Ice-Cold Martinez image

Not nearly as hefty as a Negroni or as lean as a martini, this little beauty is a perfect welterweight cocktail for the early fall.

12 ounces gin
12 ounces sweet vermouth
2 ounces Luxardo maraschino
16 scant dashes Angostura bitters
1 orange

Steps:

  • Mix all ingredients together the afternoon of your dinner party. Refrigerate.
  • When guests arrive, pour the batched cocktail mixture over a large glass of ice. Stir well for 15 seconds, and strain into coupe glasses. Garnish each with an orange twist.

Frank Caiafa's modified Martinez has been a staple for years on the cocktail menu of the Peacock Alley bar in the Waldorf Astoria. The pre-Prohibition drink's flavor is rendered more complex by his using both sweet and dry vermouth (making this a "perfect" Martinez), as well as the addition of orange bitters. At the Waldorf, Mr. Caiafa barrel-ages his own gin. But for the home bartender, the Ransom or Greenhook commercial brands will do nicely. Like many of the drinks on the Peacock Alley list, it's an elegantly modernized version of a classic.

2 ounces Old Tom gin, preferably Ransom or Greenhook Ginsmiths
1 ounce sweet vermouth, preferably Martini & Rossi
3/4 ounce Noilly Prat extra-dry vermouth
1/4 ounce maraschino liqueur, preferably Luxardo
1 dash Angostura bitters
1 dash orange bitters, preferably Regans'
Lemon twist, for garnish

Steps:

  • Combine all ingredients in a mixing glass three-quarters filled with ice. Stir until chilled, about 30 seconds. Strain into a chilled cocktail glass. Garnish with lemon twist.

This classic cocktail is said to be the predecessor of the Martini. Bartender Eben Freeman developed this version at Tailor restaurant in New York City.

1/4 cup (2 ounces) sweet vermouth
2 tablespoons (1 ounce) full-flavored gin such as Junípero
1 teaspoon Maraschino liqueur
1 dash Angostura Bitters
1 cup ice cubes
1 (1-by 1/2-inch strip) lemon zest

Steps:

  • In chilled cocktail shaker or pint glass, stir together vermouth, gin, Maraschino liqueur, bitters, and ice until well combined. Strain into chilled coupe glass. Twist lemon peel over glass, drop into drink, and serve.
