ORANGE-CLOVED HOT CIDER WITH BRANDY
Steps:
- Heat the cider in a large saucepan or Dutch oven over low heat. Insert the cloves in the orange, spaced a little apart. Add the orange to the cider, along with the ginger and cinnamon. Bring to a boil, then remove from the heat and add the brandy.

This is a traditional sauce to be served with Plum Pudding. Yummy served later on hot raisin toast.

- In a container that will hold 2 cups final hot liquid and pour easily, add together the brown sugar, butter, and spices.
- Stir in the warm water.
- Cook for about 2 minutes full power in the microwave, or until steaming hot.
- Stir in the Orange Brandy.
- Serve in cocktail glasses garnished with an orange slice.

- Melt butter in heavy large skillet over medium-high heat. Season chicken with rosemary, salt and pepper. Add chicken to skillet and sauté until brown, about 3 minutes per side. Add orange juice concentrate, chicken broth and brandy and simmer until chicken is just cooked through, 5 minutes. Transfer chicken to plate; tent with foil to keep warm. Boil pan juices until thickened to sauce consistency, stirring occasionally, about 5 minutes. Spoon sauce over chicken. Garnish with orange slices, if desired, and serve.

Steps:
- Peel oranges leaving no white pith.
- Slice crosswise into thin slices, or cut into segments and place in a serving bowl.
- Stir sugar and water together over a low heat until disolved and then boil for 2mins.
- Cool, add Brandy and Grand Marnier or Contreau.
- Pour over prepared oranges.
- Serve at room temperature with whipped cream and/or ice cream.
- Can be made ahead, (I have done this 2 - 4 days ahead) and stored in fridge. Bring to room temp to serve or if preferred serve chilled.
