GREEK STYLE GARLIC CHICKEN BREAST
This recipe was passed down through my family for years. If you're looking for a great tasting, tender chicken breast, this is what you're looking for - Greek style.

Steps:
- Cut 3 slits in each chicken breast to allow marinade to penetrate. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, pepper, and paprika for about 30 seconds. Place chicken in a large bowl, and pour marinade over. Using your hands, work marinade into chicken. Cover, and refrigerate overnight.
- Preheat grill for medium heat, and lightly oil grate.
- Cook chicken on grill until meat is no longer pink and juices run clear.

COUSIN COSMO'S GREEK CHICKEN
This is a favorite chicken recipe, my son requests it every year for his birthday.

- On large plate, combine 1 tablespoon flour, salt, and pepper. Set aside. In a small bowl, combine cheese, lemon juice, and oregano. Set aside.
- With a meat mallet, pound each chicken breast to 1/2 inch thickness. Spread cheese mixture on each chicken breast, leaving 1/2 inch border. Fold chicken breasts in half; secure each with toothpick. Coat chicken breasts with flour mixture.
- In large skillet, heat oil over medium heat. Cook chicken breasts for 1 to 2 minutes on each side, until golden. In a small bowl, whisk together 1 1/2 cups water, chicken bouillon cube, and remaining flour; pour over chicken breasts in pan. Add spinach and tomato to skillet, and bring to boil. Cover, reduce heat to low, and simmer for 8 to 10 minutes, or until chicken is no longer pink inside. Discard toothpicks before serving.

ROASTED GREEK STYLE CHICKEN
Sometimes simplicity produces the best flavor. The preparation time does not include the 1 hour marinade time. Marinade in the fridge.

- Marinate the chicken in the oil, lemon juice & oregano for an hour.
- Rub some of the marinade inside the bird.
- Bake at 375 for 1 hour or until done.

GREEK-STYLE CHICKEN

Steps:
- Bring water to boil for pasta in covered pot.
- Chop whole onion.
- Heat oil in nonstick skillet and saute onion over medium-high heat.
- With food processor running, put garlic through feed tube, and mince; add to onions.
- Wash, dry and cut chicken breasts into julienne strips. Sprinkle with cinnamon and pepper on both sides; add to onions, and cook until chicken is browned on both sides.
- Cook pasta in boiling water according to package directions.
- When chicken is browned, add tomatoes, tomato paste, bay leaf and sugar; reduce heat, and simmer chicken until flavors have a chance to blend.
- When pasta is ready, drain. Remove bay leaf from pasta sauce and spoon sauce over pasta.

Steps:
- Combine onions and garlic in oil, saute a few minutes; remove from heat.
- Season thighs with salt, pepper,garlic poweder and oregano; cook in a medium hot skillet about 2-3 minutes until they are golden brown, turn over, add onion & garlic mixture,lemon juice and zest and 1 T. parsley, cook another 3 minutes.
- Place chicken in a baking dish, top with olives and tomatoes.
- Roast 15-20 minutes until chicken juices run clear.
- Remove from oven; top with parsley and feta cheese, serve.
