Irish Meatloaf with Cabbage Cream Sauce image

Provided by Food Network

Categories     main-dish

Time 2h15m

Yield 1 large meatloaf

Number Of Ingredients 24

5 pounds ground beef
2 pounds ground lamb
1 pound Irish white pudding, diced
2 cups shredded Irish Cheddar
2 tablespoons Montreal steak seasoning
2 tablespoons granulated onion
2 tablespoons black pepper
1 tablespoon dried basil
1 tablespoon curry powder
1 tablespoon dried oregano
1 tablespoon salt
6 eggs
1 onion, diced fine
6 to 7 cups panko breadcrumbs
Cabbage leaves, for cooking
Celery sticks, for cooking
Cabbage Cream Sauce, recipe follows
2 tablespoons canola oil
2 tablespoons chopped garlic
1/2 head green cabbage, shredded
2 cups sherry
6 cups heavy cream
Salt and pepper
1 stick (8 tablespoons) butter

Steps:

  • Preheat the oven to 400 degrees F.
  • Mix together the ground beef, lamb, white pudding, Cheddar, Montreal seasoning, granulated onion, pepper, basil, curry powder, oregano, salt, eggs and onions until well mixed. Add the breadcrumbs and mix well. Let stand for 5 to 10 minutes. Shape into a log.
  • On a baking sheet, put some large cabbage leaves down for the meatloaf to cook on. Place some celery sticks on top of the meatloaf (to keep the aluminum foil off of the top of the meatloaf), cover with foil and bake for 45 minutes. Remove the foil and continue to bake to let it crisp up, about 15 minutes more.
  • Slice and serve with the Cabbage Cream Sauce on the side.
  • Heat a medium pot and add the oil. Brown the garlic, and then add the cabbage and saute until translucent. Deglaze the pot with the sherry, and then simmer until reduced by about half. Add the heavy cream and reduce by half again. Add salt and pepper to taste. Fold in the butter and serve hot.

CABBAGE LASAGNA

Cabbage Lasagna image

A very filling, low-carb lasagna that uses cabbage leaves in place of lasagna noodles. We find it every bit as good if not better than lasagna with pasta.

Provided by Ginn

Categories     World Cuisine Recipes     European     Italian

Time 2h30m

Yield 12

Number Of Ingredients 20

1 pound lean ground beef
1 medium onion, chopped
1 tablespoon minced garlic
½ cup grated carrots
4 ounces mushroom pieces
1 pound canned tomatoes
1 tablespoon dried basil
1 teaspoon white sugar
1 teaspoon salt
½ teaspoon thyme
¼ teaspoon nutmeg
1 head cabbage
24 ounces low-fat cottage cheese
½ cup grated Parmesan cheese
1 tablespoon parsley
1 ½ teaspoons salt
1 teaspoon oregano
cooking spray
2 cups grated part-skim mozzarella cheese
½ cup grated Parmesan cheese

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, and garlic in the hot skillet until meat is browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add carrots and mushrooms. Add tomatoes and break up using a fork. Add basil, sugar, 1 teaspoon salt, thyme, and nutmeg. Reduce heat and simmer meat sauce for 30 minutes.
  • Meanwhile, bring a large pot of water to a boil. Immerse cabbage in the boiling water and carefully break off leaves. Cook until leaves are limp, about 3 minutes. Drain.
  • Combine cottage cheese, 1/2 cup Parmesan cheese, parsley, 1 1/2 teaspoons salt, and oregano in a bowl and set aside.
  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13-inch baking pan with cooking spray and place a layer of cooked cabbage leaves flat in the bottom.
  • Reserve 1/4 cup of meat sauce. Layer 1/2 the remaining sauce on top of the cabbage leaves in the baking pan. Layer 1/2 the cottage cheese mixture followed by 1/2 the mozzarella cheese. Add a second layer of cabbage leaves, followed by remaining 1/2 of meat sauce, remaining cottage cheese mixture, and mozzarella cheese. Sprinkle reserved 1/4 cup meat sauce on top and finish with 1/2 cup Parmesan cheese.
  • Bake in the preheated oven for 45 minutes. Remove from the oven and let sit 15 minutes before slicing.

IRISH LASAGNA

Irish Lasagna image

My wife and I came up with this recipe. It is relatively simple to make, although it is a little time consuming, but the results are well worth the time.

Provided by foreveryoung001

Categories     Potato

Time 1h25m

Yield 6 serving(s)

Number Of Ingredients 7

8 -10 potatoes, medium to large size (peeled)
1 1/2 lbs cheese (shredded, we use Colby-Jack but any cheese will work)
1 lb bacon
5 green onions (finely chopped)
1/2 cup onion (chopped)
2 teaspoons olive oil
salt, pepper, garlic powder

Steps:

  • Set aside 1/2 cup of cheese.
  • Slice potatoes. slices should be about an 1/8 inch thick.
  • We like to deep fry the potato slices, although you can use any cooking method that you prefer. The goal is to get them cooked, without having them fall apart. We've found deep frying to be the easiest method.
  • Fry the chopped onion in the olive oil. If you like your green onions cooked, you can cook them up with your regular onion.
  • Cook bacon until crisp, then chop into bacon bits.
  • Use a large cake pan (lasagna pan).
  • Put a layer of cooked potatoes on the bottom of the pan, then sprinkle some onions, green onions, and bacon bits on top of the potatoes.
  • add a sprinkle of salt, pepper, and just a hint of garlic.
  • now sprinkle some cheese on top.
  • that completes one layer. add another layer of potato slices, then more onions, green onions, etc --
  • keep going until you reach the top of the pan or until you run out of ingredients.
  • The very top layer should be only potatoes.
  • Bake at 350 for 25-30 minutes, or until all of the cheese is meted throughout.
  • Take the 1/2 cup of cheese you set aside earlier, and sprinkle on top.
  • Return to oven until top layer of cheese is melted.
  • cut and serve like regular lasagna.
