Given to me by a friend who loves to experiment with recipes. A little kick of Southwestern cooking. Not too spicy, but can be made so with a little bit more jalapeno or other spices for an extra bit of 'kick.'

2 teaspoons ground cinnamon
2 teaspoons chili powder
1 teaspoon ground cumin
2 teaspoons salt
1 teaspoon black pepper
1 whole chicken, cut into pieces
1 cup chicken broth
2 tablespoons honey
2 limes, juiced
½ jalapeno pepper, minced

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Lightly grease a medium baking sheet.
  • In a small bowl, mix cinnamon, chili powder, cumin, salt, and pepper. Rub chicken pieces with the mixture, and arrange on the prepared baking sheet.
  • In a medium saucepan over medium-high heat, blend chicken broth, honey, lime juice, and jalapeno. Cook and stir until thickened.
  • Place chicken in the preheated oven and cook about 15 minutes. Begin basting periodically with the chicken broth mixture. Continue cooking 30 minutes, or until the chicken is no longer pink and juices run clear.

This quick and easy jalapeno chicken recipe requires simple ingredients and is ready in 30 minutes. It's rich and creamy and inspired by Asian flavors.

2 tbsp Sesame oil (Or 1 tbsp sesame oil + 1 tbsp olive oil )
1 pound Boneless chicken ((cut into 2 inch cubes))
1 tsp Garlic paste
1 tsp Ginger paste
1 tsp Soy sauce
1 tbsp Sriracha sauce
1 tsp Lemon juice or vinegar
1 Small jalapeno ((finely chopped))
Salt and pepper to taste
1 tbsp Cream cheese
1 tbsp Heavy cream or milk
1 Jalapeno ((thinly sliced))
Green onions ((thinly sliced))

Steps:

  • Heat oil in a wide non-stick pan over medium heat.
  • Add the chicken, garlic paste, ginger paste, soy sauce, Sriracha sauce, lemon juice, finely chopped jalapenos, salt, pepper and mix everything together.
  • Cover the pan and cook for about 8 minutes on medium high heat until chicken is fully cooked.
  • Remove the lid and let it cook for a few more minutes When the water has almost evaporated, lower the the heat and add cream cheese and heavy cream. Mix thoroughly and cook for about 1 minute.
  • Garnish with jalapenos and green onions.
  • Serve immediately with rice. Enjoy!

2 boneless skinless chicken breast halves
1 tablespoon olive oil
8 ounces package cream cheese, softened
1/4 cup mayonnaise
1/4 cup milk
1/4 cup minced red bell pepper
2 tablespoons minced jalapeno peppers
1 tablespoon lemon juice
3/4 teaspoon salt
3/4 teaspoon Tabasco sauce

Steps:

  • Finely chop chicken with a knife or in a food processor.
  • Heat oil in a 12-inch skillet over medium-high heat. Add chicken and cook until tender and golden on all sides, stirring frequently.
  • Combine cream cheese, mayonnaise, milk, red pepper, jalapeño, lemon juice, salt, Tabasco sauce and cooked chicken in a bowl and mix until well blended.
  • Preheat oven to 375°F.
  • Spoon chicken mixture into an oven-safe crock or small casserole.
  • Bake 20 minutes or until mixture is hot and bubbly.

8 jalapeños, halved, seeded and ribs removed
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
8 thick slices country white bread
1 cup shredded Oaxaca cheese
1 cup tortilla chips
2 cups shredded rotisserie chicken (white and dark meat)
1 stick (8 tablespoons) unsalted butter, at room temperature

Steps:

  • Preheat the oven to 425 degrees F.
  • Toss the jalapeño halves on a baking sheet with the olive oil and season with salt and pepper. Roast until charred and softened, about 15 minutes. Set aside.
  • Heat a griddle or nonstick skillet over medium heat.
  • On each of 4 bottom slices of bread, layer about 2 tablespoons shredded cheese, then 4 jalapeño halves, then about 4 chips, then 1/2 cup of the chicken and then the remaining cheese. Top each with another slice of bread.
  • Spread both sides of the sandwiches with the butter. Cook the sandwiches, doming them with a metal bowl to help melt the middles, until the first side is golden brown, 2 to 3 minutes. Flip and repeat with the second side, until the bottoms are golden brown and the sandwiches are gooey in the middle, another 2 to 3 minutes. Cut in half and serve.

  • Season with salt and pepper the chicken pieces.
  • Dab 1/2 teaspoon (more or less) of cream cheese on top of each chicken tender. Sprinkle a scant 1/4 teaspoon of peppers over cream cheese. Fold or roll chicken to enclose cream cheese mixture. Wrap each roll with one piece of bacon and secure with a toothpick.

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 pkg. (8 oz.) KRAFT Mexican Style Finely Shredded Four Cheese, divided
2 fresh jalapeño peppers, seeded, finely chopped
1 egg
3 cups tortilla chips, finely crushed (about 1 cup)
1 cup green salsa

Steps:

  • Place chicken on work surface. Mix cream cheese, 1-1/2 cups shredded cheese and peppers until blended; spread onto chicken. Roll up tightly, starting at one short end of each breast. Refrigerate up to 8 hours.
  • Heat oven to 375ºF. Beat egg in shallow dish. Place crushed chips in separate shallow dish. Dip chicken in egg, then roll in crushed chips. Place, seam sides down, in single layer in shallow pan sprayed with cooking spray.
  • Bake 35 min. or until chicken is done (165ºF). Meanwhile, warm salsa.
