This was my mother-in-law's recipe and my husband's favorite. Shorten or lengthen the cooking time for a softer or crisper cookie.

¾ cup margarine
1 cup white sugar
1 egg
¼ cup molasses
2 cups all-purpose flour
1 tablespoon ground ginger
1 teaspoon ground cinnamon
2 teaspoons baking soda
½ teaspoon salt
½ cup white sugar for decoration

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream together the margarine and 1 cup white sugar until smooth. Beat in the egg and molasses until well blended. Combine the flour, ginger, cinnamon, baking soda and salt; stir into the molasses mixture to form a dough. Roll dough into 1 inch balls and roll the balls in the remaining sugar. Place cookies 2 inches apart onto ungreased cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.

4 ounces neufatchel cream cheese (low-fat)
1 cup sugar
1 large egg, room temperature
1/4 teaspoon sea salt
2 cups flour
1/2 teaspoon baking soda
1 teaspoon ground ginger
1 teaspoon ground cloves
1 teaspoon ground cinnamon
1/2 cup raw sugar, reserved

Steps:

  • Preheat oven to 350 degrees.
  • Spray cookie sheet with cooking spray; set aside.
  • Cream butter and cream cheese until smooth.
  • Add sugar; mix well. Add egg; mix until light and fluffy.
  • Add salt, baking soda, and spices; mix well.
  • Add flour 1 cup at a time; mix just until incorporated.
  • Pour raw sugar into a small bowl, roll dough into small balls (I used a small cookie scoop), roll in sugar.
  • Press with the bottom of a glass to 1/4 inch thick.
  • Bake 8-10 minutes; until the bottoms are lightly browned but the tops are white. Don't over bake.
  • Cool and enjoy.
  • Store in a tightly closed container.

20 gingersnap cookies
3 tablespoons butter, melted
1 cup heavy cream
1 tablespoon sugar
2 tablespoons instant espresso powder
1 (14-ounce) can sweetened condensed milk
1/2 cup Irish cream (recommended: Baileys Irish Cream)

Steps:

  • Line the ramekins with plastic wrap creating a shell and leaving long flaps to cover the ramekins later. In a food processer, pulse gingersnap cookies with melted butter until small crumbs form for the crust. Press half the cookie crumb mixture, dividing evenly, firmly into the bottom of each ramekin. Reserve the other half of the crumb mixture for the topping.
  • In a large bowl, whisk heavy cream with sugar until soft peaks form. In a separate large bowl, add the espresso powder and condensed milk and blend until espresso powder is dissolved. Whisk in Irish cream then fold in whipped cream. Pour evenly into the ramekins. Top with remaining gingersnap crumbs and cover with the extra plastic wrap, pressing to compact mixture. Freeze until set, about 5 hours. To serve, remove plastic wrap from top and then gently turn ramekins over to release dessert onto a serving plate. Gently remove plastic wrap.

In 1998, I was invited by Pat Adrian, director of the Good Cook division of the Book of the Month Club, to judge the group's annual office baking contest. There were luscious cakes, pies and cookies of all types, but these gingersnaps were the hands-down winners. Julie Ellis-Clayton, the winner of the contest, was kind enough to share her recipe with me.

2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
2 teaspoons ground ginger
1/2 teaspoon ground cloves
12 tablespoons (1 1/2 sticks) unsalted butter
1 cup sugar
1 large egg
1/4 cup molasses
1/2 cup sugar in a shallow bowl, for finishing

Steps:

  • Set racks in the upper and lower thirds of the oven and preheat to 350 degrees. Combine the flour, baking soda, salt, and spices in a bowl; stir well to mix. In the bowl of a standing electric mixer fitted with the paddle attachment, beat together on medium speed the butter and sugar for about 5 minutes until very light, fluffy and whitened. Add the egg and continue beating until smooth. Lower speed and beat in half the dry ingredients, then the molasses. Stop the mixer and scrape down bowl and beater. Beat in the remaining dry ingredients. Remove bowl from mixer and use a large rubber spatula to finish mixing the dough. Use a small ice cream scoop to scoop out 1-inch diameter pieces of dough. Roll into balls between the palms of your the hands, then roll in the sugar. Place the balls of dough on the prepared pans leaving about 3 inches all around each, to allow for spreading. Bake the cookies for about 15 to 20 minutes, or until they have spread, the surface has crackled, and they are firm to the touch. Slide the papers from the pans to racks. Store the cooled cookies between sheets of parchment or waxed paper in a tin or platic container witha tight-fitting cover.

