- Preheat the oven to 300 degrees F and line a baking sheet with parchment paper.
- Stir together the rolled oats, chia seeds, almonds, cherries, coconut flakes, both types of raisins, the sunflower seeds, walnuts, maple syrup, cinnamon and vanilla in a large bowl. Pour onto the prepared baking sheet and season with salt.
- Bake, stirring after 15 minutes, until the nuts are golden brown, about 30 minutes total. Let cool and add to your favorite yogurt!

Steps:
- To begin making the Instant Granola Recipe, prep all the ingredients and keep ready
- In a large mixing bowl, add all the ingredients and toss well to combine.
- Place the granola mixture into a microwave safe glass tray and microwave for one minute.
- Remove the instant granola mixture from the oven - give it a stir and microwave yet again for a minute or two until you notice the oats are getting crisp.
- Mix well to see if the oats are well cooked, if not microwave for another 30 seconds to a minute.
- To serve the granola with yogurt - whisk the hung curd along with vanilla and honey.
- To serve the Instant Granola , Spoon a few tablespoons of yogurt in a bowl , spoon a few tablespoons of the granola and top it with fresh fruits and serve.

NUTS & SEEDS GRANOLA

Steps:
- Heat the oven to 180C/160C fan gas 4. Line a large baking sheet with baking parchment to prevent the granola from sticking. Put all of the dry ingredients in a large mixing bowl. Whisk together the almond extract, vegetable oil and maple syrup in a jug, then pour into the bowl with the dry ingredients.
- Mix together well, making sure that all the dry ingredients are well coated and that there are no dry bits. Tip the mixture onto the lined baking sheet and spread out in an even layer. Cook for about 25-30 mins until golden. You will need to give the mixture a few turns every 8-10 mins to make sure it dries out evenly and doesn't clump together too much. Keep an eye on it as nuts can burn easily.
- Remove from the oven and leave to cool completely on the tray. Break up any large clumps of granola with a wooden spoon. Will keep for up to one month in an airtight container. Serve with milk or yogurt, and fresh seasonal fruit, if you like.
