- In a medium bowl, stir together the ground nuts, flour, cocoa and baking powder; set aside. In a separate bowl, beat eggs on the high speed of an electric mixer, gradually add the sugar and mix until thick and yellow. Stir in the melted butter and vanilla. Gradually stir in the flour mixture, just mixing enough to combine.
- Heat up the pizzelle iron until a drop of water dances on the surface, then slightly reduce heat. Drop 1 rounded tablespoon of batter for each cookie. Close the lid and bake for about 2 minutes, depending on your iron. Turn cookie out and trim before cooling on racks.

- In a bowl, add the eggs, the sifted flour with a pinch of salt, the sugar and the aromas.
- By hand with a whisk or an electric mixer, mix the ingredients and add the oil a little at a time. The mixture must appear thick and homogeneous, not too liquid.
- Let the batter rest for half an hour and then proceed to cooking.

- Heat the iron on the stove and when it is hot, fill it in the center with a spoonful of the dough.
- Close the dish well and cook the pizzelle for a few minutes in the pizzelle maker, until each side is golden and crisp.

THE VERY BEST PIZZELLE RECIPE

- Preheat the pizzelle iron.
- With a hand mixer, beat the eggs and sugar in a large bowl until light in color and fluffy, approximately 2-3 minutes.
- Add the vanilla, lemon zest and butter. Beat until well blended.

- Warm up a pizzelle iron.
- In a medium bowl, whisk together flour and baking powder; set aside.
- In a large mixing bowl or the bowl of an electric mixer fitted with the paddle attachment, beat the eggs and sugar until frothy and beginning to thicken (about 2-3 minutes).
- On low speed, add the extracts and melted butter to egg mixture in a steady stream and mix for 30 seconds.
- Slowly add the dry mixture to wet and blend just until combined. Your batter will resemble a soft and sticky dough.
- Spray pizzelle iron lightly with baking spray.
- Drop 1 tablespoon of batter on hot pizzelle press.
- Close press and cook for about 1 minute or until light indicated cookies are done (cookies should be slightly golden).
- Use a fork to lift pizzelle off the press and transfer to a cookie rack or plate to cool down (keep in mind that they should lay flat. While they are hot, they will mold into another shape if they're not completely flat).
- Spray iron again and repeat process until you finish all the batter.

- In a bowl, sift together the flour and baking powder.
- In the bowl of your electric mixer, beat together the eggs and sugar, Add the melted butter, vanilla extract, and anise seeds. Add the flour mixture and beat until smooth.
- Preheat your pizzelle baker according to the manufacturer's directions. The red indicator light will begin to glow, indicating that the baker has begun preheating. It will take approximately 5 to 8 minutes to reach baking temperature. At this point, you will see the red light going on and off. This only means that the baker is maintaining the proper baking temperature, it does not tell you when to start or stop baking.
- Lightly spray the pizzelle grids with non-stick spray or lightly brush with vegetable oil.
- Drop batter by rounded tablespoonful onto center or each preheated grid pattern. You will find that by placing the batter slightly behind the center of the pattern, your pizzelles will come out closer to a round shape (this is because, as you close the baker, the batter squeezes forward slightly).
- The amount of batter used can vary according to the size of your Pizzelle Maker. Usually my first batch of pizzelles are my test batch to determine the amount of dough to be used and also the baking time.
- Close lid and bake approximately 40 to 50 second depending on your preference for browning and/or the consistency of your batter. You may open the lid briefly to examine the color and bake longer as desired to create the darkness you want.
- Lift the lid and remove the cooked pizzelles with the edge of a fork or a thin spatula. Place them on paper towel lined cooling racks in single layers. Be sure to lay the hot pizzelles in a single layer on the cookie sheet. When they are completely cool, you can stack them.
CLASSIC ITALIAN PIZZELLE: MY FAMILY RECIPE
Pizzelles are classic Italian cookies flavored with anise and made in a pizzelle maker.

- Whisk together your eggs, sugar, vanilla and anise (see how to anise above) in a medium bowl.
- Now add your flour, salt and baking powder and mix it well until there are no lumps and it looks smooth.
- Now add your melted butter and mix that in to your mixture.
- Pre-heat your pizzelle maker. They are all a little different so follow the manufacturers instructions for this.
- Once it is heated, add a heaping tablespoon of your thick dough to the middle of each of your pizzelle areas on the iron. Close and cook for about 30-45 seconds until it is a light golden color. If the pizzelle is too light in color you can just close the pizzelle maker and cook the pizzelle for a few more seconds.
- Once they are cooked, remove the pizzelles from the iron (they will still be soft and pliable at this point) and place on a cooling rack where they will cool and get nice and crispy. Keep doing this until all the dough is used up!
- Once all of your pizzelles are fully cooked and cooled, you can go ahead and clean them up if you would like by lightly breaking off any parts of the pizzelle that went beyond the design edge. I find this to be relaxing but it is not necessary :)

- Melt butter in microwave (about 30 seconds)
- Mix flour, sugar, baking powder, and salt in medium bowl
- Add in eggs, melted butter and extract to the dry ingredients
- Mix together well
- Lightly grease griddle with pastry brush
- Ladle heaping tablespoon of batter in center of the pizzelle iron. Close maker.
- Bake 60 - 120 seconds depending on the pizzelle maker. Pizzelles should be light brown and fully baked.
- Be careful opening the pizzelle maker as it will be hot. Only touch the cover handle.
- Remove with tongs when golden brown
- Set pizzelle cookies on cooling rack; do not stack when warm
- Sprinkle with powdered sugar when cooled if desired
