EASY RICE BAKE CASSEROLE

Steps:
- Preheat oven to 350 degrees F. Butter a large casserole dish.
- In a large pan over medium-high heat, saute onions with 2 tablespoons of butter and cayenne until translucent. Add the spinach and cook for 3 minutes. Set aside.
- In a large bowl, whisk together milk and eggs.
- Add the cheese, rice, parsley, thyme, basil and spinach mixture and combine well. Season with salt and pepper.
- Pour into prepared casserole dish and top with extra shredded cheese. Bake for 30 minutes and serve piping hot.
HARD-BOILED EGG CASSEROLE

- Heat oven to 325°F. Lightly grease quiche dish, 9x1 1/2 inches.
- Mix mushrooms, onion, rice and water in 3-quart saucepan. Heat to boiling; reduce heat. Cover and simmer about 20 minutes, stirring occasionally, until rice is tender. Stir in broccoli and cottage cheese. Stir in remaining ingredients except 1/4 cup Cheddar cheese. Spoon into quiche dish.
- Bake uncovered 40 minutes. Sprinkle with 1/4 cup Cheddar cheese. Bake 10 to 15 minutes or until center is hot. Let stand 5 minutes before cutting.

- Cook rice according to package instructions; cover, and set aside.
- While rice is cooking, heat oil in a large skillet over medium-high. Add onion, garlic, and ginger. Season with salt and pepper; cook, stirring occasionally, until onion begins to soften, 4 to 5 minutes.
- Add curry powder, and cook, stirring, until fragrant, about 30 seconds. Add marinara sauce and eggs; cook just to heat through, 2 to 3 minutes, stirring gently to avoid breaking up eggs. Season with salt and pepper.
- Fluff rice gently with a fork; serve with curried eggs, garnished with yogurt, scallions, and lime wedges.

- Heat the oven to 350 degrees and butter a 9-by-13-inch baking dish
- In a saucepan, melt the butter over medium heat until it foams. Whisk in the flour until smooth. Lower the heat and slowly pour in the cream and milk. Heat until steaming, whisking often. Add the cheese and whisk until melted. Add the parsley, marjoram, thyme, garlic powder and cayenne
- In the prepared dish, make layers of egg slices, bacon and sauce, ending with sauce. Cover and bake 40 minutes. (To make ahead, refrigerate covered casserole overnight. Remove from the refrigerator 1 hour before baking, and add 20 minutes to baking time.) Let rest 5 to 10 minutes before serving with hot toast.

My ultimate comfort food. Make sure to use a bowl that can be safely placed in a pot of boiling water. Serve with white rice (I like to mix my rice into the egg jjim).

Steps:
- Bring about 3 inches of water to boil in a medium-sized pot.
- Whisk together eggs and water in a small bowl that's about 6 inches tall (this bowl will go into the boiling water, so make it's not plastic or anything). Make sure eggs are well-beaten and frothy.
- Add salt and sesame oil to the eggs, and mix well again.
- Place the bowl carefully into the pot of boiling water. Reduce heat to medium-high. Water should be boiling gently. The height of the water should be about halfway up the bowl. Make sure the water does not boil into the bowl (if it does, remove some of the water).
- Cover and let steam for about 10 minutes, then add the sesame seeds and green onions to the eggs. Do not stir (they should just be resting on surface of egg).
- Cover again. Cook for about 15-20 minutes or until the eggs start to pull away from the side of the bowl and it has completely set.

- Place croutons on bottom of greased 9 by 13 pan.
- Top croutons with cheese and browned sausage.
- mix together dry mustard, 2 1/2 cups milk, and eggs.
- Refrigerate overnight.
- In the morning, mix together- cream of mushroom soup, 1/2 cup milk and 1/2 cup sour cream. Pour over egg mixture.
- Cover with Reynolds wrap and Bake at 350 degrees for 90 minutes.
