This recipe was given to me by my sister, who got it from a lady visiting from Hungary in 1961.

2 tablespoons butter
2 large onions, diced
2 pounds flank steak
⅛ teaspoon caraway seed
¼ teaspoon dried marjoram
1 clove garlic, minced
5 tablespoons paprika
2 cups water
4 large potatoes, peeled and cubed
salt and pepper to taste

Steps:

  • Melt butter in a large soup pot over medium high heat. Saute onions until soft, then add beef and brown. Stir in caraway seed, marjoram, garlic and paprika. Pour water over all, lower heat to low and simmer for 2 1/2 hours.
  • Add potatoes and cook until tender, another 45 minutes to 1 hour. Season with salt and pepper to taste and serve.

Steps:

  • In a large skillet, brown beef, pork and onions in oil over medium heat; drain. Add the water, paprika, salt and marjoram; bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours or until meat is tender. , Just before serving, combine flour and sour cream until smooth; stir into meat mixture. Bring to a boil over medium heat; cook and stir for 1-2 minutes or until thickened and bubbly. Serve over noodles.

2 lb beef stew meat, cut into 1-inch pieces
1 large onion, sliced
1 3/4 cups Progresso™ beef-flavored broth (from 32-oz carton)
1 can (6 oz) Muir Glen™ organic tomato paste
2 cloves garlic, finely chopped
1 tablespoon Worcestershire sauce
1 tablespoon paprika
1 teaspoon salt
1/4 teaspoon caraway seed, if desired
1/4 teaspoon pepper
1/4 cup cold water
3 tablespoons Gold Medal™ all-purpose flour
1 medium green bell pepper, cut into strips
8 cups hot cooked noodles

Steps:

  • In 10-inch skillet, heat oil over medium-high heat. Cook beef in oil about 10 minutes, stirring occasionally, until brown; drain.
  • Spray 3 1/2- to 6-quart slow cooker with cooking spray. In slow cooker, place beef and onion. In medium bowl, mix broth, tomato paste, garlic, Worcestershire sauce, paprika, salt, caraway seed and pepper; stir into beef mixture.
  • Cover; cook on Low heat setting 8 to 10 hours (or High heat setting 4 to 5 hours) or until beef is tender.
  • In small bowl, stir water and flour until well mixed; gradually stir into beef mixture. Stir in bell pepper. Increase heat setting to High. Cover; cook 30 minutes longer. Serve goulash over noodles.

2 medium carrots, chopped
2 medium green peppers, chopped
3 pounds beef stew meat
3/4 teaspoon salt, divided
3/4 teaspoon pepper, divided

1-1/2 cups reduced-sodium beef broth
1/4 cup all-purpose flour
3 tablespoons paprika
2 tablespoons tomato paste
1 teaspoon caraway seeds
1 garlic clove, minced
Dash sugar
12 cups uncooked whole wheat egg noodles
1 cup reduced-fat sour cream

Steps:

  • Place the onions, carrots and green peppers in a 5-qt. slow cooker. Sprinkle meat with 1/2 teaspoon salt and 1/2 teaspoon pepper. In a large skillet, brown meat in oil in batches. Transfer to slow cooker., Add broth to skillet, stirring to loosen browned bits from pan. Combine the flour, paprika, tomato paste, caraway seeds, garlic, sugar and remaining salt and pepper; stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Pour over meat. Cover and cook on low for 7-9 hours or until meat is tender., Cook noodles according to package directions. Stir sour cream into slow cooker. Drain noodles; serve with goulash.

8 slices bacon, chopped
2 large onions, thinly sliced, about 1 1/2 cups
1 tablespoon chopped garlic
2 pounds beef shank or chuck, cut into stew meat
Salt and pepper
3 tablespoons hot Hungarian paprika
1 teaspoon ground marjoram
1 teaspoon lemon zest
1/4 cup white wine vinegar
1/2 cup white wine
1 cup tomato puree
2 cups beef broth
1 cup diced potatoes

Steps:

  • In the bottom of a heavy casserole saute the chopped bacon to render the fat. Add the onion to the bacon fat and brown until golden. Stir in the garlic but do not burn. Quickly add the beef in one layer, season with salt and pepper and brown all sides well.
  • Sprinkle the paprika, marjoram and lemon zest in and quickly stir to coat the meat evenly.
  • Add vinegar and wine and cook until nearly dry.
  • Add the tomato and broth, bring to a boil quickly before lowering the heat to a simmer and cook gently for 45 minutes. Add the potatoes. Continue to cook for an additional 20 minutes before serving with buttered noodles.

A spicy way to dress up stew beef. My mom made this when we were kids, and we loved it. It is spicy while not mouth-burning! Can be made with cheaper cuts of beef, and comes out very tender. If it gets too thick, add a little water while it's cooking. Garnish with sour cream.

2 tablespoons Hungarian sweet paprika

Steps:

This recipe is the original way that my father showed me how to prepare Hungarian beef goulash and it is a beautiful dish. Accompanied with rice or potato, it is a complete meal with all flavoursome taste of Hungarian cooking.

