1 cup long grain white rice
1 2/3 cups water for fluffier rice or 1 1/2 cups water for firmer rice suitable for making fried rice

Steps:

  • You will need a small pot with a lid. A capacity of 1 to 3 quarts is good.
  • Bring the water to a strong boil at highest temperature.
  • Add the rice to the boiling water. Swirl the rice once with a spoon so that it covers the bottom of the pot uniformly.
  • Watch the rice boil until you see the bubbles form a pock-marked pattern with its vigorous boiling. This takes 1 to 2 minutes.
  • Lower the heat to simmer. About 2.5 out of 10 on the dial is about right on my stove. Your stove may need to be set slightly higher or lower. You want the heat to be high enough so that steam is always being formed in the pot, but not so hot that the rice scorches on the bottom of the pot.
  • When the boiling dies down a bit, cover the pot and set the timer to 20 minutes.
  • Remove the lid of the pot, and your rice is done. For your first batch, test the rice with a fork and give it a taste test. It should be fluffy and tender.
  • (The texture of fried rice benefits from a firmer rice kernel. Use 1 1/2 cups of water instead of 1 2/3 cups of water to achieve this texture. When it is done, leave the lid off the pot and allow the rice to cool. Then use the cooled rice in your fried rice recipe. The cooling is optional.).

  • Bring the water to boil in a medium saucepan. Add the salt and butter and allow the butter to melt.
  • When the water has returned to a boil, stir in the rice. Let the water return to a light simmer. Stir again, cover the pot and turn the heat down to low. Keep the rice simmering slightly, and keep the pot covered (you may have to peek after a few minutes to make sure the heat is at the correct temperature, but then let it cook, covered). Start checking to see if the rice is tender and all of the liquid is absorbed at about 17 minutes. It may take up to 25, especially if you are making a larger quantity of rice.
  • When the rice is cooked, turn off the heat and let it sit for another couple of minutes to finish absorbing any liquid. Take off the lid, fluff the rice with a fork and let it sit for another 2 minutes or so, so that some of the excess moisture in the rice dries off.

  • Add rice and water to a medium saucepan and bring to a boil over high heat. Once boiling, lower heat to a simmer and cover. Ensure it's simmering and not boiling or the rice can cook too quickly.
  • Simmer until water is completely absorbed and rice is tender - about 15-25 minutes (will depend on size and freshness of rice). Drain off any excess water if there is any (there shouldn't be).
  • I like to turn off the heat, remove the lid, fluff with a fork, put the lid back on, and let rest for 10 minutes so the moisture redistributes to prevent mushy rice. This rice is delicious in things like stir fries, sushi, with stews, and more!

  • In a medium pot heat up oil and toast the rice with the garlic and salt until the rice changes color to a bright white golden tone. If you like it more toasted brown it a bit more.
