HUNGARIAN TURKEY BURGERS STUDDED WITH SMOKED GOUDA



Hungarian Turkey Burgers Studded with Smoked Gouda image

Yield 4 servings

Number Of Ingredients 16

1 1/3 pounds ground turkey (the average weight of 1 package)
1 small yellow onion, finely chopped
1/2 red bell pepper, cored, seeded, and finely chopped
A handful of fresh flat-leaf parsley, chopped
Several drops of Worcestershire sauce
1 tablespoon smoked paprika (a palmful)
Salt and freshly ground black pepper
1/3 pound smoked Gouda cheese, cut into 1/4-inch dice
Extra-virgin olive oil (EVOO), for drizzling
1 cup watercress, finely chopped
1 small shallot, minced
1 cup sour cream
8 red leaf lettuce leaves
4 slices pumpernickel bread
4 celery ribs, cut into sticks
8 radishes, trimmed

Steps:

  • Heat a large nonstick skillet or grill pan over medium-high heat. In a large bowl mix the turkey with the onion, bell pepper, parsley, Worcestershire, smoked paprika, salt, and pepper. Fold in the chopped smoked Gouda. Score the meat with your hand into 4 sections. Form each section into a large patty 1 inch thick. Drizzle the patties with EVOO and cook for 6 minutes on each side, until cooked through.
  • While the burgers cook, mix the watercress, shallot, and sour cream in a small bowl. Season the thick sauce with salt to taste.
  • To serve, place 2 lettuce leaves on each slice of bread. Top with a burger. Top burgers with some sauce and serve with a few celery sticks and radishes on the side for munching (they're good with the sauce, too).

4 slices bacon
1/4 cup chopped fresh flat-leaf parsley
3 ounces smoked gouda cheese, shredded
1/4 cup diced red onion
1 tablespoon Worcestershire sauce
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
oil, for coating grill grate
6 hamburger buns, split

Steps:

  • Heat the grill as directed.
  • Cook the bacon in a skillet over medium heat until crisp; remove with a slotted spatula and place on paper towels to drain. Crumble.
  • Using your hands, mix the beef, parsley, cheese, onion, Worcestershire, salt, pepper and cooked bacon in a bowl until well blended; do not overmix. Using a light touch, form into 6 patties no more than 1 inch thick. Refrigerate the burgers until the grill is ready.
  • Brush the grill grate and coat it with oil. Put the burgers on the grill, cover, and cook for 7 minutes, flipping after about 4 minutes, for medium-done (150°F, slightly pink). Add a minute per side for well-done (160°F).
  • To toast the buns, put them cut-sides down directly over the fire for the last minute of cooking.
  • If serving the burgers directly from the grill, serve on the buns. If the burgers will sit, even for a few minutes, keep the buns and burgers separate until just before eating.

2 tablespoons vegetable oil
1 lb onion, halved and thinly sliced
salt
1/4 cup Frank's red hot sauce (or to taste)
butter, softened
8 hamburger buns
8 slices bacon
1 cup smoked gouda cheese, shredded
1/4 cup sweet baby ray's barbecue sauce
1 1/2 lbs ground chuck
salt and pepper

Steps:

  • In a large skillet, heat the oil. Add the sliced onion and a pinch of salt, cover and cook, stirring a few times, until the onion is crisp-tender and just turning translucent, about 5 minutes. Stir in the hot sauce and remove from the heat. Season with salt, if desired.
  • Heat a large griddle. Spread the butter on 1 side of each bun and griddle buttered side down over moderate heat until toasted, about 2 minutes. Transfer the toasts to a plate. Add the bacon to the griddle and cook over moderate heat until crisp, about 4 minutes per side; drain on paper towels. Wipe off the griddle.
  • Season ground beef with salt and pepper and form ground beef into 4 patties. Cook on the griddle over moderately high heat until medium-rare, about 2 minutes per side. Top each burger with 1/4 cup of smoked Gouda and cook until the cheese melts, 1 minute.
  • Set the burgers on the unbuttered sides of 4 buns. Top with the bacon, onion and barbecue sauce. Close the burgers and serve, passing more barbecue sauce.
