IRISH POTATO CANDY
A cute little confection that looks just like little potatoes. This kind does not contain potatoes; they are made using cream cheese and coconut.

Steps:
- In a medium bowl, beat the butter and cream cheese together until smooth. Add the vanilla and confectioners' sugar; beat until smooth. Using your hands if necessary, mix in the coconut. Roll into balls or potato shapes, and roll in the cinnamon. Place onto a cookie sheet and chill to set. If desired, roll potatoes in cinnamon again for darker color.

IRISH POTATO CANDY
These do contain potato, but they don't contain coconut! I made this for Saint Patrick's Day with my class years ago when I was in third grade. Later, right before I graduated from high school, I tracked down my former teacher and got her to give me this recipe. It's easy and fun for kids, and making them was such a wonderful memory for me.

Steps:
- Combine mashed potatoes and vanilla.
- Adding one cup at a time, blend in enough confectioners' sugar to form stiff, non-sticky dough. (Just how much sugar is needed will depend on moisture of potatoes. Baked potatoes tend to be drier than boiled; leftovers tend to be drier than fresh.)
- Working with about 1 teaspoon of mixture for each candy, shape into small irregular spheres (like new potatoes) and set out on wax paper to dry slightly before coating.
- Toss candies a few at a time, in a plastic bag with ground cinnamon.
- Shake off excess cinnamon.
- Store candies in cool place or refrigerate.

PEANUT BUTTER POTATO CANDY
This simple Peanut Butter Potato Candy is an old fashioned Irish treat made with only 3 ingredients, it's gluten-free and doesn't require any baking!

- In a small pot of boiling water, cook the potato until tender. Drain and transfer to a bowl; mash until smooth and lump-free. Let cool completely.
- With an electric mixer on low speed, beat together the potato and powdered sugar, one cup at a time, until mixture is thick and the pearly dough forms.
- Transfer the dough onto a large sheet of parchment paper sprinkled with powdered sugar; dust more powdered sugar on top. Using a rolling pin, roll the dough into a large rectangular shape, approximately 1/4-inch thick; trim to form straight edges.
- Spread peanut butter over dough (see recipe notes). Starting at one long side, tightly roll up candy, jelly-roll style, using parchment paper as a guide. Wrap in parchment paper or plastic wrap, and freeze or refrigerate for 30-60 minutes.
- Unwrap and cut candy into 1/4-inch thick pieces. Enjoy! (See the post for storing the leftover candy)

Steps:
- Combine mashed potatoes, milk, vanilla extract, and salt in a bowl.
- Stir confectioners' sugar into potato mixture until a dough consistency is reached. Refrigerate dough until chilled, about 1 hour.
- Sprinkle confectioners' sugar on a cutting board or waxed paper.
- Roll dough into a large rectangular shape on prepared surface.
- Spread enough peanut butter on top layer of dough to cover.
- Roll dough into a jelly roll shape; refrigerate roll for 1 hour. Slice dough into pinwheels to serve.

- Place potato into a saucepan with enough water to cover and bring to a boil. Reduce heat to medium-low and cook potato for about 15 minutes until very tender. Drain and allow to steam dry for a minute or two.
- Gradually stir confectioners' sugar into mashed potato a little at a time until the mixture forms a stiff dough. The dough will be runny until all the powdered sugar is used.
- Place a large square of waxed paper onto a work surface. Roll or press dough into a 12-inch square rectangle on the waxed paper.
