10 ounces tomato paste
1 (10 ounce) package frozen black-eyed peas
15 drops hot sauce (such as Tabasco®)
1 pinch smoked salt, or to taste
1 pinch dill weed, or to taste
1 pinch mustard powder, or to taste
1 pinch garlic powder, or to taste
1 pinch dried savory, or to taste

Steps:

  • Combine onion and green bell pepper in a skillet; add enough canola oil to coat onion and bell pepper. Cover skillet and cook onion and bell pepper over medium heat until tender, about 15 minutes.
  • Mix rice, kidney beans, tomato paste, black-eyed peas, hot sauce, smoked salt, dill weed, mustard powder, garlic powder, and savory into onion and bell pepper; cook and stir until heated through, about 10 minutes more.

1 cup uncooked rice
1/2 cup water
1 (11 1/2 ounce) can tomato juice
1 (12 ounce) can stewed tomatoes
1/2 cup chopped onion
1 teaspoon salt
1/2 teaspoon celery salt
1 teaspoon cajun spices (more or less to taste) or 1 teaspoon dry rub seasonings (more or less to taste)
2 teaspoons Worcestershire sauce
1/4 teaspoon Tabasco sauce (more or less to taste)
2 tablespoons bacon drippings or 2 tablespoons butter, cut into pieces
1 (15 ounce) can black-eyed peas, undrained
parsley

Steps:

  • Fry bacon, drain on paper toweling; crumble and set aside.
  • Reserve 2 tablespoons grease.
  • In a medium sized mixing bowl, combine rice, water, tomato juice, tomatoes, onion, seasonings (liquid and dry) and bacon drippings.
  • Pour into a 2 quart buttered casserole; cover tightly.
  • Bake at 350* for 1 hour.
  • Uncover, stir and toss lightly with black-eyed peas.
  • Top with crumbled bacon pieces.
  • Cover and bake for about 30 more minutes.
  • Garnish with parsley, if desired.

This recipe was submitted to the Harvard College Dining Services and was selected as a vegetarian option for the student dining halls.

2 ½ cups vegetable broth
1 cup long grain rice
2 tablespoons olive oil
1 onion, chopped
2 (15 ounce) cans black-eyed peas, rinsed and drained
½ teaspoon Cajun seasoning

Steps:

  • Bring broth and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and liquid has been absorbed, 20 to 25 minutes.
  • Heat olive oil in a pot over medium-high heat. Saute onion in hot oil until translucent, 5 to 7 minutes. Stir rice, black-eyed peas, and Cajun seasoning into onion, cover the pot with a lid, and cook until flavors blend, about 10 minutes.

1/2 pound sliced bacon, cut into 1-inch pieces
1 small green or sweet red pepper, chopped
2 celery ribs, chopped
6 green onions, sliced
1 cup uncooked long-grain rice
2 cups water
1/4 teaspoon salt
1/2 to 1 teaspoon cayenne pepper
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon dried oregano
1 bay leaf
1 can (15 ounces) black-eyed peas, rinsed and drained

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Drain on paper towels; discard all but 2 tablespoons drippings. Saute pepper, celery and onions in drippings until almost tender. Add rice, water and seasonings. Cover and simmer 10 minutes. Add peas and bacon; simmer 10 minutes longer. Discard bay leaf.

1/2 cup celery, sliced
2 teaspoons garlic, minced
1 teaspoon cajun seasoning
12 ounces smoked turkey sausage, chopped
2 cups chicken broth
2 (15 ounce) cans black-eyed peas, rinsed and drained
1 (14 1/2 ounce) can diced tomatoes, undrained
1 teaspoon hot pepper sauce (to taste)
1/2 cup tomato sauce

Steps:

  • While rice is cooking, sautee onion and garlic with cajun seasoning in olive oil.
  • Add sausage and brown.
  • Add remaining ingredients and bring to boil. Reduce to simmer.
