This ceviche is so refreshing on hot summer days! Can eat it for snack or have it as an appetizer for your summer BBQ!!

Number Of Ingredients 7

8 tilapia fillets
15 limes, juiced
1 large tomato, finely diced
1 large red onion, finely diced
2 cucumbers, peeled, seeded, and finely diced
½ bunch finely chopped cilantro
salt and pepper to taste

Steps:

  • Chop the raw tilapia into small pieces, and place in a large bowl. Pour in enough lime juice to cover the fish.
  • Mix the tomato, red onion, and cucumbers into the bowl. Stir in the cilantro. Season with salt and pepper.
  • Allow the ceviche to marinate, refrigerated, for at least an hour. Taste for seasoning before serving; add salt and pepper if necessary.

Number Of Ingredients 7

1 pound perfectly fresh sea scallops or a mixture of fish, cut into 1/4-inch dice
1/2 cup minced bell pepper
1 teaspoon minced lime zest
1/4 cup fresh lime juice
Salt to taste
Cayenne to taste
Chopped fresh cilantro leaves for garnish

Steps:

  • 1. Toss together all the ingredients except the cilantro and let sit at room temperature for 15 minutes.
  • 2. Taste, adjust the seasoning, and serve, garnished with the cilantro.

This is a ceviche-style dish that calls for letting the fish stay in the marinade before serving. One of my favorite things to do is to suck out the heads of the shrimp. In Italy this is a major compliment to the chef. It's also very flavorful.

2 pounds fresh shrimp
Juice of 2 lemons
Kosher salt and freshly ground black pepper
Chili pepper flakes, optional
Extra-virgin olive oil, to taste
Fresh flat-leaf parsley, for garnish

Steps:

  • Shell and clean your shrimp, leaving the heads on. Lay the shrimp out on a plate and squeeze the lemon juice on top, followed by some salt, black pepper, chili flakes, if using, and a good splash of olive oil (this will partially cook the shrimp). Let the shrimp marinate 10 minutes, if desired, or serve immediately. Garnish with fresh parsley.
