- Preheat oven to 350°F. Grease the interior of an 8 inch round springform cake pan. Line the bottom with parchment paper.
- In a large bowl, add flour, baking powder, sugar. Whisk vigorously with a whisk until evenly combined.
- Add water, oil, vanilla and lemon zest (is using). Whisk until batter is smooth and no lumps remain.
- Pour cake batter into the prepared cake pan. Bake for about 40-45 minutes or until the surface of the cake is a light golden brown and toothpick inserted comes out clean. Let cake cool before slicing and serving. You can dust cake with powdered sugar if desired.

- Wash the cucumbers, quarter them lengthwise, and soak them in ice-water for 2 hours.
- Peel and slice the onions and pack them in the bottoms of 5 pint jars.
- Pack the cucumbers lengthwise in the jars.
- Combine the mustard seed, vinegar, sugar and salt, bring to a boil and boil for 1 minute.
- Fill the jars to overflowing with the boiling-hot syrup and seal.

- Preheat the oven to 180°C/360°F/Gas Mark 4, and arrange a baking tray onto the middle shelf.
- In a small bowl, mix the olive oil, water and vanilla, then set it aside until needed.
- In a large bowl sift the flour together with the baking powder, and mix well with a whisk. Add in the sugar and cocoa powder and mix well.
- Slowly pour the oil+water mix into the dry ingredients, and gently mix with a whisker until combined and lump-free. You can also add a pinch of sea salt to enhance the sweetness of the cake if you want.
- Spray with baking oil a 7-inch springform cake pan with loose base, although not necessary, I recommend placing a disk of parchment paper over the base. Pour in the cake batter and even the top using a spatula.
- Arrange the cake pan onto the middle rack and bake in the oven for about 45 minutes, then insert a toothpick in the middle of the cake. If it comes out dry, your cake is done, otherwise continue to bake for a further 5 minutes, then check again.
- Take the cake out from the oven and allow to cool completely before removing it from the pan.
- Dust generously with optional confectioner sugar if you like, and serve.

- Grease and flour 2 8" round cake pans. Preheat the oven to 350º Fahrenheit.
- In the bowl of a stand mixer, beat egg whites with baking powder until stiff peaks form.
- In a separate bowl, cream sugar with shortening until smooth.
- Add cold water, vanilla, flour, and pinch of salt. Mix well.
- Fold in whipped egg whites gently. Make sure they are completely incorporated.
- Pour batter into prepared cake pans. Bake for 30 minutes or until the cake tests done.
- Allow the cakes to cool in the pan for 5 minutes, then turn them out onto a wire rack to cool completely.

- Cream shortening. Gradually add sugar, beating until fuffy. Sift dry ingredients together. Add alternately with ice water and flavoring, if desired, to creamed shortening. Fold in stiffly beaten egg whites. Bake in 2 greased cake layer pans at 350℉ (180℃). for 30 minutes. Makes 1 layer cake.

My mom decorated cakes for years, and this is one of her best recipes. This cake is quite moist, and it doesn't "crumb," so it is great for frosting/decorating. We always choose this cake to celebrate birthdays in my family.

- 1. Beat sugar and oleo until well mixed--looks like grainy, lighter colored butter.
- 2. Add beaten eggs and melted chocolate; mix well.
- 3. Add cold water and vanilla. Mix gently. Add remaining cold water alternately with flour mixture.
- 4. Bake at 350 degrees in a greased 9x13 pan or two round pans for a layer cake.
- 5. Cake is done when a toothpick inserted into the center comes out clean.

Pour into the prepared cake pan and bake for about 40-45 minutes. Test for doneness with a toothpick, when it comes out dry it's done. Let cool completely then dust with powdered sugar.
