Steps:
- Place apples in a large stockpot and add enough water cover by at least 2 inches. Stir in sugar, cinnamon, and allspice. Bring to a boil. Boil, uncovered, for 1 hour. Cover pot, reduce heat, and simmer for 2 hours.
- Strain apple mixture though a fine mesh sieve. Discard solids. Drain cider again though a cheesecloth lined sieve. Refrigerate until cold.

HOT SPICED APPLE CIDER
Steps:
- Place the apple cider, peppercorns, one of the cinnamon sticks, the cloves, and the star anise in a medium saucepan. Cut a large (1 by 4-inch) peel from the orange using a vegetable peeler and add it to the pan. Bring the cider mixture to a boil, lower the heat, and simmer for 5 minutes. Strain into a 4-cup glass measuring cup and discard the solids.
- Pour the hot cider into mugs or heatproof glasses. Add 2 tablespoons of bourbon to each mug. Cut the orange in half through the stem, slice crosswise in 1/4-inch-thick half-rounds, and add one slice to each mug. Cut the apple in half through the stem, remove the core, slice crosswise in 1/4-inch-thick half-rounds, and add one slice to each glass.
- Serve hot with a cinnamon stick in each glass for stirring.
HOT APPLE CIDER
Nothing beats a mug of hot cider on a cold winter day. This recipe is great as it calls for fresh apple cider and pure maple syrup. Start with only 6 strips each of the orange and lemon peel, and adjust to taste.

- Pour the apple cider and maple syrup into a large stainless steel saucepan.
- Place the cinnamon sticks, cloves, allspice berries, orange peel and lemon peel in the center of a washed square of cheesecloth; fold up the sides of the cheesecloth to enclose the bundle, then tie it up with a length of kitchen string. Drop the spice bundle into the cider mixture.
- Place the saucepan over moderate heat for 5 to 10 minutes, or until the cider is very hot but not boiling.
- Remove the cider from the heat. Discard the spice bundle. Ladle the cider into big cups or mugs, adding a fresh cinnamon stick to each serving if desired.

- Stud the apple with the cloves. In a medium pot, combine the studded apple and remaining ingredients except the rum. Slowly bring to a simmer over low heat. Simmer for 10 minutes. Remove from the heat and add the rum. Discard the apple. Ladle into mugs and garnish each with a cinnamon stick. Serve immediately.

- Perk 10 minutes.

HOMEMADE HOT APPLE CIDER
I had a bunch of apples and decided I wanted apple cider. So I started to play around with apples and spices. I made sure to write down every step in case it came out ok. Well it came out great. It's a little on the strong side but my family LOVES it. We will be making this again. I used Honey Crisp Apples but I'm sure other types would be great also. You could also use 3 cinnamon sticks instead of ground cinnamon and 1/4 tsp ground cloves instead of whole cloves.

Steps:
- 1. Juice apples in juicer until you have liquid for 10 cups.
- 2. Pour juice into large pot.
- 3. Add allspice, nutmeg, cinnamon, cloves, sugar, brown sugar, & water to pot of juice.
- 4. Put about 1 TBSP of cloves in a tea steeper and hang it on the side of the pot so the cloves are in the juice. (You could also use a cheese cloth bag or just throw them in, they come out when you strain the juice). You could also use ground cloves but only use about 1/4 teaspoon.
- 5. Cook on med heat just until boil then reduce heat to simmer.
- 6. Cook on simmer for about an hour or as long as you want.
- 7. Strain cider through small mesh strainer or through cheese cloth. (I used an extremely thin dish towel) Make sure to squeeze any extra juice that might be left in the cheese cloth.
- 8. Your cider is ready to serve.
- This cider is also really good cold.

- Place fruit and spices into a slow cooker.
- Add 8 cups of water.
- Cook on high heat for 3-4 hours.
- Uncover the slow cooker, and mash the softened fruit with a potato masher.
- Cover again and cook on low for 1-2 hours.
- Strain out fruit and spices from the slow cooker into a cheesecloth in a bowl.
- Wait about 20-30 minutes for the cheesecloth to cool. Squeeze out cider from cheesecloth into the bowl. Pour the cider back into the slow cooker.
- Serve warm.
- Enjoy!
