Cookie crescents get a tropical twist when you add refreshing orange juice and coconut. Bake these goodies any time of year and decorate them to suit the season or occasion. -Maria Benbrook, Port Monmouth, New Jersey

1/2 cup butter, softened
3/4 cup sugar
3 large eggs
1/2 cup orange juice
1-1/2 teaspoons vanilla extract
3 cups all-purpose flour
3 teaspoons baking powder
1-2/3 cups sweetened shredded coconut
ICING:
2 cups confectioners' sugar
1/4 cup 2% milk
Assorted sprinkles of your choice

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs, orange juice and vanilla. Combine flour and baking powder; gradually add to creamed mixture and mix well. Stir in coconut., Shape tablespoonfuls of dough into crescent shapes. Place 2 in. apart on ungreased baking sheets. Bake 8-10 minutes or until edges are lightly browned. Cool 1 minute before removing to wire racks to cool., In a small bowl, combine confectioners' sugar and milk. Decorate as desired with icing and sprinkles. Let stand until set.

1 teaspoon Powdered sugar, if desired

Steps:

  • Heat oven to 350 degrees F. Separate dough into 8 triangles.
  • Place tablespoon of chocolate chips on wide end of each triangle. Roll up, starting at shortest side of triangle, rolling to opposite point. Place on ungreased cookie sheet.
  • Bake at 350 degrees F. for 15 to 20 minutes or until golden brown. Sprinkle with powdered sugar.

1 cup (2 sticks) unsalted butter, room temperature
3/4 cup powdered sugar, sifted
2 teaspoons vanilla extract
2 teaspoons coconut extract
2 1/4 cups sifted all purpose flour
1 teaspoon salt
1 cup chopped, roasted, salted macadamia nuts
1 egg white, beaten to blend
1 cup sweetened shredded coconut
Additional powdered sugar

Steps:

  • Using electric mixer, beat butter in medium bowl until light. Gradually beat in 3/4 cup powdered sugar. Beat in extracts. Stir in flour and salt, then macadamia nuts. Refrigerate dough 30 minutes.
  • Preheat oven to 325°F. Line 3 large baking sheets with parchment paper. Pinch off 1 tablespoon dough; shape into 2-inch-long, 1/2-inch-thick crescent. Repeat with remaining dough. Brush crescents with egg white, then dip tops into coconut. Place crescents, coconut side up, on parchment-lined sheets, spacing cookies 1 inch apart. Bake until just barely golden brown, about 20 minutes. Cool cookies on sheets on rack. Sift additional powdered sugar over cookies. (Can be prepared 1 week ahead. Transfer cookies to airtight container and freeze. Bring to room temperature before serving.)

2 cups white sugar
8 teaspoons ground cinnamon
1 cup white sugar
1 pound margarine
2 eggs
1 cup milk
5 cups all-purpose flour
2 teaspoons baking powder
2 cups white sugar
1 teaspoon vanilla extract
2 cups water
3 tablespoons cornstarch
1 (16 ounce) package semisweet chocolate chips, melted

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease 2 baking sheets. Whisk together 2 cups sugar and the cinnamon, reserve.
  • Beat together 1 cup sugar, margarine, eggs, milk, flour, and baking powder in a large bowl to form a dough. Divide dough into 10 balls. Spread the prepared cinnamon and sugar mixture onto work surface. Use a rolling pin to roll each dough ball out on the cinnamon sugar, forming each into a 14 inch circle. Cut each circle into 8 wedges. Roll each wedge into a crescent, starting at the wide side and rolling toward the tip. Place rolls on prepared baking sheets.
  • Bake crescents in preheated oven until set and lightly browned, about 20 minutes.
  • While crescents are baking, mix together 2 cups sugar, vanilla, 2 cups water, and the cornstarch in a saucepan. Bring to a boil, and cook until thick. Brush glaze on baked crescent rolls. Allow glaze to set for 5 minutes. Drizzle melted chocolate over glazed crescents. If desired, serve warm.
