- Combine water, garlic, bay leaf, and salt inside a multi-functional pressure cooker (such as Instant Pot®). Place steamer in the pot. Add artichokes, trimmed top facing up; drizzle with lemon juice. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove lid.
- Cool until easily handled. Pull off outer petals one at a time. Pull through teeth to remove the soft portion of the petal. Discard remaining petal. Spoon out fuzzy center near the stem and discard. Eat the bottom whole or cut into pieces.

SIMPLE STEAMED ARTICHOKES
These steamed artichokes are delicious and light, perfect for an appetizer. Dip the leaves in melted butter or mayonnaise.

Steps:
- Cut stem from artichokes and discard, making sure the bottom of each artichoke is flat. Cut top 1 inch (or so) of the artichoke and discard. Snip the thorny ends from each artichoke leaf with a pair of kitchen scissors.
- Fill the bottom of a pot with a couple of inches of water, adding garlic, lemon juice, and bay leaf to the water. Place a steamer basket in the pot, making sure that the water does not flow over the bottom of the steamer basket.
- Place the artichokes in the basket, resting on the flattened bottoms.
- Bring water to a boil, cover the pot, and cook until the leaves can be easily pulled from the artichoke, 20 to 30 minutes.

- Pour the water, garlic cloves and bay leaf into your Instant Pot, and place the steamer basket on the bottom of the pot.
- Rub the lemon wedge all over the outside of the trimmed artichokes. (This helps add flavor and prevent browning/oxidizing.) Place the artichokes in a single layer on top of the steamer basket, and toss the lemon wedge in the water below. Close lid securely and set the vent to “Sealing”.
- Press “Manual”, then press “Pressure” until the light on “High Pressure” lights up, then adjust the +/- buttons until time reads 10 minutes*. Cook. Then very carefully, turn the vent to “Venting” for quick release, and wait until all of the steam has released and the valve has dropped. Remove the lid.
- Carefully use a pair of tongs to remove the artichokes from the Instant Pot, and serve immediately with your desired dipping sauce. Enjoy!

- Prep the artichokes by removing the outer leaves, and trimming about 1/2 inch off the top. Remove the stem so the artichokes can sit upright.
- Pour the water into the bottom of the Instant Pot and insert the steam trivet. Arrange the artichokes, stem side down, on the trivet so they sit upright.
- Secure the lid of the Instant Pot. Select manual and cook on high pressure for 12 minutes. Use a quick release.

- To prep, the artichokes just trim off the leaves all around the artichoke. Slice off the tip of the artichoke using a serrated knife, remove the small leaves at the stem, and cut off the long stem. Peel off the stem using a vegetable grater, and finally, rinse the artichokes under tap water to get rid of any dirt.
- Add a trivet to the Instant Pot, or a steamer basket if you have it. And add the artichokes to sit on the trivet or in the steamer basket.
- Cover with the lid, seal the valve, and pressure cook on high for 15 minutes (for medium artichokes). When the cooking ends, quickly release the steam.
