  • Thinly slice 3 scallions. Heat 2 tablespoons butter in a large skillet; add the scallion whites, 2 ounces diced smoked ham, 1 diced celery stalk, 1/2 diced green bell pepper, and salt; cook, stirring, 6 minutes. Add 2 minced garlic cloves and a pinch of cayenne; cook 1 minute. Add 10 ounces thawed frozen black-eyed peas and 1 cup chicken broth; simmer 8 minutes. Stir in the scallion greens. Serve over rice if using.

Everybody says their brownies are the best, but these really are the best. They feature the "holy trinity" of brownie perfection-a crispy, flaky top, chewy edges, and a fudgy center. Serve with a glass of ice cold milk.

⅔ cup all-purpose flour
¾ teaspoon kosher salt
3 ounces unsweetened chocolate, chopped
½ cup unsalted butter
1 ¼ cups white sugar
2 large eggs
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter an 8-inch square baking dish or pan, then line with parchment paper if desired to make getting the brownies out easier.
  • Mix flour and salt together in a bowl; set aside.
  • Place chopped chocolate and butter into a heatproof bowl and set over a saucepan with 1 inch of very gently simmering water. When the butter and almost all of the chocolate is melted, stir until smooth. Turn off the heat and set aside.
  • Mix sugar and eggs in a mixing bowl with an electric hand mixer until very airy, thick, and creamy, about 5 minutes. Mix in vanilla extract, then slowly drizzle in the melted chocolate mixture, while mixing on high speed.
  • Dump in the flour mixture and mix on low speed just until the flour disappears. Use a spatula to transfer the batter into the prepared baking dish and spread as evenly as possible.
  • Bake in the center of the preheated oven until a toothpick inserted near the center comes out virtually clean, about 30 minutes. Let cool on a wire rack for 15 minutes. Use a spatula to lightly press down the higher parts of the brownie around the edge of the dish. Let cool to room temperature, 20 to 30 minutes, before removing and cutting into 9 pieces.

8 ounces blackeyed beans (peas)
8 ounces salt bacon, cut into lardons
1 medium onion, finely chopped
2 cloves of garlic, crushed
4 tomatoes, skinned, deseeded and coursely chopped
1 bay leaf
Pinch thyme
2 teaspoons cayenne pepper
Salt and freshly ground black pepper
6 ounces long grain rice

Steps:

  • Soak the blackeyed beans overnight in cold water.
  • Strain the beans, put in a saucepan and cover with cold water, add 1 teaspoon of salt, bring to the boil and boil rapidly for 10 minutes, then reduce the heat and simmer for about 1 hour.
  • Fry the bacon and set aside. Fry the onion and garlic until soft, not brown, in the residual bacon fat then add the tomatoes, fry lightly for 1 minute. Add the onion, garlic, tomatoes, bacon, bay leaf, thyme, cayenne and black pepper, to taste, to the cooked blackeyed beans and taste for salt.
  • Cook for a further 20 minutes, the water should have evaporated by this time. In the meantime, cook the rice and add to the blackeyed bean mixture.
  • Transfer to a serving dish.

  • Preheat oven to 325 degrees. Melt chocolate and butter together in microwave on high for 1 to 2 minutes, or on stove top in heavy saucepan on very low heat. Stir until chocolate is completely melted. Stir sugar into chocolate until well blended. Mix in eggs and vanilla. Stir in flour and nuts until well blended. Spread in greased 9x13-inch glass baking dish. Bake 30 minutes. Do not overbake. Cool in pan. Cut into squares.

1-1/2 cups sugar

1 teaspoon vanilla
1 cup flour

Steps:

  • Preparation Preheat the oven to 325 F with a rack in the lower third. Butter a 9" x 13" baking pan (or line it with parchment paper) Melt the chocolate and butter in the top of a double boiler over simmering water, stirring frequently until smooth. Remove the top of the double boiler and stir in the sugar. Add eggs one by one, stirring thoroughly after each on. Stir in the vanilla. Add the flour and stir until well blended. Stir in the nuts. Scrape the batter in the pan and spread it evenly. Bake 30-35 minutes or until toothpick inserted in center comes up with crumbs (not batter). Cool the brownies in the pan.

1¼ sticks unsalted butter, plus more for the pan
¼ cup Maker's Mark® Bourbon
¼ cup unsweetened cocoa powder
2 cups semi-sweet chocolate chips
4 large eggs
½ cup confectioners' sugar

Steps:

  • 1. Preheat the oven to 325°F. Butter an 8-inch square baking pan, line with parchment paper or foil, and butter the parchment. 2. In a large saucepan, heat the butter and bourbon over medium heat, stirring occasionally, until the butter melts. Stir in the cocoa powder until smooth. Remove from the heat and immediately add 1½ cups chocolate chips. Stir until smooth. Let cool slightly. 3. Add the eggs, one at a time, beating well after each addition. Stir in the confectioners' sugar until well-combined. Transfer to the prepared pan and spread in an even layer. Sprinkle the remaining ½ cup chocolate chips on top. 4. Bake until the top is glossy and a toothpick inserted 1 inch from the edge comes out clean, about 20 minutes. Cool completely in the pan on a wire rack. 5. Lift out of the pan using the parchment paper. Cut into 12 bars.

8 ounces semi-sweet chocolate, melted
4 ounces unsweetened chocolate melted
1 cup unsalted butter, melted
2 cups brown sugar, packed firm
3 eggs
1 teaspoon vanilla
1/4 teaspoon salt
1/2 teaspoon baking soda
1 ¾ cup all purpose flour
1 cup toasted pecans or walnuts, chopped (optional)

Steps:

  • Preheat oven to 350 Degrees F. Grease a 9 by 13 inch pan. Prepare chocolate by melting in a heavy bottom saucepan with the butter, or microwaver to melt. Allow to cool. Briskly blend or whisk eggs and brown sugar together and add cooled butter mixture. Stir in vanilla, then fold in flour, baking soda and salt. Fold in nuts. Blend by hand and turn into prepared pan. Bake 30-40 minutes. Do not overbake. When you delicately touch the middle, top should just be set, not liquidy or jiggly underneath your fingertip but not too firm either. About 18-24 brownies, depending on size.
