SPINACH AND CANNELLINI BEAN DIP



Spinach and Cannellini Bean Dip image

2 tablespoons extra-virgin olive oil
2 cloves garlic, minced
2 (6-ounce) bags baby spinach
1 (15-ounce) can cannelloni beans, drained and rinsed
1 tablespoon fresh lemon juice
1 tablespoon balsamic vinegar
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • In a large nonstick skillet, heat 1 tablespoon of the oil, over medium heat. Add the garlic and cook until fragrant, about 1 minute. Add 1/2 of the spinach and cook for 2 minutes until wilted. Repeat with the remaining spinach. Let the mixture cool for a few minutes.
  • Place the remaining olive oil, spinach mixture, cannelloni beans, lemon juice, balsamic vinegar, salt, and pepper in the bowl of a food processor.
  • Blend until the mixture is smooth. Transfer to a small serving bowl. Serve with endive spears, crostini or pita chips.

4 garlic cloves, sliced
2 tablespoons olive oil
2 large onions, chopped
1 pound fresh baby spinach
1 can (15 ounces) cannellini beans, rinsed and drained
1/2 cup white wine or reduced-sodium chicken broth
3/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large nonstick skillet, saute garlic in oil until tender. Remove garlic and discard. Add onions to pan; saute until crisp-tender. , Stir in the remaining ingredients. Cook and stir over medium heat for 10-12 minutes or until spinach is wilted. Serve with a slotted spoon.

1 tablespoon olive oil
1 small onion, chopped
2 garlic cloves, minced
1 can (14-1/2 ounces) no-salt-added diced tomatoes, undrained
2 tablespoons Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon crushed red pepper flakes
1 can (15 ounces) cannellini beans, rinsed and drained
1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and quartered
6 ounces fresh baby spinach (about 8 cups)
Additional olive oil, optional

Steps:

  • In a 12-in. skillet, heat oil over medium-high heat; saute onion until tender, 3-5 minutes. Add garlic; cook and stir 1 minute. Stir in tomatoes, Worcestershire sauce and seasonings; bring to a boil. Reduce heat; simmer, uncovered, until liquid is almost evaporated, 6-8 minutes., Add beans, artichoke hearts and spinach; cook and stir until spinach is wilted, 3-5 minutes. If desired, drizzle with additional oil.

I overcooked a batch of great northern beans to the point of disintegration and used them to make this dip as it seemed there was nothing else I could do with them. I overcook my great northern and lima beans A LOT by accident, (I'm neglectful) and use this formula with different mixes like ranch dressing or garden vegetable dip. Strangely enough, this doesn't seem to taste as good with canned beans, beans that are cooked properly, or other bean varieties, but hey.... you be the judge! Posting for nutritional value.

16 ounces great northern beans, overcooked and mushy
6 ounces chicken broth, approximately
10 ounces frozen chopped spinach, thawed and drained
1 (1 ounce) envelope onion soup mix

Steps:

  • Add beans to a blender or food processor and pulse.
  • Slowly add broth, while blending, to thin the beans to a dip consistency. I used approximately 6 ounces of broth.
  • Remove to an airtight container. Add soup mix and spinach. Stir to combine.
  • Refrigerate overnight to let flavors develop.
  • Serve with tortilla chips, pita chips, or crudites.

For the creamiest, dreamiest vegan onion dip, use a high-speed blender, if you have one. There is some down time in this recipe - soaking the cashews and letting the dip rest - but don't be tempted to skip those steps. The cashews need to soak so they blend as smoothly as possible, and the finished dip benefits greatly from some time to let the flavors come together. Prepare it a day in advance and refrigerate overnight for best results.

1 cup raw cashews (about 4 ounces)
3 cups chopped yellow onions (from 2 medium onions)
1/4 cup olive oil
Kosher salt and coarse black pepper
1 (15-ounce) can cannellini beans, drained (about 1 cup)
4 teaspoons lemon juice, plus more as needed
4 teaspoons apple cider vinegar
1/2 teaspoon onion powder
1/2 teaspoon sweet paprika
Chopped chives, for garnish (optional)
Potato chips or crudités, for serving

Steps:

  • Add the cashews to a bowl and cover with water. Let the cashews soak at room temperature for 2 hours.
  • About 45 minutes before the cashews are finished soaking, combine the chopped onions, olive oil and a pinch of salt in a medium skillet over medium-low heat. Cook the onions, stirring occasionally, until they are deep golden brown and caramelized, about 30 minutes. To prevent the onions from burning and sticking to the bottom of the skillet, you can add a splash of water, 1 tablespoon at a time, as needed. Let caramelized onions cool slightly.
  • Drain the cashews and add them to the bowl of a food processor or high-speed blender with the beans and 1/2 cup water. Blend the mixture until smooth, about 5 minutes, stopping the mixer and scraping down the bowl occasionally.
  • Add the lemon juice, vinegar, onion powder, paprika and 1/2 teaspoon salt, and blend again until smooth. Transfer the mixture to a bowl. Reserve about 1 tablespoon onions for garnish, then add the rest to the bowl. Fold the onions into the mixture, cover and refrigerate for at least 1 hour and up to overnight. (Overnight is ideal for the best flavor.)
  • Just before serving, give the dip a good stir and adjust the seasoning with lemon juice and salt as desired. Top with the reserved onions and chives, if desired, and a few grinds of black pepper. Serve with potato chips or crudités. Store leftovers covered in the fridge for up to 3 days.
