3 cups all-purpose flour
¾ teaspoon baking soda
¼ teaspoon salt
¾ teaspoon ground cinnamon
1 cup butter
1 ½ cups white sugar
3 large eggs
2 cups rolled oats
½ cup raisins

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Mix the flour, baking soda, salt, and cinnamon together in a large bowl.
  • Beat the butter and sugar with an electric mixer in a large bowl until smooth. Add the eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Mix in the flour mixture until just incorporated. Fold in the oats and raisins; mixing just enough to evenly combine. Drop spoonfuls of the dough 2 inches apart onto ungreased baking sheets.
  • Bake in the preheated oven until golden brown, 10 to 12 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

¾ cup packed light brown sugar
2 eggs
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
1 teaspoon baking soda

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).

Do you like chewy cookies? Or do you prefer cakey ones? Our oatmeal-raisin cookies can be both! For a chewy cookie, bake them right away. For a cakey cookie, let the dough rest in the refrigerator for at least 3 hours (or overnight works even better) to allow the oatmeal to hydrate. Then bake for a puffy cookie. We used dark brown sugar for added flavor and moisture but our secret ingredient is honey. When baked right away, the honey causes the cookie to spread, keeping it soft and moist. When you let the dough rest, the oatmeal and flour absorb the honey for that classic cakey texture.

1 1/4 teaspoons kosher salt
1 teaspoon baking soda

1 large egg, at room temperature

  • Arrange an oven rack in the center of the oven and preheat to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Whisk together the flour, salt, baking soda and cinnamon in a small bowl until combined. Beat the brown sugar and butter in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. 1/2 cup 2% milk
1 package spice cake mix (regular size)

Steps:

  • In a large bowl, beat oil and brown sugar until blended. Beat in eggs, then milk. Combine cake mix and oats; gradually add to brown sugar mixture and mix well. 1/2 cup loosely packed brown sugar
1/2 cup white sugar
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour

1/4 teaspoon salt, if butter is unsalted. Omit, otherwise
1 1/2 cups rolled oats (don't use instant! they make the cookies gummy)
1/2 cup raisins

Steps:

  • Preheat oven to 350°F and grease cookie sheets.
  • Cream butter and sugars til creamy and light, about 2 minutes.
  • Add egg and vanilla and mix into creamed butter and sugar.
  • Stir in flour, baking soda, salt, if using, and stir to combine, mixing well.
  • Stir in rolled oats til combined, then fold in raisins.
  • Drop on baking sheet by tablespoonfuls, and flatten just a smidge.
  • Bake for about 12 minutes, or til edges are very lightly browned and centers are still somewhat soft.