1 1/2 teaspoons baking soda

1/4 cup lyle's golden syrup
3/4 cup unsalted butter, melted and cooled
1 large egg

Steps:

  • Make dough:.
  • Whisk together flour, five-spice powder, baking soda, and salt in a small bowl.
  • Pulse ginger with 1/4 cup sugar in a food processor until finely ground.
  • Add syrup, butter, egg, and remaining 3/4 cup sugar to processor and blend until mixture is thick and creamy, about 3 minutes. Add flour mixture and pulse just until a dough forms. Form dough into a disk and chill, wrapped in plastic wrap, at least 8 hours to allow flavors to develop.
  • Bake and ice cookies:.
  • Put oven rack in middle position and preheat oven to 325°F Line 2 large baking sheets with parchment paper.
  • Quarter dough. Keeping remaining 3 pieces wrapped in plastic wrap and chilled, roll out 1 piece of dough on a lightly floured sheet of wax paper with a lightly floured rolling pin to 3/4 inch thick. (If dough becomes too soft to roll out, chill on wax paper until firm.) Cut out rounds with cutter and transfer to 1 lined baking sheet, arranging cookies about 2 inches apart.
  • Bake cookies until slightly puffed and a shade darker, 10 to 12 minutes. Cool 5 minutes on sheet. If desired, make holes with piping tip near edges to hang cookies, then transfer cookies (still on parchment) to a rack to cool completely. (Cookies will flatten slightly as they cool.).
  • While first batch is baking, roll out and cut another batch, arranging cookies on second lined sheet. Bake in same manner, then gather scraps and chill until dough is firm enough to reroll, 15 to 20 minutes. Make more cookies with scraps (reroll scraps only once) and remaining pieces of dough, cooling sheets and lining them with fresh parchment before using.
  • If using icing and coloring it, transfer small batches of icing to small bowls, 1 for each color, and tint with food coloring. Spoon each color of icing into a separate pastry bag, pressing out excess air. Twist bag firmly just above icing, then decoratively pipe icing onto cookies. Let icing dry completely (about 1 hour, depending on humidity) before serving or storing cookies.
  • Cooks' notes:.
  • • Cookies are best when dough is chilled 8 hours to allow flavors to develop, but if you're in a hurry, dough can be chilled just 2 hours. Dough can be chilled up to 3 days.
  • • Using a pastry bag fitted with a piping tip results in cleaner lines of icing, but you can use small sealable plastic bags. Spoon each color of icing into a separate sealable bag, pressing out excess air, and snip an 3/4-inch opening in 1 bottom corner of each bag.
  • • Cookies keep, layered between sheets of parchment if iced, in an airtight container at room temperature 5 days.

1 lemons, zest of or 1 orange, zest of, if using orange marmalade
1/2 teaspoon ground ginger
2 tablespoons caster sugar (superfine sugar, but granulated is an OK substitute)
10 fluid ounces heavy cream, well chilled
2 egg whites

Steps:

  • Thoroughly mix the marmalade and ground ginger.
  • Put the whiskey, marmalade mix, lemon (or orange) rind and sugar in a bowl.
  • Stir well, then leave the mixture to stand for at least 15 minutes.
  • Stir the cream slowly into the whisky mixture until evenly blended, then beat with an electric or rotary beater until thick.
  • Beat the egg whites until stiff, and then fold into the cream mixture until well blended.
  • Spoon into 4 individual wine glasses or sundae dishes, then chill in the refrigerator for at least 30 minutes.
