DAD'S CREAMY CUCUMBER SALAD



Dad's Creamy Cucumber Salad image

This was my Dad's recipe and one of our family's all-time summer favorites.

2 large cucumbers, peeled and thinly sliced
1 sweet onion, thinly sliced
1 tablespoon sea salt
1 ½ cups mayonnaise, or more to taste
2 tablespoons vinegar
1 tablespoon white sugar
1 teaspoon dried dill weed
1 teaspoon garlic powder
1 teaspoon ground black pepper

Steps:

  • Mix cucumbers, sweet onion, and sea salt together in a bowl. Cover bowl with plastic wrap and let sit for 30 minutes.
  • Turn cucumber mixture into a colander set over a bowl or in a sink; let drain, stirring occasionally, until most of the liquid has drained, about 30 minutes more. Transfer drained cucumber mixture to a large bowl.
  • Stir mayonnaise, vinegar, sugar, dill, garlic powder, and black pepper together in a bowl with a whisk until smooth; pour over the cucumber mixture and stir to coat vegetables with the dressing.
  • Cover bowl with plastic wrap and refrigerate at least 2 hours.

1 medium cucumber
1 package (3 ounces) lime gelatin
1 teaspoon salt
1/2 cup boiling water
1 cup mayonnaise
1 cup 4% cottage cheese
1 small onion, grated
Optional: Sliced cucumbers and fresh parsley

Steps:

  • Peel and halve cucumber; remove the seeds. Shred and pat dry; set aside. In a bowl, combine gelatin and salt with boiling water; stir until dissolved. Add mayonnaise and cottage cheese; mix well. Stir in the onion and shredded cucumber. Pour into an oiled 5-cup mold. Refrigerate until firm. Unmold onto a serving platter. Garnish with cucumbers and parsley if desired.

1 teaspoon salt
1 cup boiling water
2 tablespoons vinegar
1 -2 teaspoon grated onion
1 cup sour cream
1/2 cup mayonnaise (Hellman's is best for this)
2 cups diced cucumbers

Steps:

  • Dissolve jello and salt in boiling.
  • Add in vinegar and onion; chill until partially set.
  • Transfer mixture to a fancy glass serving bowl or dish.
  • In a small bowl whisk together sour cream and mayo; add to the partially chilled jello mixture; mix to combine.
  • Fold in chopped cucumbers.
  • Chill until firm (about 3-4 hours).

2 cups boiling water
1 3/4 cups cold water
3 cucumbers
2 (8 ounce) packages cream cheese

Steps:

  • Peel the cucumbers and cut into small cubes.
  • Cut the cream cheese into small cubes.
  • Put the cucmber and cream cheese cubes in a serving dish (I usually use a 9x13 glass baking dish).
  • Dissolve the Jello mix in the boiling water.
  • Stir in the cold water.
  • Pour the Jello over the cucumber and cream cheese.

1 pkg. (8-serving size) JELL-O Lime Flavor Gelatin
1/4 tsp. salt
1-1/2 cups cold water
1 Tbsp. lemon juice
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/2 cup MIRACLE WHIP Dressing
1 medium cucumber, peeled, seeded and chopped (about 1-1/2 cups)
2 Tbsp. finely chopped onion
1 tsp. dill weed

Steps:

  • Stir boiling water into dry gelatin and salt in large bowl at least 2 minutes until completely dissolved. Add cold water and lemon juice; stir. Refrigerate 1-1/4 hours or until slightly thickened (consistency of unbeaten egg whites).
  • Mix sour cream and dressing until well blended. Stir into thickened gelatin. Refrigerate about 15 minutes or until thickened (spoon drawn through leaves definite impression). Stir in cucumber, onion and dill weed. Pour into 5-cup mold sprayed with cooking spray.
  • Refrigerate 4 hours or until firm. Unmold. Garnish as desired. Store leftover gelatin mold in refrigerator.

2 ribs celery chopped
1 carrot large, chopped
1 onion chopped
2 sprigs parsley fresh
1/2 bay leaf
1/2 teaspoon thyme dried, crushed
1 teaspoon tarragon dried, crushed
1 teaspoon salt
1/2 teaspoon black pepper freshly ground
4 cups chicken broth
2 tablespoons lemon juice fresh
1 egg white
1 envelope unflavored jello
1/3 cup water cold
4 eggs hard-cooked, sliced
1/3 cup green olives stuffed, sliced
Salt to taste
1/3 cup green bell pepper, thinly sliced, blanched
Lettuce, washed and crisped
1/2 cup mayonnaise

Steps:

  • 1. Into large pot, place chicken with giblets, celery, carrot, onion, parsley, bay leaf, thyme, tarragon, salt, pepper, chicken stock, and lemon juice bring to boil. Reduce heat and simmer for 10 to 15 minutes skim residue that rises to top. Cover pot loosely and continue to simmer for 1 hour. Cool chicken in broth. 2.Remove chicken skin, bone, and cut meat into very small cubes. Set aside. 3. Strain broth, but do not mash vegetables. Broth should measure 3 cups. Correct seasoning. Heat broth in saucepan and beat in egg white. Whisk and simmer for 2 minutes. Remove from heat and cool without stirring so white forms a crust on surface. 4. Meanwhile, sprinkle gelatin over 1/3 cup water to soften. Line a sieve with 2 layers of cheesecloth or a clean linen dishcloth wrung out in cold water. Gently strain broth through sieve. Combine broth and gelatin in saucepan and bring to boil, stirring to dissolve gelatin. Remove from heat and cool.5. Grease an 8 1/2 x 4 1/2 x 2 1/2 -inch loaf pan and pour in 1 cup of chicken broth mixture. Let chill until syrupy. Arrange sliced eggs and green olives in bottom sprinkle lightly with salt. Place in refrigerator to set. When set, arrange chicken and green peppers in layers over eggs and gently pour in remainder of gelatin. 1 1/4-ounce envelope unflavored gelatin
1/4 cup cool water
2 cups chicken stock
1 large cucumber, peeled, seeded and coarsely chopped
3 scallions, green and white parts sliced thin
1/3 cup fresh lime juice, or to taste
3 tablespoons chopped fresh dill
2 tablespoons snipped fresh chives
Salt and freshly ground black pepper to taste
Lime slices for garnish

Steps:

  • In a cup, soften the gelatin in the water for five minutes. Pour it and the stock into a small saucepan, and stir over low heat until dissolved.
  • Put the mixture into a food processor, along with the cucumber, scallions and lime juice. Process until mixture is smooth, with a little texture (not a fine puree).
  • Season with dill, chives, salt and pepper. Add more lime juice if desired. Pour into a bowl, cover and refrigerate three hours or overnight.
  • When ready to serve, use a large spoon to stir the solids throughout the jellied soup. Scoop it into cups or stemmed glasses, and garnish each with a thin slice of lime.

1 (3 ounce) package lime flavored Jell-O® mix
1 ¼ cups boiling water
1 tablespoon white sugar
1 pinch salt

Steps:

  • Place the shredded cucumber in a colander to drain. In a medium bowl, whisk together the gelatin mix and hot water until gelatin has dissolved. Mix in the sugar, salt and vinegar. Set aside to cool until it starts to set, about 1 hour.
