This recipe was passed down through my family for years. If you're looking for a great tasting, tender chicken breast, this is what you're looking for - Greek style.

4 skinless, boneless chicken breast halves
1 cup extra virgin olive oil
1 lemon, juiced
2 teaspoons crushed garlic
1 teaspoon salt
1 ½ teaspoons black pepper
⅓ teaspoon paprika

Steps:

  • Cut 3 slits in each chicken breast to allow marinade to penetrate. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, pepper, and paprika for about 30 seconds. Place chicken in a large bowl, and pour marinade over. Using your hands, work marinade into chicken. Cover, and refrigerate overnight.
  • Preheat grill for medium heat, and lightly oil grate.
  • Cook chicken on grill until meat is no longer pink and juices run clear.

This is a favorite chicken recipe, my son requests it every year for his birthday.

2 tablespoons all-purpose flour, divided
½ teaspoon salt
¼ teaspoon black pepper
¼ pound feta cheese, crumbled
1 tablespoon fresh lemon juice
1 teaspoon dried oregano
6 boneless, skinless chicken breast halves
2 tablespoons olive oil
1 ½ cups water
1 cube chicken bouillon, crumbled
2 cups loosely packed torn fresh spinach leaves
1 ripe tomato, chopped

Steps:

  • On large plate, combine 1 tablespoon flour, salt, and pepper. Set aside. In a small bowl, combine cheese, lemon juice, and oregano. Set aside.
  • With a meat mallet, pound each chicken breast to 1/2 inch thickness. Spread cheese mixture on each chicken breast, leaving 1/2 inch border. Fold chicken breasts in half; secure each with toothpick. Coat chicken breasts with flour mixture.
  • In large skillet, heat oil over medium heat. Cook chicken breasts for 1 to 2 minutes on each side, until golden. In a small bowl, whisk together 1 1/2 cups water, chicken bouillon cube, and remaining flour; pour over chicken breasts in pan. Add spinach and tomato to skillet, and bring to boil. Cover, reduce heat to low, and simmer for 8 to 10 minutes, or until chicken is no longer pink inside. Discard toothpicks before serving.

12 ounces whole onion or 11 ounces chopped (ready cut) onions (21/3 cups)
2 teaspoons olive oil
1 clove garlic
8 ounces skinless boneless chicken breasts
1/2 teaspoon ground cinnamon
Freshly ground black pepper to taste
4 ounces penne or other tubular pasta
2 cups crushed canned no-salt- added tomatoes
3 tablespoons (1/2 6-ounce can) tomato paste
1 bay leaf
1 teaspoon sugar

Steps:

  • Bring water to boil for pasta in covered pot.
  • Chop whole onion.
  • Heat oil in nonstick skillet and saute onion over medium-high heat.
  • With food processor running, put garlic through feed tube, and mince; add to onions.
  • Wash, dry and cut chicken breasts into julienne strips. Sprinkle with cinnamon and pepper on both sides; add to onions, and cook until chicken is browned on both sides.
  • Cook pasta in boiling water according to package directions.
  • When chicken is browned, add tomatoes, tomato paste, bay leaf and sugar; reduce heat, and simmer chicken until flavors have a chance to blend.
  • When pasta is ready, drain. Remove bay leaf from pasta sauce and spoon sauce over pasta.

4 green onions (diced)
6 boneless chicken thighs

1 cup grape tomatoes
1/2 cup black olives
1 lemon (juiced)
1 lemon (zest)
2 tablespoons parsley
4 tablespoons feta cheese

Steps:

  • Combine onions and garlic in oil, saute a few minutes; remove from heat.
  • Season thighs with salt, pepper,garlic poweder and oregano; cook in a medium hot skillet about 2-3 minutes until they are golden brown, turn over, add onion & garlic mixture,lemon juice and zest and 1 T. parsley, cook another 3 minutes.
  • Place chicken in a baking dish, top with olives and tomatoes.
  • Roast 15-20 minutes until chicken juices run clear.
  • Remove from oven; top with parsley and feta cheese, serve.
