2 tablespoons light brown sugar
1 teaspoon kosher salt
1 teaspoon hot smoked paprika
1 teaspoon dried oregano
1/2 teaspoon freshly ground fennel seed
1/4 teaspoon freshly ground black pepper
1 pound large shrimp (peeled and deveined)
1 tablespoon olive oil

Steps:

  • In a medium bowl stir together the brown sugar, salt, paprika, oregano, fennel seed, and black pepper. Add the shrimp and toss to coat well. Cover with plastic wrap and refrigerate for about an hour.
  • Preheat a grill pan over medium heat. Toss the marinated shrimp with the olive oil and place on the heated grill pan. Grill for about 3 minutes on each side or until browned and opaque all the way through. Serve warm or at room temperature.

1 tablespoon extra-virgin olive oil
1 large shallot, minced
3 cloves garlic, peeled and chopped
1/2 large lemon, sliced crosswise into five 1/4-inch-thick rounds
1 pound shell-on, deveined large shrimp
1 teaspoon sweet paprika
1/4 teaspoon ground dried thyme (see Cook's Note)
1/2 teaspoon coarsely ground black pepper
1/2 teaspoon kosher salt
3 tablespoons Worcestershire sauce
4 tablespoons unsalted butter, at room temperature and cut into small cubes
Crusty bread, for dipping

Steps:

  • Heat a large skillet over medium-high heat. Add the olive oil, shallot and garlic. Cook, stirring often with a wooden spoon, until the shallots are soft and fragrant, about 2 minutes. Add the lemon slices and cook until they begin to brown, about 1 minute longer, then stir in the shrimp, paprika, thyme, black pepper and salt. Add the Worcestershire sauce and 3 tablespoons water and bring the liquid to a simmer.
  • Cook, stirring often, until the shrimp are beginning to turn pink, about 2 minutes. Add the butter cubes and swirl the pan to combine. Allow the sauce to simmer until the shrimp are pink and just opaque all the way through, another 3 to 4 minutes. Serve with lots of napkins and some crusty bread for sopping up the sauce.

New Orleans Barbecue Shrimp image

Barbecue shrimp is an old New Orleans recipe that has nothing to do with barbecue or with grilling. Its name comes from the spicy, smoky flavor the shrimp derive from being cooked with Worcestershire sauce and lots of black pepper. It is a fine and almost absurdly fast dish - once the shrimp are peeled, you can have it on the table in 10 minutes - with a rich, savory sauce that completely belies the little effort it takes. But as I discovered once I started playing around with it, the key ingredient is neither Worcestershire sauce nor pepper, but rather butter. If you start with about a tablespoon for each serving of shrimp, you can add almost any flavor you like and create a sauce with the same creaminess and rich flavor. But start with Worcestershire sauce and pepper!

1 teaspoon minced garlic
1 1/2 to 2 pounds peeled shrimp

My neighbors made this for a summer picnic and it was delicious. They used an Italian dressing made at a local restaurant. Experiment a little or try Newman's Own Balsamic Vinaigrette.

2 lbs frozen raw shrimp (thawed and drained)
3/4 cup Italian dressing (a sweet or spicy brand that you like, but NOT fat-free)
3 small zucchini (sliced)
3 small summer squash (sliced)
1 red bell pepper (cubed)
cherry tomatoes (etc.) or mushroom (etc.)
1 tablespoon cajun seasoning

Steps:

  • Place all ingredients in a large zip-lock bag.
  • Seal and refrigerate for 4 to 6 hours.
  • Thread shrimp and veggies onto metal skewers, alternating as desired.
  • Grill over medium heat about 4 minutes, turn once and grill 4 minutes more.
  • Remove from skewers and serve hot.
  • This also works as a stir-fry: Marinate as above and then saute all ingredients over medium-high heat in a large skillet until shrimp are pink.

½ cup butter
½ cup zesty Italian dressing
1 tablespoon lemon juice
2 teaspoons ground black pepper
⅛ teaspoon garlic powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Wash shrimp and drain well.
  • Melt margarine/butter in a one quart casserole dish. Add salad dressing, lemon juice, black pepper and garlic powder.
  • Add shrimp to the casserole dish. Stir gently to cover the shrimp with the mixture. Cover and bake, stirring occasionally for 25 to 30 minutes or until shrimp are pink.
  • Serve the shrimp hot on a large platter and place the sauce in individual bowls so that you can easily 'dunk' bread in the sauce!

1/2 cup fat-free Italian salad dressing
6 garlic cloves, minced
1 teaspoon hot pepper sauce
1/4 cup Worcestershire sauce
8 bay leaves
2 teaspoons paprika
1 teaspoon dried oregano
1 teaspoon dried rosemary, crushed
1 teaspoon dried thyme leaves
1 teaspoon pepper
1 teaspoon salt (optional)
2 lbs large shrimp, headless and unpeeled
2 ounces dry white wine

Steps:

  • In a large, heavy non-stick skillet, combine the oil, Italian dressing, garlic, hot pepper sauce, worcestershire sauce, bay leaves, paprika, oregano, rosemary, thyme, pepper and salt. Cook over medium heat until the sauce begins to boil. Add the shrimp. Cook approximately 10 minutes. Add the wine, and cook another 5-7 minutes, or until the shrimp are done.