800 g diced beef
2 tablespoons oil
3 onions, diced finely
1 tablespoon sweet Hungarian paprika
3 tomatoes, diced finely
1/2 red capsicum, diced finely
1/2 cup red wine
salt

Steps:

  • Heat oil in a deep frypan and cook onions on a medium heat until soft and translucent. Remove from heat and allow to cool slightly.
  • Add paprika to onion and stir through.
  • Add diced meat to mixture and coat and marinade the mixture whilst you prepare the tomato and capsicum. Make sure you keep the juice from the tomato to add to the dish.
  • Stir in the tomato and capsicum and return to a medium/high heat and allow to cook for a few minutes on this heat before reducing the heat to medium/low. Cover with a lid for this to cook.
  • After 15 minutes, add the wine and salt, stir and simmer for 1 hour at least with a cover/lid, stirring occasionally.
  • NOTE: do not brown the meat before adding to the onions -- it must marinade and cook with the vegetables so the juices create a nice flavorsome gravy.
  • Serve with mashed potato or boiled rice and a simple side salad of lettuce and vinegar.

2 lb. beef chuck / gravy beef / stewing beef
1 tsp. salt
2 white onions
2 Tbsp. olive oil
4-5 Tbsp. sweet paprika (use real hungarian paprika ie. Szeged brand)
2 bay leaves
1 clove garlic minced
1 tomato (chopped)
1 Tbsp Worcestershire Sauce (optional)
1 Tbsp Brown Sugar
1 Qt. water
4 peeled and diced potatoes
1/4 tsp. black pepper
3 tbsp sourcream
1 tsp. creamed horseradish
1 tsp. chopped parsley
2 eggs
1/2 cup water
9 Tbsp. flour
1/4 tsp. salt
1 tsp. parsley
salted butter

Steps:

  • Cut beef into 1 inch squares, add 1/2 tsp. salt and lightly dust with plain flour.
  • Chop onions and brown in oil, add beef and paprika. Add garlic and chopped tomato.
  • Let beef simmer in its own juice along with salt and paprika for 1 hr on very low heat.
  • Add water, diced potatoes and remaining salt. Cover and simmer until potatoes are done and meat is tender.
  • Add more paprika if required towards the end, sauce should be thick and flavorsome. You can also add a tablespoon of flour at end to thicken slightly.
  • Prepare the nokedli to accompany the goulash:
  • Hand-beat eggs with fork for 30 secs and add water. Add flour to beaten eggs and add salt.
  • Mix well until it forms a ball. Let it stand for 1/2 hour for flour to mellow.
  • Take a teaspoonful of the mix and drop into boiling water. Repeat until mix is finished. Once dumplings rise to surface they are ready (normally takes about 1 min).
  • Once you have removed all the nokedli, mix it in with a bit of salted butter and chopped parley.
  • Mix the sourcream and horseradish cream. Top the goulash with the cream. Garnish with parsley and serve it with the nokedli.

Even with a few adulterations, my Hungarian Goulash is the real deal... originally a campfire stew developed by Hungarian herdsman who cooked tough cuts of meat for hours over a low fire until tender. It is a simple dish calling for little more than tender braised beef, onions, and paprika. However, for my American taste, I incorporate some carrots. It is the closest recipe that I can find to the Hungarian Goulash that I loved at a wonderful, long-gone restaurant in Boston called Cafe Budapest. Be sure that the paprika you use is fresh. Great goulash is all about the meat...and the paprika. Serve the stew over egg noodles or boiled potatoes for a hearty meal.

1 (3 1/2 lb) boneless beef chuck-eye roast, trimmed and cut into 1 1/2- inch cubes (I prefer the chuck-eye roast, but any boneless roast from the chuck will work)

1/3 cup sweet paprika (I use "Pride of Szegeo" Hungarian sweet paprika... do NOT substitute hot, half-sharp, or smoked papr)
1 (12 ounce) jar roasted red peppers, drained and rinsed (about 1 cup)
2 tablespoons tomato paste
3 teaspoons white vinegar
2 tablespoons vegetable oil
4 large onions, minced (about 6 cups)
4 carrots, peeled and cut into 1-inch-thick rounds (about 2 cups)
1 bay leaf
1 cup canned low sodium beef broth, warmed
1/4 cup sour cream (optional, I find that it adds extra richness)
salt & freshly ground black pepper, to taste

Steps:

  • Adjust an oven rack to the lower-middle position and preheat the oven to 325 degrees. Sprinkle the meat evenly with about 1 teaspoon salt and let stand for 15 minutes.
  • In a food processor or blender, combine the paprika, roasted peppers, tomato paste, and 2 teaspoons of the vinegar. Process until smooth, 1 to 2 minutes, scraping down the sides as needed.
  • Combine the oil, onions, and 1 teaspoon salt in a large Dutch oven; cover and set over medium heat. Cook, stirring occasionally, until the onions have softened but have not yet browned, 8 to 10 minutes. (If the onions do begin to brown, reduce the heat to medium-low and stir in 1 tablespoon of water.).
  • Stir in the paprika mixture; cook, stirring occasionally, until the onions stick to the bottom of the pan, about 2 minutes. Add the beef, carrots, and bay leaf; stir until the beef is well coated. Using a rubber spatula, scrape down the sides of the pot. Cover the pot and transfer to the oven. Cook until the meat is almost tender and the surface of the liquid is 1/2 inch below the top of the meat, 2 to 2 1/2 hours, stirring about every 30 minutes. Remove the pot from the oven and add enough heated beef broth so that the surface of the liquid is 1/4 inch from the top of the meat (the beef should NOT be fully submerged). Return the covered pot to the oven and continue cooking until a fork slips easily in and out of the beef, about 30 minutes longer.
  • Skim the fat off the surface; stir in the remaining 1 teaspoon of vinegar and the sour cream (if using). Remove and discard the bay leaf, season with salt and pepper to taste, and serve.
  • (The stew can be cooled, covered tightly, and refrigerated for up to 2 days. However, wait to add the optional sour cream until after reheating. Before reheating, skim the hardened fat from the surface and add enough water to the stew to thin slightly.).
