CHEESY HAM AND MUSHROOM STRATA
Make this ham-and-cremini strata even more flavorful with a little Parmesan and a lot of Swiss cheese.

- Butter a 9-by-13-inch baking dish.
- Heat the oil in a large nonstick skillet over medium-high heat until hot. Add the mushrooms and cook, stirring occasionally, until golden brown, 6 to 8 minutes. Season with salt and pepper. Set aside.
- Whisk the half-and-half, Parmesan and eggs, 1 1/2 teaspoons salt and a few grinds of pepper together in a large bowl.
- Layer half of the bread cubes in the prepared baking dish. Sprinkle with 1 1/2 cups of the Swiss cheese, followed by the cooked mushrooms and the ham. Cover with the remaining bread cubes and pour the half-and-half mixture evenly over top. Cover with plastic wrap and refrigerate overnight. (This can also be assembled the day of; just let soak at room temperature 30 minutes to 1 hour before baking.)
- On the day of baking, preheat the oven to 325 degrees F.
- Let the strata sit at room temperature while the oven preheats. Remove the plastic and sprinkle with the remaining 1/2 cup Swiss cheese. Bake until slightly puffed and just no longer jiggly in the center, 40 to 50 minutes. Let stand 5 minutes before serving.
HAM AND CHEESE STRATA

- Butter a 2 1/2- to 3-quart baking dish. In a large bowl, whisk together the eggs, milk, mustard, paprika, and salt.
- Place half of the bread in the bottom of a baking dish. Top with half each of the ham, scallions, and cheese. Repeat with a second layer of the remaining ham, scallions, and cheese, pressing down as necessary to fit in the baking pan.
- Carefully pour the egg mixture over into the bread. Cover and refrigerate overnight.
- Preheat the oven to 350 degrees Fahrenheit. Pull strata out of fridge and let come to room temperature for 15 minutes. Bake the strata, uncovered, until puffed and lightly golden brown, about 1 hour to 1 hour and 20 minutes. Let rest for 5 minutes before serving.

This is a quick and easy one-dish meal that comes from the recipe collection of Bird's sister Kathy. Stratta or strata is a brunch casserole dish, similar to a quiche, made from a mixture which mainly consists of bread or hash browns, eggs and cheese. It may also include meat or vegetables.

- Preheat oven to 350°F Lightly grease a 9x13 casserole dish and place half the bread into the dish, overlapping if necessary.
- Layer with ham, broccoli, then 1 cup of the cheddar cheese. Place remaining bread slices over top.

HAM STRATA
Saw this on Rachel Ray and had to try it. Great way to use up leftover ham. Broccoli can be swapped out for the asparagus, which is what I will use the next time I make it! Looks beautiful coming out of the oven too. Ingredient measurements are approximate as it depends on the size of your pan/tastes etc.

- Spray your pyrex roasting pan with cooking spray and preheat oven to 350*.
- Tear your leftover crusty bread into chunks and layer on bottom of your pan.
- Saute your thinly sliced onion in butter until translucent (we actually like it carmelized).
- trim the woody ends off the asparagus.
- Pour about a 1/2 inch of water into a large frying pan and bring to a simmer then toss your asparagus into the tub with some salt and simmer about 5 minutes or until tender but not falling apart mush.
- Crack eggs into a large bowl and add a splash of milk and wisk away.
- spread the onions, asparagus and ham over the bread chunks
- Pour egg mixture all over, mixing up more eggs if necessary
- Add a pinch of salt and pepper then stick your hands in it and toss everything around till soaked through in eggs.
- Top with shredded Gruyere (and be generous here).
- Pop in oven for approximately 30-45 minutes, or until a knife inserted in the middle comes out clean.

KATHY'S SCALLOPED POTATOES WITH HAM
Here is another use for leftover ham and the other ingredients I always have on hand. I like this recipe because it has a hint of thyme in it. There are also directions here in the description if you wish to freeze it. If you want to bake it at 325 degrees instead of at 375 degrees notice my directions (you know how sometimes you want a certain oven temperature to orchestrate your menu-lol). If you want to freeze this start the recipe differently by cutting the potatoes in half and then parboiling them for 10 minutes. Drain, cover with cold water and allow potatoes to cool. Slice potatoes and assemble recipe as directed. Don't bake yet if freezing. Cover well with plastic wrap and foil. Label and freeze. Defrost in refrigerate, remove foil and plastic wrap, recover with the foil and then bake. Thank you Chef #128693 for helping me:)

- Preheat oven to 375 degrees.
- In a saucepan, melt butter.
- Stir in flour, parsley, salt, thyme, and pepper.
- Gradually add all of the milk (3C+2T); bring to a boil.
- Cook and stir for 2 minutes; set pan aside.
- Combine in a large bowl the potatoes, ham, and onion; place half in a greased 2 1/2 quart baking dish.
- Top with half of the sauce; put in rest of potato mixture; and then put in last half of the sauce.
- Cover and bake at 375 degrees for 65 to 75 minutes or until potatoes are almost tender.
- Bake uncovered, 15-20 minutes longer, or until potatoes are fully cooked.
- If you need to have an oven at 325 degrees b/c of the rest of the meal, cook 2 hours covered and then 15 minutes uncovered.
