1 pound ground round
¼ cup Italian seasoned bread crumbs
1 egg
¼ cup steak sauce (e.g. A-1)
¼ cup shredded mozzarella cheese
1 tablespoon steak sauce

Steps:

  • Preheat grill for high heat.
  • In a large bowl, mix together the ground beef, seasoned bread crumbs, egg, 1/4 cup of steak sauce, and mozzarella cheese using your hands. Shape into 4 patties.
  • Lightly oil the grill grate. Cook patties for 5 minutes per side, or until well done. Baste with additional steak sauce while cooking if desired.

5 pounds blue cheese crumbles
3 1/2 cups real mayo
2 1/2 cups buttermilk
One 1/2-inch-thick slice super colossal yellow onion, separated into rings
One 1/3-pound 80/20 ground chuck beef patty
1 teaspoon seasoned salt
2 slices American cheese
One 4-inch sesame seed sourdough bun
1 tablespoon real mayo
1 teaspoon yellow mustard
1 tablespoon ketchup, preferably Heinz
Eight to ten 1/4-inch crinkle-cut dill pickle chips
One 1/2-inch-thick slice tomato
1/2 cup shredded lettuce
Hodad's Signature Bacon Patty, recipe follows
4 pounds sliced bacon

Steps:

  • For the Hodad's blue cheese sauce: Combine blue cheese, mayo and buttermilk in a bowl until well mixed.
  • For the Hodad's blue jay burger: Cook the onion rings on a griddle until caramelized. Set aside.
  • Sprinkle both sides of the beef patty with the seasoned salt. Sear on hot griddle until browned and cooked through, 3 to 4 minutes on each side. Add the cheese and let melt.
  • Toast top and bottom of bun on the griddle until golden brown.
  • Add mayo, mustard and ketchup to bun bottom, then add pickle chips, tomato and lettuce.
  • Top with beef patty, then with Bacon Patty and 1/3 cup Hodad's blue cheese sauce, grilled onions and toasted bun top.
  • Place bacon in a large pot and cover with 2 quarts water. Bring to a boil and cook until the bacon fat renders, about 45 minutes.
  • Place a 4-ounce serving of bacon on a hot flat-top grill or griddle and weigh down. Cook, flipping occasionally, until both sides are crispy. Repeat with remaining bacon.

2 pounds chopped beef chuck or round
1 onion
1 tablespoon heavy cream
Freshly ground black pepper
Unsalted butter
Vegetable oil, as needed
Kosher salt, to taste

Steps:

  • Spread the meat out on a board and grate 2 to 3 tablespoons of onion into it¿use a fairly fine grater so you get just the juice and very finely grated raw onion. Now mix in about a tablespoon of heavy cream and some freshly ground black pepper, to taste. Form into patties¿a 6- to 8-ounce patty for an average serving.
  • Using a black iron skillet or your best copper one or your pet aluminum frying pan, Teflon-coated or not (with a Teflon coating you won't need much fat, just a little bit for flavor), and cook the hamburgers in the butter and oil over fairly high heat, giving it 4 to 5 minutes a side, depending on how well done you like it. Salt this creamy, oniony, peppery hamburger before serving it on a buttered bun or English muffin, or as a main course with sliced tomatoes and onions or some home-fried potatoes.

1 lb ground chuck or 1 lb ground sirloin
2 teaspoons paula deen house seasoning (see Paula Deen's House Seasoning Mix by Mamie37)
2 dashes McCormick's Montreal Brand steak seasoning (or to taste)
2 dashes red pepper flakes (or to taste)
2 dashes Hungarian paprika (or to taste)
1/2-1 tablespoon A.1. Original Sauce (or steak sauce of choice)
2 tablespoons Worcestershire sauce
1/4 cup catsup
1 tablespoon flour
6 slices cooked bacon, Halved

Steps:

  • Mix all ingredients, except for the bacon. Spoon out for patties (making them as flat as possible) into a heated pan coated with olive oil.
  • Pan fry burgers to desired internal temperature (rare to well-done).
  • Layer burgers with crisp halves of bacon between.
  • Top with cheese of choice, if you like. We tried Monterey Jack, but any kind will do.
  • Serve on Toast or Buns. Enjoy!

1 pound ground beef (I used 80/20 - fattier meat means a juicier burger!)
1/2 cup shredded Monterey jack cheese
1/4 cup BBQ sauce
1/4 teaspoon seasoned salt
pepper, to taste
1/4 teaspoon onion powder
3/4 cup mayonnaise
1/4 cup ketchup
1/4 cup pickle relish
2 Tablespoons Worcestershire sauce
5 hamburger buns (we like sesame seed buns)

Steps:

  • In a large bowl, combine the ground beef, shredded cheese, bbq sauce, and seasonings. Don't add too much bbq sauce or the patties will have a hard time taking shape. Shape patties that are about 1 inch thick (about 5 patties). (You can also freeze the patties after shaping them for about 1 hour to help them hold their shape.)
  • Turn grill up to high and let it get hot.
  • Reduce heat to medium-high and place the burgers on the grill. Allow this side of the patty to cook for about 4-6 minutes, but make sure it does not burn. Then flip the burger over and cook until done.
  • For the sauce, combine all sauce ingredients and whisk until well mixed. Taste and adjust ingredients to your liking.
  • Assemble the burgers and serve with the special sauce and other hamburger toppings of choice.
