SPICED ALMONDS



Spiced Almonds image

Yield 8 servings (serving size 1/4 cup)

Number Of Ingredients 7

2 cups whole unsalted almonds
1 teaspoon ground cumin
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
2 teaspoons olive oil
1/4 teaspoon hot pepper sauce

Steps:

  • Toast the almonds in a dry skillet over a medium heat, stirring frequently, until fragrant, about 3 minutes. Transfer the almonds to a bowl.
  • In a small bowl, stir together the cumin, garlic, cayenne pepper and salt. Heat the oil in the skillet over medium heat. Stir the spices into the oil and cook, stirring until warm, about 30 seconds. Add the almonds and cook, stirring frequently, until the nuts are warm and the spices are evenly distributed. Add the hot pepper sauce and stir to distribute. Remove the almonds from the pan and allow them to cool before serving.

1/4 cup butter
2-1/2 cups whole unblanched almonds
1 cup sugar
1 teaspoon vanilla extract

Steps:

  • In a heavy saucepan, melt butter over medium-high heat. Add almonds and sugar. Cook and stir constantly for 7-8 minutes or until syrup is golden brown. Remove from the heat; stir in vanilla. , Immediately drop by clusters or separate almonds on a greased pan. Cool. Store in an airtight container.

4 sticks unsalted butter, softened
8 ounces cream cheese, room temperature
1/2 teaspoon coarse salt
1/4 cup confectioners' sugar, plus more for rolling and dusting
4 cups all-purpose flour
1 teaspoon pure vanilla extract
1 cup raspberry preserves

Steps:

  • Beat together butter, cream cheese, salt, and sugar with an electric mixer on medium-high speed until creamy. Reduce speed to low and beat in flour, 1 cup at a time, then vanilla.
  • Divide dough in half; form each half into a flat rectangle and wrap in plastic wrap. Refrigerate until firm but still pliable, about 45 minutes. Dough can be refrigerated up to 2 days. Dust 3 tablespoons sugar on a piece of parchment. Place 1 rectangle of dough on top and dust with remaining 3 tablespoons sugar. Roll out to just under 1/4-inch thick. Trim to a 12-by-16-inch rectangle and transfer on parchment to a baking sheet. Freeze until firm, about 30 minutes. Repeat with other rectangle of dough.
  • Preheat oven to 350 degrees. Slide 1 sheet of dough on parchment onto a work surface and evenly spread with preserves with a small offset spatula. Invert remaining sheet of dough on top; remove parchment and let stand until soft enough to cut but still firm. Trim edges, then cut horizontally into strips the width of a ruler. Repeat with same-size strips on the diagonal to create diamonds.
  • Freeze diamonds until firm, about 10 minutes. Transfer to baking sheets lined with clean parchment, spacing 1 inch apart. Freeze again until firm, about 10 minutes. Bake until golden, 20 to 23 minutes. Let cool on baking sheets 5 minutes, then dust with sugar. Let cool completely before removing from paper with a spatula. (Preserves may cause them to stick.) Diamonds can be made 3 days ahead and stored at room temperature.

A great festive season present. From The Best of Country Cooking 1999. Don't they look gorgeous? Hubby loves it. I added a wee bit of cinnamon with the sugar and almonds.

1/4 cup butter
2 1/2 cups unblanched whole almonds
1 cup sugar
1/4 teaspoon cinnamon (optional)
1 teaspoon vanilla extract

Steps:

  • Melt butter over medium-high heat.
  • Add sugar and almonds and cinnamon if using.
  • Stir constantly for around 10 minutes or till the sugar turns golden brown.
  • (I kept stirring till the nuts were coated and the sugar was almost all dissolved: about 15 mins but I used the smallest gas burner) Remove from heat.
  • Add extract.
  • Immediately drop in clusters or separately nuts on greased baking pan.
  • Cool.
  • Enjoy.

4 tablespoons butter, divided
2 cups blanched whole almonds
3/4 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon salt

Steps:

  • Line a baking sheet with foil. Grease the foil with 1 tablespoon butter; set aside. In a large heavy skillet, combine the almonds, sugar and remaining butter. Cook and stir over medium heat for 6-8 minutes or until sugar is golden brown., Remove from the heat; carefully stir in vanilla. Spread onto prepared baking sheet; immediately sprinkle with salt. Cool before breaking into pieces. Store in an airtight container.
