INSTANT POT® TERIYAKI-GLAZED CARROTS
These tasty glazed carrots are a quick side dish as they cook in the Instant Pot®. While you can use ready-made teriyaki sauce, I prefer to make mine from scratch.

Steps:
- Whisk together soy sauce, water, rice wine, white sugar, brown sugar, garlic, ginger, and cornstarch in a multi-functional pressure cooker (such as Instant Pot®). Add carrots and toss to coat.
- Close and lock the lid. Turn on Instant Pot® and select high pressure according to manufacturer's instructions. Set timer for 2 minutes. Allow about 10 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Serve carrots sprinkled with toasted sesame seeds.

Steps:
- Whisk 2 tablespoons honey, sriracha, garlic, salt, and water together in a large bowl. Add carrots and stir to combine.
- Transfer coated carrots to a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 1 minute. Allow 10 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Using a slotted spoon, transfer carrots to a serving dish.
- Turn on Instant Pot® again and select Saute function. Add remaining 2 tablespoons honey to the pot. Cook and whisk until slightly thickened, about 5 minutes. Pour glaze over carrots and serve immediately.

Steps:
- Add cut carrots and water to the Instant Pot.
- Close the lid, set valve to SEALING and cook on MANUAL OR HIGH PRESSURE for 3 minutes.
- After cooking is done, do a quick release and remove the lid.
- Drain excess water.
- Add olive oil, honey, salt and pepper to the Instant Pot and toss to coat carrots.
- Garnish with parsley, if desired.
- Serve immediately.

INSTANT POT CARROTS
Steps:
- Pressure Cook Carrots: Pour 1 cup (250ml) cold water, then place a stainless steel steamer basket in Instant Pot. Add 1 lb (454g) carrots in steamer basket. Pressure Cook at High Pressure for 2 minutes, then Quick Release.
- Make Buttery Sweet Carrots: Set aside the pressure cooked carrots. Discard the water in inner pot. Towel dry inner pot, then heat up the Instant Pot using the "Saute" button. Once the indicator says HOT, add in 2 tbsp (28g) unsalted butter. Add in the cooked carrots, 2 tbsp (25g) brown sugar, and ½ tsp (2.8g) table salt. Saute for roughly 2 minutes until the sugar melts and coat the carrots.

- Select the "saute" setting on the Instant Pot. Melt the butter flavored coconut oil then add in the carrots.
- Top carrots with brown sugar, honey and dill. Pour water on top, and mix well. Place the lid on the Instant Pot. Select "steam" for 4 minutes (with pressure valved in the "sealing" position). Close the Instant Pot and let the carrots cook. When they are done do a quick pressure release.

- Wash and Peel potatoes, then dice into large chunks. Add them to the Instant Pot liner with 1 cup chicken broth.
- Gently mix together all the meatloaf ingredients and divide between 7-8 silicone muffin liners (or one small loaf pan/cake pan/aluminum foil bowl that fits inside the Instant Pot).
