WALDORF SALAD

Steps:
- Preheat the oven to 350 degrees F.
- Spread the nuts on a baking sheet and toast in the oven for 8 to 10 minutes. Cool and break the nuts up into small pieces.
- Whisk the yogurt, mayonnaise, parsley, honey, and lemon zest in a large bowl and season generously with pepper.
- Halve, core, and cut the apples into 3/4-inch pieces, leaving the skin intact. Add the apples, celery and raisins to the bowl, and sprinkle with the lemon juice; then toss with the dressing. Cover and refrigerate if not serving immediately.
- When ready to serve, toss walnuts into the salad. Arrange the lettuce leaves on a large platter, or divide them among 4 salad plates. Place the salad on the lettuce and serve.

CHICKEN AND SPINACH WALDORF SALAD

- Preheat the oven to 350 degrees. Arrange 3 racks evenly spaced in the oven.
- Place the chicken, skin side up, on a sheet pan. Rub with olive oil, sprinkle with salt and pepper, and roast on the top rack for 35 to 40 minutes, until the internal temperature is 140 degrees. Set aside to cool, discard the skin and bones, and shred the chicken by hand into large, roughly 1 x 4-inch, pieces.
- Place the bacon on a baking rack on a second sheet pan and roast below the chicken on the second oven rack for 20 to 30 minutes, until browned. Remove to a plate lined with paper towels to cool. Cut in large dice. On a third sheet pan, combine the almonds, cashews, and walnuts and roast under the bacon for 10 to 12 minutes, tossing once, until lightly browned. Set aside to cool.
- In a medium bowl or 2-cup measuring cup, whisk together 2/3 cup of olive oil, the vinegar, mustard, honey, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper, and set aside.
- In a large serving bowl, combine the frisee, kale, spinach, raisins, Cheddar, chicken, bacon, roasted nuts, 1 teaspoon salt and 1/2 teaspoon pepper. Before serving, grate the apple and add it. Pour the dressing over the salad and toss gently. Put the eggs on top, toss lightly, and serve.
INA GARTEN WALDORF SALAD
The classic and timeless Ina Garten Waldorf Salad is always a crowd favorite especially when apples are in season! With a sweet and creamy dressing that coats apples, grapes, celery, walnuts, and more, it makes a great holiday side dish that your guests will love!

- Add the mayonnaise, Greek yogurt, sugar, lemon juice (be sure to zest the lemon before juicing it, and reserve the zest for garnishing later), optional poppy seeds, and whisk until smooth; set aside.
- Add the apples, grapes, pineapple, celery, and half of the nuts to a large bowl, drizzle the dressing evenly over top, and stir and toss to combine and coat evenly.
- Add salt to taste if desired. I recommend you add some to balance the sweetness.
- Sprinkle the remaining half of the nuts evenly over the top alongside the optional lemon zest and parsley.
- Serve the salad family-style out of the mixing bowl or on individual salad plates, minus the lettuce bed underneath, with large leaves of Bibb lettuce (or butter lettuce will work).
- Salad is best eaten fresh but can be made up to four hours ahead of time.

WALDORF SALAD
This is the original Waldorf Salad recipe which I clipped out of the newspaper several years ago. My mother made this salad often--it must have been a favorite of hers also. Newer versions have left out some of the ingredients which add variety in texture and taste. It's a classic American salad which was developed by the Waldorf Astoria Hotel in New York City.
