  • Whisk 1/2 cup milk, sugar, pumpkin puree, pumpkin pie spice, and vanilla extract in a small saucepan over low heat. Simmer for 5 minutes. Whisk in remaining 1/2 cup milk.
  • Pour milk mixture through a fine-mesh sieve to remove pulp. Return milk mixture to saucepan and simmer, whisking, 2 minutes. Add espresso and whisk until foamy, 1 minute.

18g ground espresso , or 1 espresso pod
250ml milk
large cup , 300-350ml capacity

Steps:

  • Make around 35ml espresso using your coffee machine and pour it into the base of your cup.
  • Steam the milk with the steamer attachment so that it has around 2-3cm of foam on top. Hold the jug so that the spout is about 3-4cm above the cup and pour the milk in steadily. As the volume within the cup increases, bring the jug as close to the surface of the drink as possible whilst aiming to pour into the centre. Once the milk jug is almost touching the surface of the coffee, tilt to speed up the rate of pour. As you accelerate, the milk will hit the back of the cup and start naturally folding in on itself to create a pattern on the top.

Steps:

  • Prepare espresso and pour the espresso into a mug.
  • Place the milk in a wide glass or glass jar andmicrowave for about 30 seconds until it is very hot but not boiling.Alternatively, heat the milk in a saucepan over medium heat for about 5 minutesuntil very hot but not boiling, watching it carefully.
  • Using a milk frother, froth the milk until you don'tsee any bubbles and you have a very thick froth, 20 to 30 seconds. Swirl theglass and lightly tap it on the counter repeatedly to pop the larger bubbles.Repeat this step as needed.

Steps:

  • Heat the milk for 30-45 seconds in your microwave in the cup you intend to drink your coffee from.
  • Once the milk of your choice is heated, take a small whisk and vigoursly whisk back and forth for 15-30 seconds until the milk is frothy.
  • Pour the coffee directly over the frothed milk or brew over the frothed milk.
  • Alternatively, you can heat the milk in a glass measuring cup and then froth. Pour coffee or espresso into a mug and then gently pour the frothed milk over the coffee. Spoon the remaining foam on top of your latte.

1 tbsp (15 grams) of mocha syrup

  • Brew the espresso shot with the coffee brewer of choice; I've prepared mine with the Moka pot.
  • Meanwhile, steam and foam your milk. Make sure there's a nice layer of foam; this will create those signature layers in your coffee.
  • To a tall glass, add the mocha syrup.
  • Coat the sides of the glass with a tablespoon of chocolate sauce.
  • Add your freshly steamed and foamed milk to the glass.
  • Wait 30 seconds, so the layers in your milk will set.
  • Slowly pour the espresso coffee into the glass.
  • Top the coffee with whipped cream.
  • Drizzle the remaining chocolate sauce over the whipped cream.

How to Make a Cafe Latte image

This caffe latte is more of an American-style latte recipe, including espresso, foamed milk, and an optional flavored syrup.

For the Espresso:
1 ounce water
1 tablespoon ground coffee (dark espresso or French roast)
Optional: 1 1/2 fluid ounces (or 1 shot) flavored simple syrup
For the Foamed Milk:
3 ounces milk (or more)

Steps:

  • Gather the ingredients.
  • Place the water into the boiler of your espresso machine.
  • Put the coffee into the portafilter.
  • Tamp (press) the coffee down using a tamper. Do this 2 to 3 times to make sure the grounds are packed tightly.
  • Place the portafilter into your espresso machine's group head and lock it in place by turning it to the right.
  • Place a latte cup (or the glass carafe that came with your espresso machine) under the group head and pull the shot for 25 to 30 seconds. (Typically, there is a lever, switch, or button to start this process.)
  • Once the shot is pulled , add the flavored syrup, if using.
  • Place the milk into either a glass measuring cup or a small metal pitcher.
  • Insert the steam wand into the container with the milk, just under the surface.
  • Engage the steam wand on your espresso machine. (You may need to read your espresso machine's manual for this, as each espresso maker is a little different.)
  • Make sure to keep the tip of the wand toward the side of the container. This will create a vortex with the milk.
  • Move the container higher, lower, closer, then further so that the steam wand can incorporate the air into the milk, making the foam. The bubbles should get smaller and smaller as you do this.
  • Once the milk has foamed to double its size, turn off the steam wand.
  • Use a spoon to retain the microbubbles on top of the steamed milk and pour the bottom 2/3 of the steamed milk into the latte cup.
  • Top the latte with the remaining bubbles by pouring or spooning them onto the drink.
  • Serve and enjoy.
