1 clove garlic, chopped
2 tablespoons olive oil
4 (6 ounce) salmon fillets
½ cup butter
2 tablespoons Worcestershire sauce
2 tablespoons lemon juice
¼ cup white wine
1 teaspoon ground black pepper
1 teaspoon garlic salt
1 ½ teaspoons fines herbs
¼ cup chopped fresh dill

Steps:

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Line a jelly roll pan with aluminum foil, and spray with nonstick spray.
  • Place garlic and olive oil in a small microwave safe bowl and cook on High for 1 1/2 minutes. Melt the butter in a saucepan over low heat, and stir in the garlic mixture. Remove from heat; stir in the Worcestershire sauce, lemon juice, white wine, black pepper, garlic salt, and fines herbs.
  • Place the salmon fillets skin-side down on the prepared pan. Spoon about 1/3 of the butter sauce over the fillets, and sprinkle evenly with the fresh dill.
  • Broil in the preheated oven for 3 minutes. Turn salmon fillets so that the side of the fillet faces up, and baste fillets with about 1/3 of the butter sauce; broil for 3 minutes. Turn the fillets to place the opposite side facing up; spoon on the remaining butter sauce; broil until the fish flakes easily with a fork, about 3 additional minutes.

vegetable oil (, for brushing)

3 tbsp gochujang
2 tbsp mirin ((sweet cooking rice wine))
2 tbsp soy sauce
2 tbsp sugar
1/2 tbsp toasted sesame oil
2 cloves garlic (, minced or grated)
1 tsp grated fresh ginger
1 tsp black pepper
sesame seeds
scallions
white rice

Steps:

  • Preheat the broiler. Position a rack 4-5 inches (10-13cm) from the broiler.
  • Line a baking sheet with foil and grease with oil or cooking spray.
  • Put the salmon fillets on the baking sheet. Lightly brush with oil and season with salt and pepper. Broil for 2 minutes.
  • Combine all the ingredients for the gochujang glaze in a small bowl.
  • Brush the salmon fillets with the glaze. Broil for 5-8 minutes more, until the desired doneness.
  • Sprinkle with sesame seeds, scallions, and serve with white rice.

The decadent-tasting "good" fat in salmon complements the sweet-spicy Buffalo glaze. The skin gets caramelized and crisp on the grill as the sauce drips onto it. A crisp and refreshing celery slaw is dressed with the same sauce, made creamy with light mayo, and brightened with onions and chives.

2 tablespoons hot sauce, such as Frank's
1 tablespoon packed dark brown sugar
1 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
2 tablespoons light mayonnaise
1 tablespoon snipped chives
8 stalks celery, very thinly sliced in half moons on an angle
1/2 small red onion, very thinly sliced
Four 5-ounce center-cut skin-on salmon fillets, about 1-inch thick
Kosher salt and freshly ground black pepper
Vegetable oil, for oiling the grill

Steps:

  • Preheat an outdoor grill or grill pan on medium high.
  • Mix together the hot sauce, brown sugar, paprika and cayenne in a small bowl. Transfer 1 tablespoon of the mixture to a large bowl and whisk in the mayonnaise; set aside the rest of the sauce. Add the chives, celery and onions to the bowl with the mayonnaise and toss well.
  • Sprinkle the salmon with salt and pepper. Brush the grill grate lightly with oil. Lay the salmon on the grill, skin-side up, and cook until distinct grill marks appear and the salmon releases easily from the grate, 2 to 3 minutes. Turn and brush the fish with some of the reserved sauce. Continue to cook the fish, brushing the pieces periodically with the sauce, until the salmon fillets are glazed and just cooked through, 13 to 15 minutes more.
  • Transfer the fillets to individual plates and serve with the celery slaw.

3/4 cup mayonnaise
1 cucumber, peeled, seeded and diced
1/4 cup red onion, diced

Steps:

  • In small bowl, mix mustard and lemon juice. Spread salmons with half of mixture, cover and put in fridge.
  • Meanwhile, combine remaining ingredients with reserved mustard mixture and blend well. Cover and set aside.
  • Preheat broiler. Coat broiler pan with non stick spray. Arrange salmon on pan. Broil about 5" from heat for 7 minutes.
  • Turn fillets and broil another 7 minutes or til fish flakes with fork. Serve with prepared sauce.

