JAPANESE MASHED POTATOES

Yield 8 Servings (Side Dish)

Number Of Ingredients 6

8 medium sized potatos
1 carrot
4 eggs
2 slices of ham
Approx 200g Japanese Mayonaise
A pinch of salt

Steps:

  • Boil potatoes, carrot and eggs in a big pot. When cooked, approx 20-30mins (test potatoes with a fork, the fork should slide in easily), skin potaotes and carrots. Remove egg shell. In a big pot, mash the potatoes with a fork. Dice carrot and eggs into small cubes. Cut ham into small square slices. Add mayo and salt to the mashed potato and mix well. Mix in carrot, eggs, and ham. Refrigerate and serve cold.

2 pounds baking potatoes, peeled and quartered
2 tablespoons butter
1 cup milk
salt and pepper to taste

Steps:

  • Bring a pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain.
  • In a small saucepan heat butter and milk over low heat until butter is melted. Using a potato masher or electric beater, slowly blend milk mixture into potatoes until smooth and creamy. Season with salt and pepper to taste.

  • You can store the leftover in an airtight container and freeze up to a month. To reheat, put the defrosted or frozen croquettes on a baking sheet lined with aluminum foil or parchment paper. Bake at 350ºF (180ºC) for 15-20 minutes for defrosted ones or 45 minutes for frozen ones. Check if the inside is warm before serving.
