1 pound Bing cherries, pitted
1/4 cup sugar
1/4 cup kirsch
Vanilla ice cream, for serving

Steps:

  • In a large skillet, melt butter over medium heat. Add sugar and cherries; stir to combine. Cook until cherries are tender and sugar dissolves, about 5 minutes.
  • Remove skillet from heat. Add kirsch, and carefully ignite. Cook until flame is extinguished. Serve warm over vanilla ice cream.

½ cup white sugar
2 tablespoons cornstarch
¼ cup cold water
¼ cup orange juice
1 pound Bing or other dark, sweet cherries, rinsed and pitted (or use frozen pitted cherries)
½ teaspoon finely grated orange zest
¼ teaspoon cherry extract
¼ cup brandy
3 cups vanilla bean ice cream

Steps:

  • Whisk together the sugar and cornstarch in a wide saucepan. Stir in the water and orange juice; bring to a boil over medium-high heat, whisking until thickened. Stir in the cherries and orange zest, return to a boil, then reduce heat, and simmer for 10 minutes. While the cherries are cooking, spoon the ice cream into serving bowls.
  • Remove the cherries from the heat, and stir in the cherry extract. Pour in the brandy, and ignite with a long lighter. Gently shake the pan until the blue flame has extinguished itself. Spoon the cherries over the bowls of ice cream.

1 tablespoon sugar
1 tablespoon cornstarch
1/4 cup kirsch or cognac, warmed
2 pints vanilla ice cream

Steps:

  • In a small dish, combine a little cherry juice with sugar and cornstarch. In a skillet, heat juice from cherries over moderate heat. Add cornstarch mixture. When juice thickens, add cherries to warm through. Pour in warmed liqueur, then flame the pan to burn off alcohol. Remove cherries from heat. Scoop vanilla ice cream into large cocktail glasses or dessert dishes and spoon cherries down over ice cream.

3 tablespoons butter
1/4 cup brown sugar
1 tablespoon honey
1 (15-ounce) can Bing cherries in syrup
1/4 cup freshly-squeezed orange juice
3 tablespoons Kirsch liqueur
2 tablespoons Triple Sec
1/4 teaspoon ground cinnamon
1 tablespoon cornstarch
1/4 cup water
1 pint vanilla ice cream

Steps:

  • In a large saute pan over medium-high heat, add butter, sugar, and honey. Cook until sugar dissolves. Add cherries and its syrup, orange juice, Kirsch, Triple Sec and cinnamon.
  • Bring to a simmer. Prop pan to the side to ignite evaporating liqueur, or remove pan from heat, ignite with a long kitchen match. Return to the heat and continue simmering for 4 to 5 minutes. In a small bowl, mix together the cornstarch and water. Stir slurry into mixture and continue cooking until sauce thickens to desired consistency.
  • Serve warm over vanilla ice cream.

This is my favorite dessert to make at home. It's easy, and the end result is rather impressive. The key to a successful flambe is to be sure the brandy is heated over low heat. That way, it slowly reaches the appropriate temperature but retains it's alcohol content, which is important for it to ignite. For this recipe, canned Cherry Pie Filling is not a suitable substitute for canned cherries. [A little history of this dessert dish....It was well known that cherries was Queen Victoria's favorite fruit, and legendary French chef Auguste Escoffier created this impressive dish to honor Queen Victoria on the occasion of either her Golden Jubilee in1887 or her Diamond Jubilee in 1897.] This is a simplified version of this scrumptious dessert that can easily be made at home.

16 ounces canned bing cherries, pitted and drained
3/4 cup red currant jelly
1/4 teaspoon orange peel
1/4 cup cherry brandy
4 scoops vanilla ice cream
4 sprigs of fresh mint (optional)

Steps:

  • For each serving, place a scoop of ice cream in a bowl.
  • In a small skillet heat the brandy slowly over low heat.
  • In a medium skillet heat currant over low heat until melted. Add the cherries and orange peel, stirring constantly, until the mixture begins to boil.
  • Just before serving, return to small skillet and ignite the brandy with a match and let it flame for only a few seconds.
  • Pour the flaming brandy over heated cherries and stir quickly until the flame is distinguished.
  • Pour hot cherry sauce over the ice cream scoops.
  • Garnish with a sprig of fresh mint, if desired.

1/4 cup thin matchstick-size strips orange peel (orange part only)
1/3 cup kirsch (clear cherry brandy)
1 quart vanilla or cherry-vanilla-swirl ice cream

Steps:

  • Place sieve over bowl. Add thawed cherries; let drain. Pour drained juices into heavy medium skillet (set cherries aside). Mix 2 cups cherry juice, dried cherries and sugar into same skillet. Scrape in seeds from vanilla bean; add bean. Boil sauce until reduced to 1 1/2 cups, stirring occasionally, about 12 minutes. Mix arrowroot with remaining 1 tablespoon juice in small bowl. Whisk into sauce. Boil until thickened, about 1 minute. Discard vanilla bean. Mix in drained cherries and orange peel.
  • Heat kirsch in skillet over low heat. Remove from heat. Carefully ignite kirsch with match. Carefully pour flaming kirsch into sauce. Scoop ice cream into bowls. Spoon sauce over.

This is a berry version of the famous flaming cherries jubilee. Skip the alcohol and flaming step if you prefer; no additional liquid needs to be substituted for the brandy. From Kathleen Desmond Stang and Melissa Monosoff Cooking Light, JUNE 2000. I tried it with Jacques Cardin, which is 80 proof, and didn't get a very dramatic flame. Still, it was worth it, this sauce is exquisite!

1 tablespoon cornstarch
1/8 teaspoon salt
1/2 teaspoon orange rind, grated
1 1/4 cups orange juice (fresh is best, the flavor of concentrate lingers after cooking)
1 1/2 cups fresh blueberries
1 1/2 cups fresh raspberries or 1 1/2 cups strawberries
1/4 cup brandy
4 cups low-fat vanilla ice cream (We actually used Klondike bars, highly recommended!)

Steps:

  • Combine first 3 ingredients in a large skillet.
  • Briskly stir in rind and juice with a gravy whisk to prevent clumps of cornstarch; bring to a boil.
  • Cook 1 minute or until slightly thick.
  • Add berries; cook 3 minutes or until thoroughly heated.
  • Pour brandy into one side of skillet. Ignite brandy with a long match.
  • Let flames die down and spoon the berry sauce over ice cream.
