KAKI MOCHI COOKIES

Kaki Mochi Cookies image

This recipe is from a friend of a friend. I used one of the Enjoy brand mini sized arare without seaweed so I wouldn't have to crush them but I think it would be fine with it. The ingredients might make you hesitate to try it but you must try this. I tried one of the cookies and I'm tempted to eat this batch and make another to give away : )

Provided by marisk

KAKIMOCHI IS HAWAII'S MOVIE TREAT - HAWAIIAN CULTURE STORIES
Kakimochi arare sometimes called "mochi crunch" was introduced by Japanese plantation workers in the 1900s and is one of Hawaii’s favorite snack foods. The bite-sized crackers are yummy sprinkled with a little bit of li hing mui (dried plum) powder or even baked into a chocolate chip cookie. For me, the best way to have kakimochi is with popcorn.

As for the difference, Kakimochi is thin in thickness compared to average Okaki crackers, and its uncooked rice dough is shaped like a sea cucumber.
