10 tablespoons (5oz/142g) butter, (melted)
¾ cup (3oz/85g) cocoa powder
1 cup (8oz/225g) granulated sugar
1 ⅓ cups (8oz/225g) dark brown sugar
1 cup (8floz/240ml) Guinness stout
¾ cup (6oz/170g) sour cream
2 large eggs ((at room temperature))
1 tablespoon vanilla extract
2 cups (10oz/284g) all-purpose flour
1 ½ teaspoons baking soda
1 teaspoon salt
½ cup (4oz/115g) butter
⅔ cup (4oz/115g) bittersweet chocolate, (finely chopped)
1 tablespoon honey or golden syrup

Steps:

  • Preheat the oven to 350°F (180°C). Butter and line with parchment a 9-inch (23cm) springform pan. Set aside.
  • In a large bowl whisk together the melted butter, cocoa powder, granulated sugar, brown sugar and the Guinness.
  • Whisk in the sour cream, and then the eggs and vanilla extract until fully combined.
  • In a separate bowl, combine the flour, baking soda, and salt. Whisk the flour mixture into the chocolate mixture until evenly mixed.
  • Pour the batter into the prepared pan and bake for 45-60 minutes, until a skewer inserted in the middle comes out clean. Let the cake cool completely in the pan.
  • While the cake is cooling, prepare the butter glaze: combine the butter, chocolate, and honey in a microwave-safe bowl or in a small saucepan and heat gently until the butter and chocolate melt. Stir together and let cool until thickened but still pourable.
  • Once the cake has cooled, transfer the cake to a serving plate and pour the glaze on the cake. Let the glaze set for an hour or two before serving if you wish.
  • Store any leftover cake in an airtight container at room temperature for up to 3 days. For longer storage, freeze in an airtight container for up to 2 months.

Steps:

  • Preheat oven to 350°. Grease a 9-in. springform pan and line the bottom with parchment; set aside., In a small saucepan, heat beer and butter until butter is melted. Remove from the heat; whisk in sugar and cocoa until blended. Combine the eggs, sour cream and vanilla; whisk into beer mixture. Combine flour and baking soda; whisk into beer mixture until smooth. Pour batter into prepared pan., Bake until a toothpick inserted in the center comes out clean, 45-50 minutes. Cool completely in pan on a wire rack. A smooth, moist, deep-flavoured cake that even non-Guinness lovers will adore due to the bitter Guinness offset by the sugar and cocoa. I've based this on the Nigella Lawson cake, however (I feel) improved on the proportions of ingredients and baking time after baking this at least a dozen times to date.

250ml Guinness stout
250g unsalted butter
75g cocoa powder
400g caster sugar
1 142ml pot of sour cream
2 eggs
1.5 tablespoon of vanilla extract
275g plain flour
2.5 teaspoons of bicarbonate of soda
250ml Guinness stout
250g unsalted butter
75g cocoa powder
400g caster sugar
1 142ml pot of sour cream

200g of cream cheese
50ml of double cream
300g icing sugar (or as much as required for desired consistency)

Steps:

  • Pre-heat your oven to 180 degrees Centigrate (170 for fan-assisted ovens), or gas mark 4. Lightly butter a 23cm push-base cake tin.
  • Measure out the Guinness, making sure to let any foam dissipate, and pour it into a wide, deep saucepan. Cut the butter into small cubes, and add it to the pan. Heat until the butter is melted into the pan - do not let it boil.
  • In a separate bowl, combine the cocoa and sugar and whisk into the butter/beer mixture, being careful not to let the sugar catch and burn.
  • Beat the eggs and sour cream together, then add to the pan.
  • In a separate bowl, combine the flour and bicarbonate of soda, then slowly whisk into the pan, introducing a little at a time so as to not form lumps. This is really easy to accidentally do due to the density of the cake.
  • Pour the batter into your pan, and bake for approximately 40 minutes. Keep an eye on your oven - I do not recommend baking this longer as this cake can burn on the outside but not cook on the inside. When a toothpick comes out of the centre clean, your cake is ready.
  • While the cake is baking, beat the double cream into the cream cheese, and begin to add your icing sugar bit by bit. Depending on what consistency you wish to achieve, you may need more icing sugar to allow the icing to 'sit' on the cake like the head of a Guinness pint.
  • Once completely cooled (this will take a while due to the cake's density), pop your cake out of the tin and ice with a spatula (I prefer a silicone one for better control).

Steps:

  • For the cake: heat oven to 350 degrees. Butter a 9-inch springform pan and line with parchment paper. In a large saucepan, combine Guinness and butter. Place over medium-low heat until butter melts, then remove from heat. Add cocoa and superfine sugar, and whisk to blend.
  • In a small bowl, combine sour cream, eggs and vanilla; mix well. Add to Guinness mixture. Add flour and baking soda, and whisk again until smooth. Pour into buttered pan, and bake until risen and firm, 45 minutes to one hour. Place pan on a wire rack and cool completely in pan.
  • For the topping: Using a food processor or by hand, mix confectioners' sugar to break up lumps. Add cream cheese and blend until smooth. Add heavy cream, and mix until smooth and spreadable.
  • Remove cake from pan and place on a platter or cake stand. Ice top of cake only, so that it resembles a frothy pint of Guinness.

Don't be alarmed by the Guinness® - it's simply used to develop the texture of the cake by making it extra dense and moist. This cake almost ends up pudding-like, and goes down a treat when served with cream or ice cream. This proves that a bakery-quality cake can be made so easily at home!

1 cup Irish stout beer (such as Guinness®)
1 cup butter
2 cups white sugar
¾ cup unsweetened cocoa powder

½ cup sour cream

1 splash vanilla extract
2 teaspoons baking soda
2 ¼ cups all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 9-inch cake pan with parchment paper; grease parchment paper.
  • Combine stout beer and butter in a large saucepan over medium-low heat; heat until butter melts and beer looks glossy, 3 to 5 minutes.
  • Remove beer mixture from heat; whisk in sugar and 3/4 cup plus 2 tablespoons cocoa powder until dissolved and smooth. Whisk in 1/2 cup plus 2 tablespoons sour cream.
