Steps:
- Make the beef & bean filling: heat oil in pan, cook beef, stirring, til browned.
- Add onion and garlic, cook, stirring, til onion is soft. Stir in undrained can of tomatoes and remaining ingredients; simmer uncovered 15 minutes or til mixture is thickened.
- Divide warm beef & bean filling among the tortillas, roll; secure with toothpicks. Placed filled tortillas on greased oven tray, sprinkle with cheese and bake in moderate oven about 10 minutes or til cheese melts.
- Meanwhile, make the guacamole: mash avocado with fork, add remaining ingredients and mix well.
- To serve: Remove toothpicks from tortillas, served topped with guacamole, sour cream and cilantro.

- In a large skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, roast beef, taco sauce, chilies, cumin and red pepper flakes if desired. Bring to a boil. Reduce heat; simmer, uncovered, for 25 minutes or until thickened., Spoon about 2/3 cup down the center of each tortilla; fold over sides and ends. - Heat the oil in a skillet over medium-high heat. Stir in the onion and garlic, and cook until tender and transparent, about 5 minutes. Mix in the tomatoes, roast beef, taco sauce, chile peppers, cumin, and red pepper flakes, if desired. Bring the mixture to a boil. Reduce heat to medium, and simmer, uncovered, for 25 minutes, or until thickened.
- Arrange tortillas on a clean, flat work surface. Spread about 2/3 cup of beef mixture in the center of each warm tortilla. Sprinkle evenly with cheese and lettuce. Fold over ends and sides to make a package.

- Peel potatoes; cut into 1/2-inch dice. In a large saucepan, heat oil over medium heat. Add potato; cook, stirring occasionally, until golden brown, about 6 minutes.
- Add beef, onion, and jalapeno; cook, breaking up meat with a spoon, until beef is thoroughly browned, about 4 minutes. Add tomatoes and juice, cumin, paprika, and 1 teaspoon salt; cook until liquid has evaporated, about 6 minutes.
- Heat tortillas, one at a time, in a dry skillet over medium-high heat, turning once, until lightly browned, about 10 seconds.
- Leaving space on bottom and sides, layer tortillas with sour cream, lettuce, beef mixture, cheese, and cilantro, if using; squeeze lime juice on top. Fold bottom upward, covering filling by 2 inches. Fold each side to overlap, leaving the top end open. Serve garnished with lime wedges.
BURRITOS FROM SUNDAYS LEFTOVER ROAST BEEF
Steps:
- Heat Oil in a large skillet, add Onions and Garlic and saute for 3 minutes or until slightly soft. Add meat,Tomatoes,Cumin, and Chili Powder. Stir and heat for a few minutes. Add Olives. Add Artichoke Hearts by holding jar over skillet and removing Artichoke Hearts with spoon and allowing a bit of oil to spill over into pan. Add Salsa and stir ingredients together to heat mixture. Add more Salsa if necessary to moisten mixture. Do not allow mixture to boil. Serve a scoop of beef mixture down center of warmed flour tortilla. Top with grated cheese. Add salsa, sour cream as desired. serve with fork and napkins!
EASY BEEF BURRITOS

- Heat the oil in a large pan - a casserole is ideal. Fry the onions for 8 mins, then add the garlic, spices and oregano and cook for 1 min. Crumble over the mince and sizzle for 5 mins, stirring, until browned. Stir in the sugar and leave for a minute, then splash in the vinegar and pour in the tomatoes.
- Simmer for 5 mins then tip in the beans and the water from the can. Season, stir and simmer everything for 20 mins until the beef is in a thick gravy. The sauce can be prepared up to 2 days ahead, chilled and reheated with a splash of water or frozen for 6 months.
- To make the burritos, heat the tortillas following pack instructions. Pile some rice and beef sauce along each tortilla and scatter over your choice of topping. Fold over the ends and roll up to seal. Secure by wrapping with foil if you want. Eat immediately.

- In a 6-qt. slow cooker, combine beef and broth. Cook, covered, on low until meat is tender, 6-8 hours. Remove meat; discard juices. When cool enough to handle, shred with two forks. Return to slow cooker., In a large skillet, heat oil over medium heat. Add onion and jalapenos; cook and stir until softened, 3-4 minutes. Add garlic and seasonings; cook 1 minute longer. EASY ROAST BEEF BURRITO
Steps:
- Saute onion and green pepper in olive oil in pan until soft. Add can of roast beef with gravy and all spices. Roast beef is already cooked from the can, so you merely need to warm it with the pepper and onion that you've just cooked and add seasoning. Start breaking up the roast beef chunks into slivers and mix uniformly into gravy. Once mixture is uniform, add the tablespoon of corn starch. Let mixture thicken as you stir over heat. Once mixture is thick enough to form a filling for a burrito (rather than a "Mexican gravy"), remove from heat. Add some of mixture to center of a tortilla so that mixture is longer than it is wide. Top with cheese, then fold tortilla at either "end" of the line of filling over filling. Fold remaining sides over the first two sides that you folded. Flip burrito over on plate so that fold is down. (If you need to heat this in a microwave, add rice and/or beans (sides) to be heated to plate and warm in microwave. This is a good step if you want to melt some cheese on top of refried beans from a can while heating burrito and rice.) When burrito and sides are hot (either from microwave or pan), top burrito with sour cream and sprinkle some chopped black olive on top.

- Remove as much fat as possible from roast.
- Place roast in crock pot and cover with remainder of ingredients except tortillas.
- Cook on low for 8-10 hours.
- With fork shred roast and stir well with other ingredients in crock pot.

BEEF & BEAN BURRITOS RECIPE BY TASTY
Here's what you need: ground beef, taco seasoning, flour tortillas, refried bean, shredded mexican cheese blend

- Add ground beef to a large skillet over high heat and sprinkle with taco seasoning. Cook, breaking up the meat, until browned. Drain the fat and set aside to cool.
- Assemble the burritos by microwaving the flour tortilla for 20 seconds, and begin to layer burrito starting with refried beans, followed by the cooked beef and cheese.
- Fold in the left and right sides of the tortilla and roll it up from the bottom, tucking the bottom edge under the filling. Wrap in parchment paper and label. Freeze up to 1 month.
- To reheat from frozen, wrap the burrito in a damp paper towel and microwave for 2-3 minutes, flipping halfway or until the center is hot. Let stand 1 minute before eating.
- Enjoy!
