IRISH BUTTERMILK SCONES / CHEESE & HERB SCONES
Perfect to go with your morning coffee or a great afternoon snack with hot tea. The secret to making good scones is a quick, light hand when mixing, and a hot oven.

Steps:
- Preheat oven to 450°F (gas mark 8).
- Sift flour with salt and rub in butter or margarine.
- For Cheese& Herb Scones add mustard, cheese and herbs to the dry ingredients at this point.
- Make a well in the centre and pour in the egg and most of the buttermilk.
- Mix quickly to form a soft dough, adding a little extra buttermilk if necessary.
- Turn out onto a floured surface and roll out lightly until 1" thick.
- Working quickly, cut into 2" rounds.
- Glaze with egg or milk and set on a floured baking sheet.
- Before baking, dust scones with cinnamon sugar for Buttermilk Scones or sprinkle a little grated cheese on top of each scone for Cheese& Herb Scones.
- Bake for 15-20 minutes until light brown.
IRISH SCONES

- Preheat oven to 400 degrees. In a large bowl, sift together flour, baking soda, and cream of tartar. Add softened butter and sugar, mix well. Stir in milk or buttermilk. Also stir in raisins or dried fruit. Press dough onto a floured surface and roll out gently to 1/2-inch thickness. Cut scones into round shapes or triangles. Brush scones with egg wash for shine. Bake for 20 minutes or until golden brown.
BUTTERMILK SCONES
This basic scone recipe can be adapted by adding chopped dried fruit or grated cheese.

- Preheat oven to 425 degrees F (220 degrees C).
- In a large mixing bowl, sift together flour, baking powder and salt. Add butter and buttermilk; stir until a soft dough is formed.
- Turn the dough out onto a lightly floured surface and press dough into a rectangle about 3/4 inch thick and 4 inches wide. Cut into 8 even sized pieces.
- Place the scones on a lightly greased baking sheet and bake at 425 degrees F (220 degrees C) for 10 to 15 minutes, or until golden brown.

Steps:
- Heat oven to 400 degrees.
- Lightly grease cookie sheet. In a large bowl, combine flour, parsley, sugar, thyme, baking powder, rosemary and salt; mix well.
- With pastry blender or fork, cut in butter until mixture resembles coarse crumbs.
- Stir in milk and egg just until moistened.
- On floured surface, gently knead dough 10 times.
- Place on cookie sheet; roll or pat dough into a 6" round.
- Cut 8 wedges; separate slightly.
- Bake for 15-20 min.

CHEESE AND HERB SCONES

- Preheat the oven to 230 C / 210 C Fan / Gas 8. Line a baking tray with parchment.
- Put the flour, baking powder, salt, dried herbs, mustard and cheese into a mixing bowl and mix until well combined. Add the butter and and rub through with your fingers until the mixture resembles breadcrumbs.
- Make a well in the middle of the flour mixture and pour in a little at a time the water and milk and stir until the mixture forms a ball and until you have ran out of milk and water. (If the mixture looks dry add a tiny bit of water but not so that it looks wet.)
- Knead for about 2 minutes on a floured surface. Roll the dough out on a floured surface and cut into twelve 7.5cm (3 in) rounds and put on your baking tray. Try to cut the scones as close together as you can so you can fit more scones out of the mixture. Re-roll the dough and cut more scones until you have no dough left.
- Bake in the oven for about 17 minutes. Keep an eye on your scones to make sure that they do not burn!