Broiled Salmon Fillet with Bacon, Wild Mushrooms and Oyster Sauce image

One 1 pound salmon fillet, about 1-inch thick
5 thin slices smoky bacon
1 cup diced fresh shiitake mushrooms, very firmly packed
1 teaspoon finely minced garlic
2 tablespoons minced parsley
2 tablespoons Chinese Oyster sauce
Pinch of freshly grated nutmeg

Steps:

  • Pre-heat broiler. Season the salmon fillet well with salt and pepper. Wrap 3 of the bacon slices, evenly spaced, around the salmon filet. Place fillet on roasting pan, and place under broiler. Cook until just done (about 10 minutes).
  • Meanwhile, prepare the sauce. Cut the remaining two slices of bacon into small squares. Place in a heavy saute pan over high heat. Cook until medium-brown, about 2 minutes. Spill out all but 1 teaspoon of the bacon fat. Lower heat to medium-high. Add the shiitake mushrooms, stir well, and saute until mushrooms become golden-brown, about 3 minutes. Turn heat down to medium, and stir in garlic and parsley. Cook for one minute. In a bowl, combine the oyster sauce with 1/4 cup of hot water. Blend, and add to saute pan. Cook one minute over medium heat. Season well with nutmeg.
  • To serve, remove the wrapped bacon from the salmon (you may discard the bacon, or use it as a garnish). Delicately slice the salmon along the natural separations, and divide among 4 plates. Top each with a quarter of the sauce, and with a flat parsley leaf for garnish.

1/4 teaspoon salt

Steps:

  • In a small heavy saucepan combine maple syrup, water, gingerroot, garlic, red pepper flakes, and salt and simmer until reduced to about 1/2 cup.
  • Cool basting sauce.
  • Preheat broiler.

2 tablespoons pine nuts, toasted
1 tablespoon honey
2 tablespoons fresh lemon juice
1/4 cup olive oil
1/2 cup packed fresh basil
2 cloves garlic, minced
1 small red chile or 1 medium jalapeno, chopped (include the seeds if you like it spicy)
4 skinless salmon fillets, 4 ounces each
1/4 cup red bell pepper, diced
1/4 cup yellow bell pepper, diced
1/4 cup watercress leaves, chopped
1 tablespoon balsamic vinegar
1 tablespoon olive oil
Salt and ground white pepper, to taste

Steps:

  • Place pine nuts, honey, lemon juice, 1/4 cup olive oil, basil, garlic, and chile in a blender and process until the mixture is pureed. Spoon the sauce over the salmon, and turn to coat. Cover and refrigerate overnight or for at least 4 hours, turning twice.
  • Place bell peppers and watercress in a bowl. Toss with vinegar and 1 tablespoon olive oil. Cover and refrigerate while the salmon cooks.
  • Oil the grill rack and preheat the grill to medium-high. Remove the salmon from the marinade, reserving the marinade. Sprinkle the salmon with salt and pepper on both sides.
  • Place the salmon on the grill rack and grill until opaque throughout, 4 to 6 minutes on each side. Brush occasionally with reserved marinade. Garnish with bell pepper and watercress mixture before serving.

3 tablespoons vegetable oil
kosher salt
freshly cracked black pepper
1 bunch fresh parsley, washed and dried, large stems removed
1/2 cup fresh cilantro leaves, washed and dried
1/2 cup fresh mint leaves, washed and dried
1 garlic clove, peeled
2 tablespoons grainy mustard
5 dashes Tabasco sauce, to taste
1/2 cup olive oil
1 tablespoon fresh lemon juice

Steps:

  • Rub the salmon fillets on both sides with the vegetable oil and sprinkle them generously with salt& pepper.
  • Place them over the coals and grill until they are just opaque throughout, 6 to 8 minutes per side.
  • To check for doneness, poke the fish with your finger to check its firmness level; if you're unsure, nick, peek, and cheat: Cut into one of the fillets at its thickest point and peek to be sure it is just opaque all the way through.
  • While the salmon is cooking, combine all the sauce ingredients in a food processor or blender and puree until Serve each salmon fillet topped with a spoonful of the sauce, passing any remaining sauce on the side.
