The Best Caramel Sauce Recipe (with Whiskey) image

This is the very best caramel sauce recipe - and the secret ingredient is a touch of whiskey. I use this sauce in recipes, over ice cream, and on top of desserts.

1/4 cup Whiskey
1 cup Brown Sugar
1/2 cup Butter
1/2 cup Heavy Cream
1/2 teaspoon Salt
1 tablespoon Vanilla

Steps:

  • Melt the butter in a saucepan over medium heat. Then add the sugar and whisk until melted.
  • Add the whiskey, salt, and vanilla. Let simmer steadily for 5 minutes, stirring frequently.
  • Add the cream and let the sauce slowly simmer and reduce for 20-25 minutes, until it has thickened. Stir every few minutes. You want the caramel to be thick enough to for a thick layer to stick on the back of a spoon.
  • Pour the sauce into mason jars and store in the fridge for up to a week, or use it in a recipe.

1½ cups Sugar
2/3 cup Water
¼ cup (½ stick) Butter
2 oz Cream cheese
¼ cup Irish whiskey
¼ cup Cream or milk

Steps:

  • Combine sugar and water in a small heavy saucepan and cook over medium-high heat until sugar dissolves, stirring constantly. Continue to cook without stirring until golden (about 15 minutes). Remove from heat and carefully add butter and cream cheese, stirring constantly with a whisk. It will be very hot and will bubble vigorously. Cool slightly before stirring in whiskey and cream (or milk). Drizzle over warm bread pudding and serve.

For coffee nut crisp:
1 large egg white
1/4 cup packed light brown sugar
1/2 teaspoon instant coffee granules, crushed
1 cup walnut pieces (3 1/2 ounces), coarsely chopped if desired
For sauce:
1 cup granulated sugar
1/4 cup water
6 Tablespoons Irish whiskey
1/4 cup heavy cream
1/4 teaspoon salt
2 pints good-quality coffee ice cream

Steps:

  • Make crisps:
  • Preheat oven to 325°F with rack in middle. Line a rimmed sheet pan with a nonstick baking liner, or line it with foil and lightly oil foil.
  • Whisk egg white with sugar, coffee powder, and a pinch of salt in a bowl until blended. Stir in walnuts until coated. Spread mixture into a 10- by 8-inch rectangle in pan.
  • Bake until crisp is dry to the touch, 20 to 25 minutes. Transfer pan to a rack to cool completely.
  • Loosen crisp with a metal spatula and break into small pieces.
  • Make sauce:
  • Bring sugar and water to a boil in a 2-quart heavy saucepan over medium-high heat, stirring until sugar is dissolved. Boil without stirring, but washing down any sugar crystals with a brush dipped in cold water, until syrup begins to turn golden, about 5 minutes. Continue to boil, swirling pan occasionally, until syrup is a deep golden caramel.
  • Remove pan from heat and carefully add whiskey, cream, and salt (mixture will bubble up and steam and caramel will harden).
  • Return pan to heat and simmer, stirring, until caramel is dissolved and sauce is smooth. Cool to warm.
  • Serve sauce over scoops of coffee ice cream then sprinkle with walnut crisp.

1/2 teaspoon coarse salt
16 ounces day old French bread, cut into 1/2 inch cubes
2 teaspoons ground cinnamon
1 1/2 cups granulated sugar
1/4 cup butter, cubed
2 ounces cream cheese, cubed
1/4 cup whiskey
1/4 cup milk
coarse salt

Steps:

  • Combine raisins and whiskey in a small bowl. Let sit until raisins are plump, about 30 minutes and up to overnight.
  • Preheat oven to 350°F. Grease 10-inch cast iron skillet with nonstick cooking spray.
  • Combine milk, 1 cup granulated sugar, vanilla extract, evaporated milk, eggs, and salt in a large bowl. Whisk to combine. Add raisin-whiskey mixture and stir.
  • Add bread cubes, pressing down gently to moisten; let stand about 30 minutes, stirring occasionally.
  • Divide mixture among prepared cast iron skillet. Combine remaining 2 tablespoons granulated sugar and cinnamon; sprinkle over pudding. Transfer to oven and bake until custard is set and pudding is golden brown, about 35 minutes.
  • Meanwhile, make caramel sauce: Combine granulated sugar and ⅔ cup water in a small saucepan over medium-high heat.
  • Stir continuously until sugar dissolves.
  • Simmer, not stirring, until sugar mixture is golden, about 18 minutes.
  • Remove from heat and carefully add butter and cream cheese, stirring constantly with a whisk until all clumps are dissolved. Mixture will bubble vigorously. Stir in whiskey, milk, and salt to taste.
  • Serve bread pudding warm with caramel-whiskey sauce.

