ITALIAN WINE BISCUITS DI ALTOMARE
An authentic recipe for Italian Wine Biscuits originating from the region of Naples. This popular finger food is easy to make and so addictive.

Steps:
- Preheat the oven to 350℉ (175°C). Position rack to middle.
- Line 2 baking sheets with parchment paper.
- In a medium mixing bowl, sift together flour, baking powder and salt. Set aside.
- In a large mixing bowl or the bowl of an electric mixer fitted with the whisk attachment, whisk the eggs until nice and frothy (about 3-4 minutes).
- Slowly add sugar. Whisk for approximately 2 minutes.
- Add the oil and wine and whisk for 30 seconds.
- Switch to the paddle attachment of mixer.
- Slowly add the flour mixture until well combined, dough will be soft.
- Scoop dough with medium sized cookie scoop and drop on a lightly floured surface.
- Roll into a 5-6 inch strand about 1/2 inch in diameter.
- Shape into a ring and press lightly to combine both ends.
- Place on parchment-lined baking sheets.
- Brush with egg wash glaze. Sprinkle tops with raw sugar.
- Bake for 30 minutes or until bottoms are lightly browned and tops are golden brown.
- Allow to cool for a few minutes on the baking sheet then transfer to a wire rack to cool completely.

ITALIAN WINE BISCUITS
Simple, biscotti-like cookies flavored with red wine, these biscuits are perfect for dunking.

- Pre-heat the oven to 350 degrees F.
- Mix the wine and oil together and set aside.
- Whisk together the flour, salt, baking powder and the cup of sugar.
- Add the wine and oil mixture to the dry ingredients and mix them together with a fork until they are well combined into a stiff dough. It is a light red, rather odd color.
- Pinch off about 2 tablespoons of the dough and roll/pull it into a 7-9 inch cigar or pencil shape.
- Form the cookie into a circle, bowtie, figure eight, or spiral. Brush the top with the beaten egg and sprinkle a bit of sugar on part or all of the top. alternatively, roll part of the cookie in sguar, just enough to lightly coat it. Place the cookie on a parchment or silicone mat-lined cookie sheet and repeat with the rest of the dough.
- Bake the cookies for 25-30 minutes, until lightly browned on the bottom and slightly hard to the touch.
- Let them cool for a few minutes on the cookie sheet, then remove them to a wire rack to finish cooling.

- In a large mixing bowl, combine the flour, sugar, baking powder, salt, and pepper. Make a well in the center and add the vegetable oil and wine.
- Mix thoroughly and refrigerate for about 1 hour.
- Preheat the oven to 350°F.
- To form the biscuits, pinch off 1-inch balls of dough and gently roll into a small log about 1/2-inch in diameter.
- Bring the ends together to form a circle and pinch to close.
- Place the formed biscuits on a parchment-lined baking sheet. Brush with the egg-water mixture.
- Bake for 12 to 18 minutes until solid and slightly crisp on the outside.
- These cookies do not really brown, so test them after 12 minutes and time them according to your personal taste.
- Cool on wire racks and store in an airtight container.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl combine the flour, baking powder and sugar. Add the wine and oil. Mix with a large fork and then with your hands.
- Roll small pieces of dough between hands to make "logs" then shape into circles. The circles should be no bigger than the 2 inches in diameter. Roll cookies in extra sugar and place on cookie sheet.

- Preheat oven to 375 degrees F. Position racks in the upper and lower thirds of the oven. Line two large baking sheets with parchment paper. In a medium bowl, stir wine and olive oil. In a large bowl, stir sugar, flour, baking powder, and fennel seed. Stir in liquids. Stir until well blended and a dough begins to forms. Lightly work the dough with your hands until the texture is oily, smooth, and springy. If the dough is too sticky, then mix in 1 tablespoon of all-purpose flour at a time, until smooth. Using your hands, pinch off a 2-tablespoon size piece of dough. Roll the dough between lightly floured hands. Roll into a thin cigar shape that is approximately 8 inches long. Form a U shape, then criss-cross the pieces until a braid forms. Place 15 biscuits per baking sheet. Brush tops of biscuits with egg wash. Bake for 40 minutes, rotating pans mid-way through. Biscuits should have a golden color and be crisp on the bottom. Remove from oven and place on a cookie rack to cool completely. Biscuits should be stored in an air-tight tin container (preferably tin to maintain their crispness) and kept in a cool area, such as a cupboard. Properly stored, they should last up to one month.
