Homemade Caramel Popcorn and Peanuts image

Popcorn! Peanuts! We brought a baseball stadium favorite home with a recipe that you can dig into in just 30 minutes.

Number Of Ingredients 8

7 cups plain popped popcorn
1 cup salted peanuts
3/4 cup packed light brown sugar
6 tablespoons butter
3 tablespoons light corn syrup
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla

Steps:

  • Heat oven to 200°F. Line cookie sheet with cooking parchment paper.
  • Place popcorn and peanuts in very large bowl; set aside.
  • In 2-quart saucepan, heat brown sugar, butter and corn syrup to boiling Boil 5 minutes without stirring. Remove from heat. Stir in baking soda, salt and vanilla.
  • Pour caramel mixture over popcorn mixture; toss until well coated. Spread popcorn mixture evenly on cookie sheet.
  • Bake 10 minutes. Cool completely before serving.

1 egg white
1/4 cup sugar
1 tablespoon water
1 tablespoon kosher salt
2 teaspoons cumin
1 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/2 teaspoon ancho chili powder
2 cups high-quality dry roasted unsalted peanuts
5 dried chiles, optional garnish

Steps:

  • Preheat oven to 250 degrees F.
  • Whisk egg white until foamy in a medium bowl. Whisk in sugar, water, salt, cumin, cayenne, garlic and ancho powders. Toss nuts in mixture until well coated.
  • Spray a sheet pan with nonstick cooking spray or line with parchment. Spread nuts out on the prepared pan in a single layer. Cook for 45 minutes until slightly golden, turning nuts with a spatula every 15 minutes so they toast evenly and don't stick.
  • Set the nuts aside, stirring periodically as they cool. When completely cool, transfer to serving bowl and garnish with dried red chiles if desired.

4 cups air-popped popcorn
1/4 cup roasted peanuts
1 tablespoon confectioners' sugar
1/4 teaspoon sea salt, plus more as needed
1/4 teaspoon vanilla extract
1 tablespoon melted butter

Steps:

  • Place the popcorn in a large bowl. Sprinkle the peanuts, sugar and salt over the popcorn and toss well.
  • Stir together the vanilla extract and melted butter and drizzle over the popcorn. Toss again to coat. Season to taste with additional salt, if needed.

2 tablespoons canola oil
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/3 cup popcorn kernels

Steps:

  • Combine the sugar, 1 tablespoon of the oil, the salt and pepper in a small bowl; set aside.
  • Combine the remaining 1 tablespoon oil and the popcorn kernels in a large pot set over medium-high heat. Cover and shake the pan occasionally until the popping stops, 4 to 5 minutes. Transfer the popcorn to a bowl.
  • Add the sugar mixture to the hot pot, reduce the heat to medium and cook, stirring, until the mixture become nearly liquid, about 1 minute. Remove the pot from the heat, stir the popcorn back in, and toss until the popcorn is evenly coated, about 2 minutes, then serve.
