PITTSBURGH CHIPPED HAM BARBECUES
Barbequed ham sandwiches are a quick solution to dinner. The barbeque sauce is simple and made from scratch on the stove top.

- In a large saucepan, combine the ketchup, water, brown sugar, cider vinegar, sweet pickle relish and Worcestershire sauce. Season with cinnamon, black pepper, garlic salt and liquid smoke. Bring to a simmer over low heat and simmer for 20 minutes.
- Shred the ham and stir into the mixture. Simmer longer if desired, then serve hot on hamburger buns. The mixture can also be frozen.

- In a large bowl, beat the eggs; add milk, bread crumbs and pepper. Add ham and pork; mix well. In a shallow baking pan, shape meat mixture into an 8x4-in. oval. Insert a thermometer. Bake at 350° for 30 minutes. , Meanwhile, combine glaze ingredients. Spoon over loaf. Bake 40 minutes longer or until the thermometer reads 170°, basting occasionally with glaze.

- In large stock pot, add cottage ham, carrots, and cabbage. Cover with water about an inch or two above the cabbage.
- Drop in peppercorns and bay leaves. Add in the cider vinegar.
- Bring pot up to boil, cover loosely, and simmer for about an 45 minutes.
- Add in the potatoes. Loosely cover and cook another 45 minutes to an hour, or until vegetables and cottage ham are soft.
- Remove vegetables and cottage ham to serving platter. Cover loosely with foil and let sit for 10 minutes. Slice the cottage ham. Season the vegetables with salt and pepper, as desired. Serve with prepared horseradish, if desired.
HAM LOAF
I have no idea where I got this recipe and I've tweaked it a bit over the years. The first time I ever made this, I totally messed it up, but it was still really good! The look on people's faces when they try it for the first time is priceless! Since it makes so much, its a really good pot-luck dish.

- 1. Preheat oven to 350.
- 2. In a large bowl, combine the ham, pork, eggs, bread crumbs, evaporated milk, salt and ground black pepper. Mix all together well and form into a loaf. Place loaf into a lightly greased 9x13 inch baking dish.
- 3. Bake at 350 for about an hour.
- 4. While the loaf is baking, mix up the ingredients for the glaze.
- 5. After the loaf has been baking for an hour or so, pour the glaze on it and bake it for another 20-30 minutes.