1/4 cup butter, melted
16 ounces French bread, cut into 1-inch thick slices
1/2 cup raisins
3/4 cup Jack Daniels Whiskey
3/4 cup milk
1 cup sugar
1 tablespoon vanilla extract
1 (12 ounce) can evaporated milk
2 eggs, lightly beaten
cooking spray
3 tablespoons sugar
4 teaspoons cinnamon
1 1/2 cups sugar
2/3 cup water
1/4 cup butter, cut into small pieces
2 ounces cream cheese, cut into small pieces
1/4 cup Jack Daniels Whiskey
1/4 cup milk

Steps:

  • BEFORE YOU BEGIN (OPTIONAL): Lay out bread slices and allow to get a crusty as possible (I will usually set out at least 24 hours in advance.) This allows the bread to become very dry and crusty so it can absorb as much pudding as possible. ALSO combine the raisins and whiskey in a small bowl, cover, and place in the refrigerator overnight to allow the raisins to soak up as much whiskey as possible. If you forget, the raisins only need to sit for about 30 minutes to soak up quite a bit of whiskey.
  • JACK DANIEL'S CARAMEL-WHISKEY SAUCE: Combine sugar and water in a small saucepan over medium-high heat. Stir continuously until sugar dissolves.
  • Simmer until sugar mixture is golden (about 17 minutes). DO NOT STIR!
  • Remove from heat.
  • Carefully add butter and cream cheese, stirring constantly with a whisk until all clumps are dissolved. CAUTION! Mixture will bubble vigorously and release a lot of hot steam.
  • Cool slightly. Stir in whiskey and milk. Mixture will bubble a bit at this step as well.
  • PUDDING: Preheat oven to 350°F.
  • Brush melted butter on one side of French bread slices.
  • Bake buttered side up until lightly toasted, about 10 minutes.
  • Cut bread into 1/2 inch cubes and set aside.
  • Combine milk, sugar, vanilla extract, evaporated milk, eggs, and UNDRAINED whiskey mixture in a large bowl. Stir well with a whisk.
  • Add bread cubes, pressing down gently to moisten; let stand about 20 minutes. If your bowl is a little small, gently fold the cubes into the mixture with a spatula.
  • Pour bread mixture into a 13 x 9-inch baking dish coated well with cooking spray.
  • Combine sugar and cinnamon; sprinkle over pudding.
  • Bake at 350F for 35 minutes or until set.
  • Serve warm with Jack Daniel's caramel-whiskey sauce.
  • TO MAKE THIS KID FRIENDLY: Substitute apple juice for Jack Daniel's in pudding and 1 tablespoon imitation rum extract and 3 tablespoons water in Caramel-Whiskey sauce.

200g butter
140g soft brown sugar
397g can condensed milk
397g can caramel (we used Carnation)
1 tsp ground ginger
150ml whisky

Steps:

  • Put the butter, sugar, condensed milk, caramel and ginger in a pan. Heat gently until the butter melts - make sure you don't boil the sauce. Remove from the heat, then stir in the whisky until smooth. Pour into sterilised jars and allow to cool before sealing.

1 cup sugar
1/2 cup heavy cream
4 tablespoons (1/2 stick) unsalted butter, cut into small pieces
Kosher salt
1 tablespoon whiskey
2 pints coffee ice cream
Fudgy Double-Chocolate Brownies
Whipped cream for serving

Steps:

  • Combine sugar with ¼ cup water in a medium saucepan. Bring to a boil over medium-high, cook until amber and just beginning to smoke, about 4 minutes. Remove from heat, carefully whisk in heavy cream, butter, and 1 teaspoon kosher salt. Stir in whiskey. Use immediately for sundaes. (Sauce can also be cooled and stored in an airtight container in the refrigerator for up to 1 month. Gently reheat before serving.)
  • Layer scoops of ice cream and crumbled brownies in each sundae glass. Top with Whiskey Caramel Sauce and softly whipped cream. Serve immediately.

1/2 cup heavy cream
3 tablespoons Irish whisky (see note)

Steps:

  • Swirl sugar and water together in a heavy saucepan until the sugar dissolves. Place over medium-high heat and cook, stirring occasionally, until the mixture turns a uniform honey-brown color. Remove from heat.
  • Pour a tablespoon or two of the cream into the caramel, standing back from the pan, because the mixture may spatter. Stir to blend in the cream, then add the remaining cream, stirring until completely mixed.
  • Stir in the whisky, transfer the mixture to a jar or other container and refrigerate until ready to use. The sauce may be warmed before using but it will not be as thick as if it is chilled. Serve over ice cream, crepes, cake or puddings.
