with the oil and season with salt and pepper. Arrange on the pan cut sides down and roast on the low rack until nicely browned on the cut sides and a paring knife inserted meets no resistance, 30 to 40 minutes. If they are getting too dark on the cut sides but are not yet done, turn them over.
- Meanwhile, combine the orange juice, half of the orange zest, lemon juice, honey, cinnamon, ginger, prunes and a big pinch of salt in a small saucepan. Bring to a boil, then turn down the heat to maintain a steady, low simmer. Cook, stirring and smashing a few prunes against the pan occasionally, until thick and syrupy about 15 minutes. - Heat oven to 375 degrees (see Tip). Use a vegetable peeler to peel strips of zest off 2 oranges. Cut the strips into thin matchsticks using a sharp knife and transfer to a large bowl. Juice all the oranges, the lemon and limes into the bowl for 1 1/4 cups juice. Whisk in the brown sugar, salt, ginger, cinnamon, nutmeg and black pepper until the sugar dissolves.
- Generously peel the sweet potatoes, removing the skin and the tougher layer of flesh just beneath. If your sweet potatoes are larger than 2 inches in diameter, halve or quarter lengthwise. Cut into 1-inch-thick rounds or pieces, add to the citrus mixture and toss to coat.

Bake, stirring every 20 to 30 minutes to cook and coat evenly, until the sweet potatoes are tender and glazed, 1 1/2 to 2 hours. - Let cool for about 10 minutes before serving. The dish can be made ahead and cooled, then wrapped tightly and refrigerated for up to 2 days. Reheat in a 350-degree oven, covered with foil, or in a microwave, covered with a microwave-safe cover or plastic wrap.

Simple yet so delicious, this one of my family's favorite sweet potato dishes and I have made this many times for the holidays and always receive rave reviews! --- If you double the recipe bake in a large roasting pan or use two 13x9 baking dishes, when I am making these for company, I use a large foil pan and just throw the pan away after, saves cleaning :)

- Pat all the potato cubes thoroughly dry using paper towel/s.
